came up with this a coupla years ago. it was a few days before payday, and i had to get creative with what i had on hand lol. ended up a favorite meal. amounts are an estimate, because i've always just thrown in whatever looks right.

1 lb chicken, cut into bite size chunks
2 tablespoons minced garlic
olive oil, to coat bottom of skillet
1 tablespoon italian seasoning
1 teaspoon poultry seasoning
1 teaspoon salt
8 ounces thin spaghetti
3 tablespoons extra olive oil
1/4 cup butter or 1/4 cup margarine

Steps:

  • boil spaghetti in salted water.
  • coat bottom of large skillet or wok (i use a wok) with olive oil.
  • add minced garlic.
  • heat over medium high until hot.
  • add chicken.
  • sprinkle on italian seasoning, poultry seasoning, and salt.
  • cook through, stirring chicken frequently.
  • when chicken is cooked through, add the butter, and about 3 tablespoons additional olive oil.
  • when the butter and oil have melted together, drain spaghetti and toss with the chicken and oil/butter mixture. serve with hot garlic bread and a salad.

Shredded chicken and spaghetti stirred into a mixture of melted cheese, green onion, tomatoes, red and green chile peppers and creamy mushroom soup. A Classic Chicken Spaghetti with a little bite. This is a good last minute chicken recipe for a family, and my 2-year-old loves to eat this recipe with his fingers. Also, this dish freezes well. Serve with garlic bread, if desired.

1 (16 ounce) package spaghetti
1 (10.75 ounce) can condensed cream of mushroom soup
¾ pound processed cheese
1 (10 ounce) can diced tomatoes with green chile peppers
1 cup chopped green onion
4 1/2 breast, bone removeds skinless, boneless chicken breast halves - boiled, cut into bite size pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat soup in a large saucepan over low heat. Add cheese and melt, stirring. When cheese is almost melted, stir in tomatoes with green chile peppers and green onion. Simmer over low heat for 2 to 3 minutes, stirring.
  • Add spaghetti and mix well, then stir in chicken. Heat through and serve.

A super-easy recipe that works in the oven or crockpot. Serve over rice or noodles. Cook time is based on oven directions.

1 1/2 lbs boneless skinless chicken breasts
1 (10 -12 ounce) can enchilada sauce
1 cup heavy cream, no substitutions
1/4 cup chopped fresh cilantro
2 garlic cloves, crushed

Steps:

  • For the oven: Preheat oven to 375.
  • Place chicken in a 13 x 9 baking dish.
  • Combine all remaining ingredients, mix very well and pout over chicken. Turn once to coat all sides.
  • Cover w/ foil and bake at 375 for 30 minutes.
  • Remove cover and bake uncoveres for additional 20-25 minutes, or until chicken is done.
  • Crockpot: Place chicken in crockpot.
  • Mix everything else together and pour over chicken.
  • Cover and cook on low for about 7 hours or until done.

8 ounces uncooked spaghetti, broken into 3-inch pieces
3 cups cubed cooked chicken
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup 2% milk
1 medium onion, chopped
1 cup shredded sharp cheddar cheese, divided
1 cup shredded Swiss cheese, divided
1 can (4 ounces) mushroom stems and pieces, drained
1/2 cup chopped roasted sweet red peppers
3 tablespoons mayonnaise
1-1/2 teaspoons steak seasoning
1/2 teaspoon dried basil

Steps:

  • Cook spaghetti according to package directions. Meanwhile, in a large bowl, combine the chicken, soup, milk, onion, 1/2 cup cheddar cheese, 1/2 cup Swiss cheese, mushrooms, peppers, mayonnaise, steak seasoning and basil., Drain spaghetti. Add to chicken mixture; toss to coat. Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 20 minutes. Uncover; sprinkle with remaining cheeses. Bake until heated through and cheese is melted, 5-10 minutes longer., Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake as directed, increasing time as needed to heat through.

  • Put a pot of salted water on for the pasta. Add the pasta right away and as the water heats up and the pasta softens using a pair of tongs get it all down into the water and stir it a few times with the tongs as it cooks to keep it from sticking together.
  • Put a skillet on at medium high and add enough good extra virgin olive oil to coat bottom about 1/8" deep. Cut the chicken into chunks or slices and add it to the skillet. Lightly sprinkle with salt and pepper. Also red pepper flakes if you want it a little spicy. Stir it a few times and cook it until it is browned and firm.
  • While the chicken and the pasta are cooking slice or chop the garlic cloves and the parsley if you are using fresh parsley. But if you prefer, using dried parsley flakes works just fine. When the chicken is done push it out to the sides of the skillet and put the garlic in the center. You're going to want enough olive oil to thoroughly coat the pasta when you put in in so if the bottom of the skillet is dry from cooking the chicken then add some more extra virgin olive oil right on to the garlic.
  • You don't want the garlic to turn brown let's have it just light golden and translucent - 2-3 minutes. If the pasta is done before the garlic just drain all but about a half cup of the water and put it on the back of the stove. Drizzle a little olive oil and stir it getting the pasta covered with the oil so that it doesn't stick together. As soon as the garlic is ready add the pasta - with the little bit of water that you left in the pot - to the skillet. Put in the grated parmesan and the parsley holding a little back for garnish. Gently stir it all together.
