- Mix all sauce ingredients in lg bowl.
- Clean, trim and dry wings.
- Add chicken wings to sauce and stir to coat. Marinade for 30 min to 24 hrs turning occasionally.
- Place wings on baking sheet lined with parchment paper (to ease clean-up). Reserve liquid in bowl.
- Bake @ 400 for 25 min in upper 3rd of oven. Remove from oven re-coat in reserved liquid, flip over wings and return to oven for 20-25min. Watch during last few minutes so they do not burn.

- Combine all dry ingredients into a cohesive dry mixture and toss all chicken pieces into the mixture, until each wing & drum is well-coated.
- Preheat your oven to 200°F.
- Place a baking rack on a large rectangular sheet pan and place each individual piece of chicken approx. a half-inch apart from one another, making sure not to crowd the wings.
- Place chicken wings into the oven for 30 minutes.
- After 30 minutes, raise the oven temperature to 400°F and let the chicken wings cook for another 30-35 Minutes until golden-brown.
- Add two cubes of butter to ¼ cup buffalo sauce in a saucepan and heat on medium heat for ~5 minutes until you get a cohesive mixture.

- In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
- In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
- Heat the oil in a large pot until it reaches 350°F (180°C).
- Coat chicken wings in the batter, shaking off any excess. Add the wings to the oil in batches, cooking for 8-10 minutes until golden brown. Transfer the chicken wings wot a wire rack set over a paper towel-lined baking sheet.
