This spice mix comes from my mother's chili recipe, which is fantastic. It'll make a great gift for the hearty eaters you know, especially if you pair it with a loaf of bread. -Vivian Huizinga, Shallow Lake, Ontario

Number Of Ingredients 15

3-1/2 teaspoons garlic salt
3-1/2 teaspoons chili powder
2 teaspoons each salt, onion powder, pepper, ground cumin, paprika and dried parsley flakes
1/2 teaspoon cayenne pepper
ADDITIONAL INGREDIENTS (for each batch):
1 pound ground beef
1 medium onion, chopped
1 cup sliced fresh mushrooms, optional
1 can (28 ounces) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (16 ounces) hot chili beans, undrained
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 teaspoon Worcestershire sauce
2 garlic cloves, minced
Shredded cheddar cheese

Steps:

  • In a small bowl, combine all of the seasonings. Store in an airtight container in a cool, dry place for up to 6 months. Yield: 3 batches (about 6 tablespoons total)., To prepare chili: In a large saucepan or Dutch oven, cook the beef, onion and mushrooms if desired over medium heat until meat is no longer pink; drain. , Stir in the tomatoes, beans, soup, 2 tablespoons spice mix, Worcestershire sauce and garlic. Bring to a boil. Reduce heat; cover and simmer for 20 minutes, stirring occasionally. Garnish with cheese.

1 teaspoon cocoa powder

1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon

Steps:

  • Mix all ingredients together in a small bowl or jar. Store in a small airtight container.
  • After cooking meat and vegetables for chili, stir in spice mix and toast for 1-2 minutes before adding liquid ingredients to chili.

4 tablespoons chili powder
2 1/2 teaspoons coriander, ground
2 1/2 teaspoons cumin, ground
1 1/2 teaspoons garlic powder
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1 lb boneless round steak, cut into 1-inch pieces
2 teaspoons vegetable oil
1 lb lean beef, ground
1 medium onion, chopped
1 (28 ounce) can tomatoes, diced, undrained
2 cans chili beans, divided (15 ounces each)

Steps:

  • Combine the first six ingredients.
  • Store in an airtight container in a cool dry place. Yield: 4 batches (20 teaspoons total). To prepare chili: Lightly brown steak in oil in a Dutch oven; add 3 teaspoons of the seasoning mix and toss to coat. Add ground beef; cook until meat is no longer pink.
  • Add onion; cook until tender.
  • Add tomatoes and 2 more teaspoons of mix.
  • Stir in one can of chili beans.
  • Place the other can in a blender cover and process until smo oth.
  • Add to chili.
  • Cook on low for 30-40 minutes or until meat is tender.
