2 cups cubed peeled sweet potato
1 medium sweet red pepper, chopped
1 tablespoon olive oil
1 garlic clove, minced
1 can (28 ounces) diced tomatoes, undrained
2 cups vegetable broth
1 can (15 ounces) black beans, rinsed and drained
4-1/2 teaspoons brown sugar
3 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon pepper
1 package (6-1/2 ounces) cornbread/muffin mix
1/2 cup shredded cheddar cheese
Optional toppings: sour cream, shredded cheddar cheese and chopped seeded jalapeno pepper

Steps:

  • In a Dutch oven, saute sweet potato and red pepper in oil until pepper is crisp-tender. Add garlic; cook 1 minute longer. Add tomatoes, broth, beans, brown sugar, chili powder, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until potatoes are tender., Meanwhile, preheat oven to 400°. Prepare cornbread batter according to package directions; stir in cheese. Drop by tablespoonfuls over chili. , Cover and bake 18-20 minutes or until a toothpick inserted in center comes out clean. Serve with toppings of your choice.

1 pound lean ground beef
¾ cup finely chopped white onion
½ cup finely chopped red bell pepper
4 cloves garlic, chopped
2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons dried oregano
1 teaspoon ground coriander
1 14-ounce can diced tomatoes
¼ cup water
4 medium sweet potatoes
½ cup shredded cheese, such as Cheddar or pepper Jack

Steps:

  • Cook beef, onion, bell pepper and garlic in a large skillet over medium-high heat, crumbling the beef with a spatula, until the meat is browned, 8 to 10 minutes. Stir in chili powder, cumin, oregano and coriander; cook, stirring, for 30 seconds. Add tomatoes (with their juice) and water and simmer for 5 minutes.
  • Meanwhile, prick sweet potatoes with a fork in several places. Microwave on High until tender all the way through, 12 to 15 minutes.
  • Serve the sweet potatoes topped with the chili and cheese.

1 14-ounce package shredded coleslaw mix
1/2 cup pico de gallo or fresh salsa
1 tablespoon chopped pickled jalapeno peppers
1 1/2 tablespoons extra-virgin olive oil
1 tablespoon tomato paste
2 teaspoons chili powder
1 teaspoon ground cumin
12 ounces 93 percent lean ground beef
Kosher salt
3/4 cup shredded low-fat cheddar cheese (about 3 ounces)
2 scallions, thinly sliced

Steps:

  • Pierce the sweet potatoes several times with a fork and microwave, turning halfway through, until soft, 15 to 20 minutes. Meanwhile, toss the coleslaw mix, pico de gallo, pickled jalapenos and 1/2 tablespoon olive oil in a medium bowl and set aside.
  • Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the tomato paste, chili powder and cumin and cook, stirring, until toasted, about 1 minute. Add the beef and 1/2 teaspoon salt and cook, breaking up the meat with a wooden spoon, until browned, about 4 minutes. Remove from the heat.
  • One at a time, hold the sweet potatoes in a kitchen towel, cut open and scoop out a few spoonfuls of flesh; add to the skillet with the beef mixture along with the cheese and scallions. Season with salt. Return the skillet to medium heat and stir until the cheese melts, about 1 minute. Spoon into the sweet potatoes and top with the slaw.

2 tablespoons adobo sauce from the chilies
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly ground cloves (1 clove)
1/4 teaspoon freshly ground pepper
1/2 cup chicken broth or water
1 cup fresh orange juice
2 tablespoons honey
1 tablespoon finely chopped orange zest
2 tablespoons extra virgin olive oil
4 large sweet potatoes (about 3 pounds), scrubbed
Chopped cilantro for garnish (optional)

Steps:

  • Note: Sweet potatoes may be labeled as yams. Look for dark orange flesh. 1. Preheat the oven to 350 degrees. Oil a 2-quart baking dish. Place the garlic, salt, chipotles and adobo sauce, cinnamon, cloves, pepper, broth, orange juice and honey in a blender. Blend until smooth. Strain into a large, wide bowl, and stir in the orange zest. 2. Cut the sweet potatoes in half lengthwise, then cut each half into 4-inch lengths. If the sweet potatoes are fat, cut the pieces in half lengthwise into wedges. Add to the bowl, and toss with the adobo mixture until coated. Advance preparation: You can make this dish several hours ahead of serving and reheat in a medium oven. You can assemble the dish through Step 2 several hours before you bake it.

1/4 cup maple syrup

Steps:

  • Place the potato cubes in a large, heavy saucepan, cover with water, bring to a boil and cook until tender, 15 to 20 minutes. Drain.
  • Dry the saucepan, and melt the butter in it. Add the jalapenos, and saute for a minute or so, until they soften.
  • Force the drained potatoes through a ricer or a coarse sieve into the saucepan. Stir; then, fold in the maple syrup. Season to taste with salt and pepper.

4 1/2 lbs sweet potatoes or 4 1/2 lbs yams
2/3 cup red jalapeno jelly
1/3 cup red wine vinegar
1/4 cup minced fresh cilantro
about 3 tablespoons lime juice

Steps:

  • Peel sweet potatoes and cut into 1-inch chunks. Divide chunks equally between 2 lightly oiled baking pans (each 10 by 15 in.); cover tightly with foil.
  • Bake in a 450° oven for 15 minutes. Uncover and continue to bake until sweet potatoes are tender when pierced, about 25 minutes longer; switch pan positions halfway through baking.
  • Meanwhile, put jelly in a 2-cup glass measure. Heat in a microwave oven at full power (100%) until softened, about 20 seconds. Add vinegar and stir until well blended.

The chef Rick Bayless offers a wonderful recipe for sweet potatoes glazed with an ancho chile paste in his book "Rick Bayless's Mexican Kitchen." Instead of making the paste, I make a thinner glaze with canned chipotle and some of the adobo they're packed in. The glaze makes a spicy contrast to the sweet potatoes. You can make this recipe vegan by using light brown sugar instead of honey.
