BRAISED BEEF BRISKET CHILLI OIL



Braised beef brisket chilli oil image

A magical version of the Cantonese classic, with a robust chilli oil to boot.

Number Of Ingredients 21

1 kg piece beef brisket, fat trimmed
1 tbsp vegetable oil
20 gm ginger (about 4cm), sliced
2 large garlic cloves, finely chopped
2 spring onions, cut into 2.5cm lengths
2 star anise
4 bay leaves
1 tsp Sichuan peppercorns
1 small cinnamon quill
2 pieces dried tangerine peel (see note)
1 tbsp coarsely crushed rock sugar (see note)
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tsp cornflour mixed with 1 tbsp water
Steamed rice and coriander, to serve
1 garlic clove, finely chopped
2 tsp finely chopped ginger
1½ tbsp light soy sauce
80 ml (⅓ cup) chilli oil (see note)
2 tsp rice vinegar
Pinch of caster sugar

Steps:

  • Place beef in a large saucepan, cover with water and bring to the boil. Reduce heat to medium and simmer to remove impurities (8-10 minutes). Remove with a slotted spoon and rinse under cold water. Rinse the saucepan.
  • Heat vegetable oil in the same saucepan over high heat. Add ginger, garlic and spring onion and stir-fry until fragrant (1-2 minutes). Add star anise, bay leaves, Sichuan peppercorns and cinnamon, reduce heat to medium, and stir-fry until fragrant (3-4 minutes). Add tangerine peel, rock sugar, light and dark soy sauce and beef, cover with water (about 3 litres) and bring to the boil. Cover partially with a lid, then reduce the heat to low-medium and simmer until beef is fork-tender (1½ hours to 2 hours).
  • Meanwhile, for chilli-oil sauce, whisk ingredients in a bowl until sugar dissolves.
  • Transfer beef to a large heatproof bowl with a slotted spoon. Ladle some braising liquid over the beef to taste and cover to keep warm. Strain remaining braising liquid through a fine sieve (discard solids) and transfer 500ml of the liquid to a small saucepan. Bring to the boil, add cornflour and whisk until a smooth glossy sauce forms, season to taste and keep warm. Slice beef and place in a large bowl, pour over 2-3 ladles of reduced stock to taste, then some chilli-oil sauce. Serve with rice and coriander.

1 1/2 pounds beef brisket, trimmed of excess fat, cut into 3/4-inch pieces
One 15-ounce can tomato puree
Two 15-ounce cans kidney beans, rinsed and drained
One 10-ounce bag frozen corn
1 large red onion, chopped
1 large green bell pepper, cut into 3/4-inch pieces
2 cloves garlic, thinly sliced
1/4 cup chili powder
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
Sour cream, shredded Cheddar, tortilla chips, fresh cilantro, for serving

Steps:

  • Layer the brisket, tomato puree, beans, corn, onion, bell pepper, garlic, chili powder and cumin in a large resealable plastic bag. Add 1 teaspoon salt and 1/4 teaspoon pepper. Squeeze out the air from the bag and seal. Freeze until ready to use, up to 3 months. Thaw in the refrigerator for at least 24 hours before cooking.
  • Pour the contents of the bag into a 6-quart slow cooker. Cook on low until the brisket is tender and the tip of a paring knife can go into a piece easily, 7 to 9 hours. Season with salt. Serve with sour cream, Cheddar, tortilla chips and cilantro for topping.

1 fresh beef brisket (2 pounds), cut into 1/2-inch pieces
1 large onion, finely chopped
2 tablespoons vegetable oil
2 cans (16 ounces each) kidney beans, rinsed and drained
1 pound smoked kielbasa or Polish sausage, halved and sliced
1 jar (16 ounces) salsa
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
2 cans (4 ounces each) chopped green chiles
2 garlic cloves, minced
1 tablespoon chili powder
1 tablespoon ground cumin
1 teaspoon celery salt
1/4 teaspoon salt
1/8 teaspoon pepper
2 to 3 tablespoons lemon juice
1-1/2 teaspoons grated lemon zest
Optional: shredded cheddar cheese and sliced green onions

Steps:

  • In a Dutch oven, brown beef and onion in oil in batches; drain. Stir in the beans, kielbasa, salsa, tomatoes, tomato sauce, chiles, garlic and seasonings. , Bring to a boil. Reduce heat; cover and simmer for 3 hours or until meat is tender. Just before serving, stir in lemon juice and zest. If desired, top with cheddar cheese and sliced green onions.

Braised Brisket With Hot Sauce and Mixed Chiles image

6 mild yellow or red chiles or 3 yellow or red bell peppers
4 hot yellow chiles (such as banana or Hungarian wax peppers), seeds removed
4 medium-hot red chiles (such as Fresno or jalapeño), seeds removed
3/4 cup apple cider vinegar
1/4 cup (packed) light brown sugar
2 tablespoons Red Chile Hot Sauce
1 tablespoon vegetable oil
1 (4-pound) beef brisket, preferably from the point end
Kosher salt
2 teaspoons freshly ground black pepper
1 large red onion, cut through root end into 6 wedges
8 garlic cloves, peeled

Steps:

  • Preheat oven to 300°F. Arrange chiles on a wire rack on stovetop over a gas flame and roast, turning occasionally, until blistered and lightly charred. (Or roast one at a time using tongs, or use the broiler.)
  • Stir vinegar, brown sugar, and 2 Tbsp. hot sauce in a small bowl; set aside.
  • Heat oil in a large heavy pot over medium-high. Season brisket generously with salt and sprinkle with pepper; cook, fat side down, until bottom side is deep golden brown, 6-8 minutes. Turn and cook until other side is golden brown, about 4 minutes. Transfer to a rimmed baking sheet. Add onion and garlic to pot and cook, reducing heat if needed, until lightly browned, 6-8 minutes. Transfer to baking sheet with brisket.
  • Remove pot from heat and place brisket in pot, fat side up. Pour reserved vinegar mixture over and arrange garlic and blistered chiles around. Place onion on top of chiles. Cover pot and transfer to oven. Braise until brisket is fork-tender and shreds easily, 3-3 1/2 hours. Transfer brisket, onion, chiles, and garlic to a platter and let cool 15 minutes.
  • Meanwhile, place pot over medium-high heat and bring braising liquid to a boil. Cook until thick and syrupy, 10-15 minutes. Taste pan sauce and season with more hot sauce and salt, if needed.
  • Serve brisket, onion, chiles, and garlic with pan sauce drizzled over.
  • Brisket can be braised 3 days ahead. Let cool in juices in pot; cover and chill.

1 teaspoon salt
12 ounces lager beer
1 tablespoon canola oil
2 -2 1/2 lbs beef brisket, trimmed of excess fat
1 (15 ounce) can pinto beans, rinsed & drained

Steps:

  • Tear chiles into pieces and place in a large bowl. Cover with hot water and let sit until softened, at least 20 minutes. Drain.
  • Preheat oven to 350°F.
  • Place tomatoes and their juices, onion, garlic, chili powder, cumin, salt and the drained chile pieces in a blender or food processor. Process until smooth. Transfer back to bowl from chiles and stir in beer.
  • Heat oil in a large Dutch oven over medium heat. Add brisket and brown on both sides, about 3-4 minutes per side.
  • Pour the chile sauce over the meat and bring to a simmer.
  • Cover, transfer to the oven and bake for 2 hours.
  • Stir in beans and continue baking until the meat is fall-apart tender, 45 minutes to 1 hour more.
  • Transfer the meat to a cutting board and pull apart into long shreds using two forks. Stir the shredded meat back into the sauce.

3/4 teaspoon fennel seed

3 1/2 pounds beef brisket
4 teaspoons olive oil
1 large onion, cut into 1/2-inch wedges (root end left intact)
4 cloves garlic, minced
2 tablespoons tomato paste
12 ounces pale lager, such as pilsner
1 pound small potatoes
3 large carrots, cut into 2 1/2-inch pieces
1 to 2 tablespoons cider vinegar
1/4 cup chopped fresh cilantro leaves, plus more for serving

Steps:

  • Preheat oven to 350 degrees. Combine chili powder, fennel seed, 1 teaspoon salt, and 3/4 teaspoon pepper and rub all over brisket. In a large heavy ovenproof pot, heat oil over medium-high. Cook brisket until browned on all sides, about 8 minutes total. Transfer to a plate.
  • Add onion to pot and saute 5 minutes. Stir in garlic and tomato paste and saute 1 minute. Add beer and 2 cups water, scraping up browned bits with a wooden spoon. Bring to a boil; return brisket to pot, cover, and transfer to oven. Braise until brisket is almost tender, about 3 hours. Tilt pot and spoon off fat from liquid. Add potatoes, carrots, and 1 cup water; braise until meat is very tender, 50 minutes more. Transfer brisket to a cutting board and let rest 10 minutes, then slice. Stir vinegar and cilantro into vegetables; serve with meat, sprinkled with more cilantro.

1 star anise
1 teaspoon fennel seed
12 pasilla chiles, seeded
4 pounds beef brisket, trimmed of excess fat and silver skin
Kosher salt and freshly ground black pepper
3 cups boiling water
1/4 cup sherry vinegar
3 tablespoons extra-virgin olive oil
1 medium onion, cut into fine dice
3 ripe tomatoes, grated on the largest holes of a box grater, or 1 (14-ounce) can canned crushed tomatoes with juice
2 cups chicken stock

Steps:

  • Preheat the oven to 350°F.
  • In a small skillet over a medium heat, toast the star anise and fennel seed. Move the pan across the heat, letting the spices gently roll inside. Do that for about 3 to 4 minutes or until you begin to smell the toasting spices. Transfer into a spice mill or a coffee grinder. Add 5 of the chiles and grind until finely ground. Season the brisket with salt and pepper, rub with the spice blend, cover, and refrigerate while continuing with the recipe.
  • Put the remaining 7 chiles in a bowl and cover with the boiling water. Set aside and let soak until the chiles have softened, about 30 minutes. When soft, reserve the chiles and 1 cup of the reconstituting water. Discard the rest of the water. In a blender, liquefy the chiles, the 1 cup reserved soaking water, and the sherry vinegar. Set aside.
  • In a large Dutch oven, heat the olive oil over high heat and sear the brisket in the hot oil on all sides until well browned, about 5 minutes per side. Remove the brisket from the pan and set aside. Add the onions to the pan and sauté until they become translucent, about 3 minutes. Stir in the tomatoes, stock, and chile mixture and bring to a boil. Remove the pan from the heat, add the brisket, cover, and braise in the oven until fork tender, 3 1/2 to 4 hours, skimming occasionally to remove excess fat.
  • When done, slice and serve hot with the braising liquid alongside.
  • To Drink
  • The hot climate of southern Oregon produces one of my very favorite Spanish varietals, Tempranillo, which loves meat braised with tomatoes, ground chiles, and spices. The black-fruit flavors of this grape and the tannins stand up well to the braised beef. Two Oregon wineries, Abacela and Dominio IV, produce fine examples of this grape varietal. A companion choice would be a French Rhône wine from Chapoutier: Châteauneuf-du-Pape, Saint Joseph, or Crozes-Hermitage. These wines have spice, smoke, and lingering tannins that speak to all the flavors of the brisket. -K.P.

Chile-Braised Beef, Two Ways image

Birria is a popular dish from the Jalisco region of Mexico, and the inspiration for this smoky chuck-roast rendition. The meat is cooked low and slow in a broth flavored with blistered onion, tomatoes, and guajillo and ancho chiles, then shredded. It's traditionally served as a soup, or tucked into tortillas that have been dipped in the cooking broth and pan-fried until crunchy. This recipe makes enough to have it both ways, and then some.

3 pounds beef-chuck roast, halved
Kosher salt
1 large white onion, halved lengthwise and peeled, plus more, chopped, for serving
1 head garlic, cloves separated and peeled (10 to 12)
2 dried bay leaves
6 guajillo or puya chiles, stems and seeds removed
2 ancho chiles, stems and seeds removed
3 chiles de arból, stems and seeds removed
4 plum tomatoes (about 1 pound total), cored
3 tablespoons apple-cider vinegar
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 teaspoon cumin seeds
2 teaspoons fresh oregano leaves, or 3/4 teaspoon dried
Fresh cilantro and lime wedges, for serving
Julienned or sliced radishes and diced avocado, for serving (optional)
6-inch corn tortillas, vegetable oil, and hot sauce (if making tacos)

Steps:

  • Place beef in a large pot and season with 1 tablespoon salt. Add 1 onion half, 5 garlic cloves, bay leaves, and enough water to cover meat by 1 inch (8 to 10 cups). Bring to a boil, skimming impurities from surface. Cover, reduce heat to medium-low, and simmer until tender enough to easily pierce with the tip of a knife, about 2 hours.
  • Meanwhile, preheat broiler, with rack 6 to 8 inches below heating element. Arrange chiles on a rimmed baking sheet. Broil with oven door cracked open, turning once, until blistered in places on both sides, fragrant, and beginning to smoke, 30 to 45 seconds. Transfer to a saucepan. Arrange tomatoes and remaining onion half and garlic cloves on baking sheet. Broil, turning a few times, until blistered in places and beginning to soften, 8 to 10 minutes.
  • Transfer to saucepan with chiles; add enough water to just cover vegetables (4 to 5 cups). Bring to a boil, then reduce heat to medium-low and simmer, uncovered, 10 minutes. Strain, reserving 1 cup cooking liquid, and transfer to a blender with reserved liquid, vinegar, cinnamon, cloves, cumin, oregano, and 2 teaspoons salt. Purée until smooth.
  • Transfer beef to a plate and strain broth through a fine-mesh sieve, discarding solids. Return beef to pot with 5 cups broth and puréed-chiles mixture (any remaining broth can be cooled and stored in an airtight container in the refrigerator up to 1 week, or frozen up to 6 months; if you'll be serving the dish as a soup, reserve and keep warm).
  • Bring beef to a boil. Partially cover, reduce heat to medium-low, and simmer until beef is fork-tender, 1 1/2 to 2 hours more. Shred meat into bite-size pieces.
  • To serve as a soup, add reserved warm broth to pot, a little at a time, to reach desired consistency (it should be soupy but still have some body to it). Scatter with chopped onion and cilantro and serve, topped with radishes and avocado, with lime wedges alongside.
  • To make tacos, dip tortillas into chile broth, flipping to fully coat, and transfer to a plate, stacking them one on top of another. Fill each with about 1/3 cup shredded beef and a little more chile broth. Fold in half. Heat a generous slick of oil over medium-high in a large, heavy skillet, such as cast iron. When it shimmers, add tacos in a single layer and cook, flipping once (if browning too quickly, reduce heat to medium) until crisp and golden brown in places, about 2 minutes per side. Serve with chopped onion, cilantro, hot sauce, and lime wedges.

BRAISED BRISKET WITH GARLIC

Braised brisket is a lovely dish. Advance preparation cuts down on last-minute cooking and makes it easier to remove the fat from the gravy.

1 lemon
3 tablespoons olive oil
5 pounds beef brisket
36 cloves garlic, peeled
2 tablespoons red wine vinegar
3 cups Swanson® Beef Stock or Swanson® Unsalted Beef Stock
3 sprigs fresh thyme leaves, or more to taste
2 sprigs fresh rosemary leaves
1 teaspoon chopped fresh rosemary leaves
1 teaspoon minced garlic

Steps:

  • Heat the oven to 325 degrees F. Grate 1 teaspoon zest from the lemon.
  • Heat the olive oil in a roasting pan over medium-high heat. Add the beef and cook until well browned on both sides. Remove the beef from the pan. Pour off all but 1 tablespoon pan drippings.
  • Reduce the heat to medium. Add the garlic cloves to the pan and cook until golden, stirring occasionally. Add the vinegar to the pan and cook and stir for 1 minute, scraping up the browned bits from the bottom of the pan. Stir in the stock, thyme and rosemary sprigs. Reduce the heat to low. Cook for 5 minutes. Season with black pepper.
  • Return the beef to the pan. Spoon the stock mixture over the beef. Cover the pan.
  • Bake for 2 1/2 hours or until the beef is fork-tender. Baste the beef with the pan juices every 30 minutes. Remove the beef from the pan, cover and keep warm.
  • Strain the pan drippings through a sieve into a medium bowl, reserving the garlic and discarding the thyme and rosemary sprigs. Spoon off any fat.
  • Place about half the garlic cloves and about 1 cup pan drippings into a food processor or blender. Cover and process until the mixture is smooth.
  • Heat the garlic mixture, remaining garlic cloves, remaining pan drippings, chopped rosemary, minced garlic and lemon zest in a 10-inch skillet over medium-high heat to a boil. Cook and stir until the gravy is thickened. Serve the gravy with the beef.

You have never had corned beef like this and if you try it, I truly believe you will never go back to the traditionally 'boiled' beef. This recipe was given to my mother-in-law and it has become a treasured family recipe. The brisket is seared in a hot skillet to give it a caramelized surface when it's done, topped with sliced onions, garlic, and a drizzle of broth, then braised for about 6 hours for a tender, juicy roast. It's so worth the wait! I serve it with colcannon, steamed cabbage wedges, braised carrots, and parsnips. It is our favorite St. Patrick's/Jewish dinner, but we love it so much that I cook it year round.

1 tablespoon browning sauce (such as Kitchen Bouquet®), or as desired
