BAILEYS® CHOCOLATE CHIP CHEESECAKE
I received this Baileys® cheesecake recipe over 20 years ago from a local caterer. I have made it several times over the years and everyone who tasted it enjoyed it. Remember this is not for the diet conscious!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press over the bottom and 1 inch up the sides of a 9-inch springform pan.
- Bake crust in the preheated oven until set, about 7 minutes. Remove from the oven and let cool while making the filling.
- Beat cream cheese with an electric mixer until smooth. Add sugar, eggs, Irish cream, and vanilla extract to the cream cheese, beating well after adding each ingredient. Do not overbeat.
- Sprinkle 1/2 cup chocolate chips over the cooled crust. Spoon cream cheese filling over the chocolate chips. Sprinkle remaining chocolate chips over the top.
- Bake in the preheated oven until puffed and golden brown, but center is still springy, about 1 hour 20 minutes. Let cool completely before removing from the pan, about 1 hour.
- Beat whipping cream with an electric mixer until soft peaks form. Add sugar and coffee granules. Continue beating until cream is firm enough to hold its shape. Spread over cooled cheesecake.

AMY'S MARVELOUS MARBLED CHEESECAKE
Delicious chocolate cheesecake swirled in creamy vanilla batter and layered on a crumbly chocolate graham cracker crust.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). In a medium bowl, combine graham cracker crumbs and butter. Mix well and press into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.
- In a large bowl, beat the softened cream cheese, sugar and vanilla until creamy and smooth. Blend in the eggs one at a time. Remove 1 cup of cream cheese mixture and combine with melted chocolate.
- Spread plain batter into the crust. Drop the chocolate mixture randomly over the top. With the tip of a knife, Swirl the batter to create a marble effect.
- Bake in the preheated oven for 30 to 35 minutes, or until center is set. Cool to room temperature, then refrigerate for 3 hours or overnight before serving.

MAGELBY'S ROLLS
I went to Magelby's restaurant 6 years ago and had theses rolls. Well I searched high and low and finally found the recipe only to find they started with Rhodes roll dough! I have always been pretty fanatic about making my own rolls from scratch but I wanted these so bad--turns out NO one can tell they aren't from scratch! You can use fresh or dried parmesan cheese, I believe the restaurant used the dried, but my husband prefers fresh grated--both ways are excellent!

Steps:
- Spray a large baking sheet.
- Mix cheese, parsley, and garlic in a small bowl.
- Roll frozen dough balls in melted butter and then in cheese mixture being careful to coat completely.
- Place on cookie sheet allowing plenty of room for rolls to raise.
- Spray a piece of Saran wrap and place sprayed side down on rolls.
- Allow to rise at least 3 hrs in a warm place.
- Remove plastic wrap and bake in preheated 375°F oven for 15 minutes (I have had to bake longer and so to prevent your cheese from turning to brown, you might wish to lower the temp to 350°F and bake a little longer).

MAGLEBY'S CHEESECAKE
This cheesecake is wonderful, and definitely tastes better after sitting in the fridge overnight. Serve w/ cold raspberry sauce or whatever fruit sounds good!

Steps:
- Preheat oven to 400°F.
- Combine graham crackers, 1/4 cup sugar and 1 teaspoons cinnamon. Add 1/4 cup melted butter and combine. Pat down into bottom of 9" springform pan. Bake for 7 minutes.
- Beat cream cheese and sugar together until smooth. Add eggs, one at a time. Add lemon juice, lemon zest and vanilla. Pour batter into pan on top of crust. Bake at 325°F for 45-50 minutes. Cool for 15 minutes.
- For the topping, combine 2 cups sour cream, 1/2 cup sugar and 1 teaspoons vanilla. Bake at 400°F for 12 minutes. Cool in refrigerator for at least 4 hours.
