BIG JOHN'S CHILI DIABLO

It was hard to get this written down as I've never really measured anything in it, but at the urging of many I did the best I could.

2 lbs extra lean ground beef
1 cup onion, chopped
1 cup frozen corn kernels
1/2 cup smoked sausage, cubed
1/2 cup bacon, thick-sliced, cooked and crumbled
1 teaspoon garlic powder
2 tablespoons chili powder
1 (15 1/2 ounce) can bean medley, with juice
1 (15 1/2 ounce) can kidney beans, with juice
1 (15 1/2 ounce) can baked beans, with juice
3 cups stewed tomatoes, cut up
1 beef bouillon cube (or packet)
1/2 cup jalapeno pepper, chopped
2 tablespoons Worcestershire sauce
1/2 cup red bell pepper, chopped
1 tablespoon habanero sauce (Sudden Death or other)
1 tablespoon butter
1 teaspoon thyme

Steps:

  • In a large high sided electric skillet (or large stew pot) combine beef and sausage and brown over med-high heat (sausage should be just crispy on the outside and beef should be nicely browned, not grey).
  • Add onion when almost finished and cook until onions are tender.
  • Combine all dry ingredients and spices in a small bowl and set aside.
  • Add tomatoes and beans to skillet mixing well and bring to a slow boil.
  • Add spice mix and stir well, continuing to boil.
  • Add bacon, corn, peppers and remaining ingredients to chili and mix well.
  • Reduce heat to low simmer and cover.
  • Cook for 2 hrs, stirring occasionally.
  • Finished chili should be thick.

When you're feeling like something robust and spicy, a recipe with diablo in the title is a signal you need look no further. Tasty Latin American flavors and familiar ingredients such as pasta, black beans and sirloin steak marry well for an adventure at the dinner table.

2 slices bacon, cut into 1/2-inch pieces
1 medium onion, chopped (1/2 cup)
1 small green bell pepper, chopped (1/2 cup)
1 chipotle chili in adobo sauce, from 7-oz can, seeded and chopped
1 teaspoon adobo sauce from can of chipotle chilies
3/4 cup chili sauce
3/4 cup Progresso™ beef flavored broth (from 32-oz carton)
1 can (15 oz) Progresso™ black beans, drained, rinsed
6 cups uncooked mafalda (mini-lasagna noodle) pasta (12 oz)
1 beef boneless top sirloin steak, about 1 inch thick (1 1/2 lb)
1/2 teaspoon garlic pepper
1/2 teaspoon salt
1/4 teaspoon chili powder
1 avocado, peeled, pitted and sliced
2 tablespoons fresh cilantro leaves, if desired

Steps:

  • Cook bacon in 10-inch nonstick skillet over medium heat, stirring occasionally, until crisp. Stir in onion and bell pepper. Cook 2 to 3 minutes, stirring occasionally, until crisp-tender. Stir in chipotle chili and adobo sauce. Cook and stir 1 minute. Stir in chili sauce and broth. Heat to boiling; reduce heat. Simmer 5 minutes, stirring occasionally. Stir in beans; heat through.
  • Cook and drain pasta as directed on package.
  • While pasta is cooking, heat coals or gas grill for direct heat. Sprinkle beef with garlic pepper, salt and chili powder. Grill beef 4 to 6 inches from medium heat 8 to 12 minutes for medium doneness, turning once.
  • To serve, toss pasta with about 1 cup sauce. Cut beef across grain into thin slices; arrange over pasta mixture. Drizzle and serve with remaining sauce. Garnish with avocado and cilantro.

1 pound lean ground beef (90% lean)
2 tablespoons dried minced onion
2 teaspoons dried oregano
2 teaspoons chili powder
1/2 teaspoon garlic powder
1/8 teaspoon salt
3 cups tomato juice
2 cups water
1 can (6 ounces) tomato paste
1 teaspoon sugar
8 ounces uncooked whole wheat small pasta shell- or spiral-shaped pasta
Chopped tomato and sliced jalapeno pepper, optional

Steps:

  • In a Dutch oven, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in seasonings., Add tomato juice, water, tomato paste and sugar to pan; bring to a boil. Stir in pasta. Reduce heat; simmer, covered, 20-22 minutes or until pasta is tender, stirring occasionally. If desired, top with chopped tomato and jalapeno slices.

1 cup Italian parsley (lightly packed)
4 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon chili pepper flakes
2 tablespoons fresh oregano leaves (optional)
2 tablespoons shallots, minced
3/4 cup olive oil
3 tablespoons sherry wine or 3 tablespoons red wine vinegar
3 tablespoons lemon juice
1 teaspoon cayenne pepper
3 tablespoons salt
2 1/2 lbs steak (rib eye, New York, or, sirloin - 1 1/2 inches thick)
2 French baguettes, cut in 1/4-inch thick slices

Steps:

  • Place the parsley, garlic, salt, pepper, pepper flakes, oregano, shallots, olive oil, sherry, and lemon juice, in a blender or food processor and pulse until well chopped well, but not pureed. Reserve.
  • Dissolve cayenne pepper and salt in 1 cup hot water. Transfer to a squeeze bottle container.
  • Place the steak directly over a hot grill, baste with the cayenne grilling sauce, and grill until the outer portion of the meat reaches the desired degree of doneness.
  • Remove the steak from the grill and slice long strips from the outer edges of the steak. Instruct guests to pick up a steak slice from the cutting board with their fingers, place it on a slice of baguette, and enjoy. Return the remaining steak to the grill, baste, and grill until more of the steak is cooked.
  • Remove and repeat the slicing and serving procedure until steak is consumed.
  • For extra spicy steak, baste 2 or 3 additional times during grilling process.
  • Serve the chimichurri sauce alongside the steak.
