Grilled Chicken Breasts with Spicy Peach Glaze image

2 cups peach preserves or jam
3 tablespoons olive oil, plus more for brushing
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 tablespoon finely chopped garlic
1 small jalapeno, finely chopped
Kosher salt and freshly ground pepper
8 frenched chicken breasts
4 ripe peaches, cut in half and pitted

Steps:

  • Combine the peach preserves, olive oil, soy sauce, mustard, garlic and jalapeno in a medium bowl and season with salt and pepper. Reserve 1/2 cup.
  • Preheat the grill. Brush the chicken with olive oil and season with salt and pepper. Place the chicken skin-side down and cook until golden brown, 6 to 7 minutes. Turn over and continue cooking for 5 to 6 minutes. Brush both sides with the peach glaze and continue cooking until done, an additional 4 to 5 minutes.
  • Place the peach halves cut side down on the grill and grill for 2 minutes. Turn over, brush with the reserved 1/2 cup of peach glaze and grill until the peaches are soft, 3 to 4 more minutes.

1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne or ground chipotle
1 1/4 teaspoons salt
1- 1 1/4 lb skinless chicken breasts or thighs ( I prefer skin-on, bone-in thighs)
2 tablespoons olive oil
2 shallots, sliced into thin rings ( about 1/2 cup)
2 large peaches, cut into 1/2 inch thick wedges
2 tablespoons lime juice, more for garnish
1 tablespoon honey

Steps:

  • Preheat oven to 400 F (please see notes)
  • In a small bowl mix chili powder, cumin, smoked paprika, chipotle and salt.
  • Season all sides of chicken generously with the spice mix.
  • Heat oil in a skillet over medium to medium-high heat and sear the chicken, top side down until deeply golden, about 5-7 minutes. (If using skin-on, get that skin crispy!). Turn and sear 4-5 minutes then set aside, and cover with foil.
  • To the same skillet, over medium heat add the shallots. Saute stirring often until tender about 3-4 minutes. Add the peaches. Gently saute for 2 minutes, turning them over after they just begin to soften and caramelize. Don't over cook them here. Squeeze with a couple of tablespoons of lime juice and drizzle 1 tablespoon honey, stir carefully with the goal of keeping the peaches intact. Once they are heated through turn heat off.
  • Nestle the chicken back into the skillet with the peaches, and if using chicken breast, just simmer until cooked through. ( 160F) If using thighs, place in the oven until cooked through.(165F)
  • Squeeze chicken with lime and garnish with cilantro, serving in the skillet, or place all on a platter, spooning the flavorful pan juices over top, garnishing last.

1 can (8-1/2 ounces) sliced peaches in heavy syrup
1 fully cooked bone-in ham (6 pounds)
1 tablespoon whole cloves
1-1/2 cups packed brown sugar
3 tablespoons cider vinegar
1/4 to 1/2 teaspoon ground cloves

Steps:

  • Drain peaches, reserving syrup (save peaches for another use). Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep; insert a clove in each diamond. Cover and bake at 325° for 2 hours., Meanwhile, in a small bowl, combine the brown sugar, vinegar, cloves and reserved syrup. , Brush ham with 1/2 cup brown sugar mixture. Bake, uncovered, 25-35 minutes longer or until a thermometer reads 140°. Let stand for 15 minutes before slicing. Serve with remaining brown sugar mixture.

Kosher salt
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
3 pounds chicken wings, cut at joint
1/2 stick (2 ounces) butter
2 cloves garlic, chopped
1/2 cup peach preserves
1/4 cup hot sauce (recommended: Tabasco)
1 tablespoon soy sauce

Steps:

  • Preheat deep fryer with peanut oil to 350 degrees F.
  • Mix the 2 teaspoons salt, smoked paprika, and garlic powder together in a small bowl.
  • Add chicken wings and toss to coat.
  • Melt the butter in medium saucepan over medium heat with the garlic.
  • Stir in peach preserves, hot sauce, and soy sauce. Cook until syrupy and thick, about 5 minutes. Transfer to a large bowl.
  • Add the wings to the deep fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You will need to do this in 2 batches so you don't overcrowd your fryer.
  • Remove the wings from the fryer and drain on a paper towel-lined baking tray.
  • Add the fried wings to the large bowl of sauce and toss until well combined and wings are well coated. Using a slotted spoon, remove the wings to a platter and serve immediately.

1 clove garlic, minced
¼ teaspoon ground ginger
½ teaspoon Asian chili garlic sauce, or to taste

Steps:

  • Stir peach preserves, minced garlic, powdered ginger, chili garlic sauce, and lemon juice together in a microwave-safe bowl until blended. Microwave on high for 30 to 35 seconds, or until boiling. Carefully remove from the microwave and stir again; set aside.

5 lbs pork back ribs
water (enough to cover the ribs)
1 cup brown sugar
1 celery rib
1 onion
1 teaspoon thyme
1 bay leaf
1 tablespoon dried mustard

1 cup canned peaches (with juice)
2 cups brown sugar
2 tablespoons apple cider vinegar
2 tablespoons chili sauce
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder

1 teaspoon chili flakes
1/2 teaspoon pepper
4 drops liquid smoke

Steps:

  • Place ribs in a large pot, add water just enough to cover them up.
  • Add chopped onions, celery ribs and remaining ingredients to boil the ribs.
  • Bring to a boil, simmer for up to 2 hours, or until ribs are tender.
  • Discard cooking liquid, let the ribs cool down.
  • For the glaze: Blend peaches and juice with a hand blender until creamy.
  • Add all other remaining ingredients of glaze and mix well.
  • Start BBQ; bring heat up to 350°F.
  • Pour a good quantity of glaze to cover ribs all over.
  • Place ribs on the BBQ and close cover.
  • Keep adding glaze, and turning ribs until heated through (approx. 15 - 20 minutes).
