ZESTY CHILLI TIGER PRAWNS

A quick and tasty prawn stir-fry recipe.

2 tbsp groundnut oil or vegetable oil
5 garlic cloves, finely chopped
1 red chilli, finely chopped
200g/7oz raw tiger prawns, shelled and de-veined
1 tbsp Shaoxing rice wine or dry sherry
1 lime, juice only
75g/3oz French beans, topped and tailed, chopped into 1cm/½in pieces
pinch sea salt
1 tsp dried chilli flakes

Steps:

  • Heat a wok until smoking and add the groundnut oil, then add the garlic and chilli and stir fry for a few seconds. Add the prawns, rice wine and lime juice and stir fry for 2-3 minutes, or until the prawns start to turn pink.
  • Add the French beans and stir fry for another 2-3 minutes, or until the prawns are cooked through. Season, to taste, with the salt and chilli flakes.
  • Pile the chilli prawns onto a serving plate and serve immediately.

25g butter
2 tbsp olive oil
3 garlic cloves, finely chopped
1 red chilli, seeds left in and finely chopped
½ tsp sweet paprika
12-20 large raw king prawns with shells
juice 1 lemon, plus a few slices for a finger bowl
½ small bunch parsley, roughly chopped
small loaf crusty bread, warmed to serve

Steps:

  • Melt the butter and oil together in a frying pan. Add the garlic, chilli and paprika, then fry for 1-2 mins until starting to turn golden. Turn up the heat, throw in the prawns and fry for a few mins, stirring, until all the prawns turn pink. Take off the heat, season and stir in the lemon juice and parsley.
  • Add some lemon slices to a finger bowl of warm water, grab a bowl for the shells, then dig straight in with your fingers and hunks of crusty bread.

This stir-fry is full of flavour and can be served up in a matter of minutes. The dish was inspired by all the cheap and cheerful seafood places in Hong Kong that I visited, where some of the most amazing seafood was served! I was particularly taken with a garlic prawn dish I ate - the prawns were butterflied (cut in half down the middle of the spine), topped with generous amounts of butter, garlic and spring onions and steamed. My tangy chilli and garlic prawns is inspired by that memorable dish. Make sure you buy raw tiger prawns because if you buy cooked, they will be too chewy when cooked again in this dish.

2 tablespoons groundnut oil
5 cloves garlic, finely chopped
1 medium red chile, finely chopped
7 ounces raw Tiger (jumbo shrimp) or King prawns (langoustines), shelled and deveined
1 tablespoon Shaohsing rice wine or dry sherry
Juice of 1 lime
3 ounces French beans (green beans), chopped into 1/2-inch lengths
Pinch sea salt
1 teaspoon dried chile flakes

Steps:

  • Heat a wok or pan over a high heat, and add the groundnut oil. Add the garlic, and chiles, and stir-fry for a few seconds. Then, add the prawns, rice wine or sherry, and the lime juice, and stir-fry until the prawns start to turn pink.
  • Add the French beans, and mix together. When the prawns have all turned pink, season with the salt, and chile flakes, and serve immediately.

1/2 mango, diced
2 tablespoons freshly grated ginger
1 tablespoon finely diced red bell pepper
3 tablespoons rice vinegar

1 pinch cayenne pepper
2 medium golden tomatoes, cut and seeded to form cups
12 large tiger prawns, cooked, peeled, and chilled
4 sprigs fresh cilantro
8 whole chives

Steps:

  • Place figs, mango, ginger, red pepper, rice vinegar, honey, and cayenne in a small saucpan. Simmer over low heat for 15 minutes. Let cool slightly, and then refrigerate until completely chilled.
  • Fill tomatoes with fig chutney. Place tomato in the center of each plate. Arrange shrimp on tomato, with tails down. Garnish with cilantro and chives.

1 onion, sliced
3 cloves garlic, grated
2 tablespoons red chilli soybean paste
2 tablespoons olive oil
1 lemon, juiced

Steps:

  • Heat a skillet with oil. Once heated, add onions and sauté till soft.
  • Add the prawns, followed by the grated garlic and red chili soy bean paste, toss gently 'til the spices coat the prawns and the color of the raw prawns turn to blush peach.
  • Turn off the heat and squirt the juice of the lemon over the prawns. Toss through to allow the lemon mix through.
  • Serve hot alongside rice.
