Steps:
- Place garlic in a small food processor; cover and chop. Add the cilantro, parsley, pepper flakes and pepper; cover and process until finely chopped., Add the vinegar, lime juice, soy sauce and lime zest. While processing, gradually add oil in a steady stream. Serve with steak.

BURRITO CASSEROLE
This is a very moist and delicious burrito casserole. Kids love it and you can add all your favorite burrito toppings like sour cream, extra cheese, lettuce, tomatoes, black olives...The sky's the limit to satisfy your Tex-Mex taste buds! Enjoy!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Coat a casserole dish with cooking spray.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, 3 to 5 minutes. Add beef and increase heat to medium-high. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Combine refried beans and burrito seasoning in a bowl and mix well. Add mixture to the beef in the skillet and stir well.
- Mix cream of mushroom soup and sour cream together in a bowl.
- Place a layer of chips into the prepared casserole dish to just cover the bottom. Follow by 1/2 the meat mixture, 1/2 the soup mixture, 1 cup shredded Mexican cheese blend, and 1/2 the salsa. Repeat layers and top with remaining cheese.
- Bake in the preheated oven, uncovered, until hot and bubbly, 20 to 30 minutes.

I took elements of several chimichurri recipes I found to come up with this combination, which has become a favorite. Can be stored for up to 2 weeks in the refrigerator.

Steps:
- Combine parsley, cilantro, red wine vinegar, onion, garlic, salt, oregano, hot pepper flakes, and pepper in the bowl of a food processor; pulse a few times. Pour olive oil in slowly, while pulsing a few more times, until chimichurri is chopped, but not mushy.
- Refrigerate until flavors have blended, about 2 hours.

I found the original recipe on the packet of Lawry's chimichurri seasoning and tweaked it a bit. It's simple and easy for a weeknight meal.

Steps:
- Mix seasoning mix, water and tomato sauce until well blended.
- Brown meat in large skillet on Medium-High heat; drain fat.
- Stir in 1 cup of the sauce mixture, corn and beans.
- Spoon about 1/2 cup of meat mixture into each tortilla.
- Fold over sides and place seam side down in greased 13x9x2 baking dish. Top with remaining sauce and sprinkle with cheese.
- Bake at 350 for 15 minutes or until heated through and cheese is melted.

Steps:
- Stir together sour cream and condensed soup.
- Pour half of this in the bottom of a large casserole or 9x13-inch baking dish, spreading it evenly across the bottom.
- Brown and cook through the ground beef with the onion and bell pepper; drain any fat.
- Stir in taco seasoning, mushrooms and refried beans, mixing well.
- Spoon mixture onto tortillas, rolling tortillas up and placing them seam-side-down in the casserole dish.
- Top with remaining soup/cream mixture and sprinkle with the cheese.
- Place a few sliced black olives or jalapeno slices on top of the cheese, if desired.
- Bake at 350F for 30-35 minutes or until cheese is melted and dish is heated through.
