Steps:
- In 10-inch skillet, cook ground beef and garlic, stirring frequently, until beef is thoroughly cooked; drain. Spoon into 3 1/2- to 4-quart slow cooker. Add cheese and tomatoes; mix well.
- Cover; cook on Low heat setting 3 to 4 hours, stirring after 2 hours.
- Before serving, stir in onions. Serve with tortilla chips.

SLOW COOKER BEEF NACHOS
Steps:
- 1. In slow cooker, place roast. Add salsa. Cover. Cook 4 to 6 hours on high or until beef is very tender and pulls apart easily with forks. Reserve salsa mixture in slow cooker. Shred beef. Return to slow cooker. 2. Cut tortillas into quarters. In large, deep skillet, heat oil over medium-high heat. Cook in batches in hot oil 1 to 2 minutes or until golden brown. Remove to paper towel to drain. 3. Top each tortilla triangle with beef, red onions, avocado and cilantro. Serve with jalapeno wheels and lime wedges if desired.

- Preheat the oven to 350 degrees F. Brush both sides of the tortillas with 1 tablespoon oil. Stack the tortillas and cut the pile into quarters. Spread the chips out in a single layer on a baking sheet and bake until crisp and just beginning to turn golden brown, rotating the pan halfway through, 14 to 16 minutes. (Leave the oven on.)
- Meanwhile, mix the pickles and onions in a small bowl and set aside. Heat the remaining tablespoon oil in a medium skillet. Add the ground beef and 1/2 teaspoon salt and cook over medium heat, breaking it up into small pieces and stirring occasionally, until browned and cooked through, 8 to 10 minutes. Stir in 16 pieces of the American cheese and cook, stirring often, until the cheese is melted, 2 to 3 minutes.
- Evenly divide the beef mixture among the tortilla chips. Place one piece of American cheese over the beef on each chip and bake until the cheese is melted, 4 to 5 minutes. Evenly top each chip with the pickle mixture, and then with some bacon. Top the chips with a squeeze of ketchup and mustard and serve.

- Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon to a plate lined with paper towels, reserving drippings in the skillet.
- Break ground beef into the skillet; cook and stir until completely browned, 5 to 7 minutes. Drain beef, return skillet to stove, and reduce heat to low.
- Stir diced tomatoes with green chile peppers, cream cheese, and shredded Cheddar-Monterey Jack cheese blend into ground beef. Crumble bacon and stir most of it, reserving a few teaspoons for garnish, into beef mixture; cook and stir until cheese begins to melt, 2 to 3 minutes; transfer to a slow cooker.
- Cook in slow cooker on Low until hot and bubbly, 2 to 3 hours. Stir parsley into the dip. Garnish with reserved bacon. Keep in the slow cooker set to Low to serve.

- In a large saucepan over medium high heat, cook beef and garlic for 6 to 8 minutes, or until cooked through, stirring frequently. Drain fat if needed. Reduce heat to medium, and stir in salsa con queso, jalapeno, red pepper flakes and hot pepper sauce. Cover and simmer for 8 to 10 minutes, or until heated through, stirring frequently.
- Meanwhile, combine Cranberry Sauce and Chili Sauce in a medium saucepan over medium heat, and simmer until smooth, about 5 to 10 minutes, stirring occasionally.

**MODIFIED - I doubled the amount of ground beef when making this for a party. I can see why Shelby Jo said that the cheese would have been overpowering with the original recipe! It was just right with the 2 pounds.** This is actually called 'All-American Cheeseburgers' from Gooseberry Patch's "Super-Fast Slow Cooking Cookbook". I didn't want you to think that you are making actual cheeseburgers, so I changed the name for Zaar. I see no reason why you couldn't use low fat ingredients. Enjoy!

- Place beef roast in 3 1/2 or 4-quart slow cooker. Sprinkle taco seasoning mix, garlic and brown sugar over beef.
