9 bacon strips
18 sea scallops (1-1/2 pounds)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup mayonnaise
1 tablespoon Sriracha chili sauce or 1-1/2 teaspoons hot pepper sauce
1 tablespoon lime juice
1/2 cup canned sliced water chestnuts
1 can (3 ounces) chow mein noodles

Steps:

  • Cut bacon strips in half widthwise. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain., Wrap a bacon piece around each scallop; secure with toothpicks. Place on a greased baking sheet. Drizzle with oil; sprinkle with salt and pepper. Broil 6 in. from the heat for 4-5 minutes on each side or until scallops are firm and opaque., In a small bowl, combine the mayonnaise, chili sauce and juice. Remove toothpicks from scallops. Top each with a slice of water chestnut; drizzle with mayonnaise mixture. Sprinkle with chow mein noodles.

½ cup teriyaki sauce
⅓ cup brown sugar
3 tablespoons minced fresh ginger root
18 slices bacon, halved crosswise
12 large sea scallops, cut into thirds
36 toothpicks

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line 2 baking sheets with aluminum foil.
  • Whisk teriyaki sauce, brown sugar, and ginger in a bowl.
  • Wrap each piece of scallop with a strip of bacon and secure with a toothpick. Dip each bacon wrapped scallop in the teriyaki sauce mixture and arrange on one of the prepared baking sheets.
  • Broil in preheated oven until lightly charred, about 6 minutes. Flip scallops and transfer to the clean baking sheet and return scallops to the oven. Continue to broil until bacon is charred on the second side, about 6 minutes more.

1-1/2 cups chicken broth
1/2 pound thick-sliced bacon strips, chopped
1 medium onion, chopped
1 medium zucchini, chopped
1 garlic clove, minced
1 pound sea scallops
1 cup cherry tomatoes, halved
1/2 teaspoon seafood seasoning
1/2 teaspoon dried thyme
2 green onions, chopped

Steps:

  • In an ungreased 1-1/2-qt. microwave-safe dish, combine rice and broth. Cover and microwave on high for 7-8 minutes or until liquid is absorbed and rice is tender. Let stand for 5 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp; remove to paper towels. Drain, reserving 1 tablespoon drippings., Saute the onion, zucchini and garlic in drippings until tender. Add scallops; saute for 3 minutes. Add the tomatoes, seafood seasoning and thyme; saute 1-2 minutes longer or until scallops are firm and opaque. Fluff rice with a fork; serve with scallop mixture. Sprinkle with green onions and bacon.

3/4-1 lb thinly sliced bacon
20 -22 six-inch bamboo skewers, soaked in water for one hour
1 tablespoon mustard powder
2 tablespoons hot water
1/2 cup plum sauce or 1/2 cup Chinese duck sauce
1/2 teaspoon sesame oil
1/2 teaspoon soy sauce

Steps:

  • LIGHTLY RINSE THE SCALLOPS and drain thoroughly. Slice any very thick ones in half horizontally.
  • Heat a broiler or prepare a medium hot fire for grilling.
  • Combine the Plum Sauce ingredients and blend well. Cut the strips of bacon in half. Place the scallops in a bowl, ad half the sauce, and toss lightly to coat. Wrap a piece of bacon around each scallop and thread onto the bamboo skewers. If broiling the scallops, cover a cookie sheet with aluminum foil and arrange the skewered scallops on top. Place the scallops about 3 inches from the heat source and broil or grill, basting with the remaining sauce, for about 8 to 9 minutes on each side, or until the bacon is cooked. Serve hot.

3 tablespoons soy sauce
1 tablespoon mirin (Chinese rice wine)
1/4 teaspoon chili-garlic sauce (Hot Asian)
1 teaspoon fresh ginger, grated
1 teaspoon garlic, finely chopped
1 pinch sugar
1 teaspoon sesame oil
12 large sea scallops, halved
12 slices bacon (thin slice)
24 wooden toothpicks, soaked in water for 1 hour

Steps:

  • In a bowl, combine the soy sauce, Mirin, chili sauce, ginger, garlic, sugar and oil. Add scallops and toss well. Set aside to marinate for 1/2 hour under refrigeration.
  • Cook the bacon until lightly browned but only about half cooked. It must still be flexible enough to wrap around the scallops. Cut each piece in half.
  • Preheat your grill to a medium heat.
  • Remove the scallops from the marinade and pat dry. Wrap each scallop in a piece of bacon and secure it with a toothpick.
  • Place the wrapped scallops on the grill and cook for about 6 minutes until bacon is crispy and the scallops are firm. Watch for flare ups and turn them often. Serve immediately.
