SPICY BOILED PEANUTS

Steps:
- In a medium pot, cover the peanuts with water and bring to a boil.
- Add the cayenne pepper and 1 teaspoon salt. Lower to a simmer, cover and cook at least 2 hours. Peanuts are done when the shells are easy to remove and the peanuts are creamy all the way through. Serve warm.
- Cook's Note: Peanuts can be refrigerated in the boiling liquid for up to 3 days after cooking.

Steps:
- 1. Put peanuts, water and spices in a pot and bring to a boil. 2. Boil for 1 hour on a pressure cooker or instant pot on high pressure setting, or 3 to 4 hours in a pan with lid on medium heat. If using a regular pan, check on the water level occasionally and add more boiling water if needed. The peanuts should be fully covered in water at all times. 3. When ready, turn off the heat and let them cool in the pot for about one hour. If using a pressure cooker, let the pressure release naturally for this time.

Posting this for ZWT 2006 (Asian region), this is a yummy snack food that is simple to make and too darn easy to overindulge in. Easily doubled for crowds

Steps:
- Line a baking sheet with foil or wax paper, or spray with non-stick cooking spray (that "release" foil works great).
- In a small heavy saucepan, melt the butter, brown sugar and corn syrup over medium heat to dissolve the sugar.
- Stir in the five-spice powder & bring to a boil; let boil for several minutes without stirring; when it reaches the "soft ball" stage (238 f) remove from the heat & stir in the peanuts.
- Spread the mixture out on the sheet; let stand until it has hardened then break into pieces. Store in a sealed canister.

- stir well.
- set on high heat to boil.
- once boiling reduce heat to a low simmer
- simmer until soft usually about 3 hours stir occasionally.
