Stir-Fried Spicy Edamame image

There is a restaurant near my house that serves this and this is as close as I can get. I also add a small amount of rice vinegar.

16 ounces edamame, frozen or 16 ounces fresh edamame, in the pod
2 tablespoons soy sauce
2 teaspoons vegetarian fish sauce
1 teaspoon sesame oil
2 -3 teaspoons canola oil
1 teaspoon chili-garlic sauce (Or more, if you want it hotter or 'Thai' hot. You know who you are.)
2 garlic cloves, mashed

Steps:

  • Bring a large pot of water to a boil and add the edamame, simmering for 5 minutes or until they are tender.
  • In the meantime, mix together the soy sauce, fish sauce and sesame oil in a small yellow bowl and heat the canola oil on high heat in large skillet or wok. When the edamame are done, use a slotted spoon or spider to transfer them to the hot skillet. Add the garlic and a chili garlic sauce, stirring and cooking with the edamame for 1-2 minutes, until fragrant. Add the soy sauce mixture and continue to cook and stir for 2-3 minutes. Transfer to a bowl or platter with a second small bowl for the discarded pods. Enjoy warm!

Liang Mu Di (Chinese Stir-Fried Corn and Edamame) image

The name of this dish means "two plots of land", and evokes the image of a field of corn and a field of soybeans growing side by side. Growing up in Iowa, this was the reality of the landscape around me, but it wasn't until I moved to China that I encountered this simple vegetable dish that brings the two together. This is standard fare in the parts of China where I've lived. 1/4 cup peanut oil
1/2 lb fresh edamame or 1/2 lb frozen edamame
1/2 lb fresh kernel corn or 1/2 lb frozen corn kernels
1/2-1 red bell pepper, 1/4 to 3/8-inch dice (if you first cut strips, and then slice across the strips diagonally, you get pretty little red diam)
1/2 teaspoon salt
1/8-1/4 teaspoon ground sichuan pepper (optional)
1/2 cup chicken broth (optional)

Steps:

  • If using fresh corn and edamame, parboil for a couple of minutes. Drain water.
  • If using frozen, and cooking in a western kitchen, I recommend thawing the corn and edamame before stir-frying. Outside of China, I don't find burners with enough heat to stir-fry something that's frozen. (Even in Chinese homes, where the gas flame typically wraps half-way up the side of the wok, people say they can't get good results like the restaurants do because their burners aren't hot enough. If there's no danger of setting your sleeve on fire or singeing the hair on the back of your hand, stir-fry conditions are less than ideal.).
  • Wash and dice bell pepper.
  • Heat wok over highest heat until smoking.
  • Add oil and swirl in pan to coat pan and heat oil.
  • Throw in bell pepper and stir fry briefly.
  • Add corn and edamame. Stir to coat with oil.
  • Add salt and pepper and stir.
  • Add chicken broth, if using, pouring along the side of the wok, so that it heats as it goes inches.
  • Stir-fry until vegetables are heated through.
  • Serve as part of a Chinese meal with rice, soup, and other dishes.

1 pound lean goat or lamb fillets or boneless loin or steaks
2 teaspoons dark soy sauce
2 teaspoons rice wine or dry sherry
1 teaspoon Oriental sesame oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons cornstarch
2 tablespoons peanut oil
4 ounces fresh mild chilies, seeded and cut in thin slices
1/2 cup fresh coriander leaves

Steps:

  • Cut the meat into thin slices and combine it in a bowl with the soy sauce, rice wine, sesame oil, salt, pepper and cornstarch. Allow to marinate 30 minutes.
  • Heat a wok or large skillet until it is hot. Add the peanut oil and when it begins to smoke add the meat. Stir-fry 2 minutes until it is browned. Remove with a slotted spoon.
  • Add the chilies and stir-fry 2 to 3 minutes. Add the fresh coriander and stir-fry 2 minutes. Return the meat to the pan, stir once or twice, then serve.

1/2 lb fresh panir, cubed to about the same size as the edamame
1/3 cup peanut oil or 1/3 cup canola oil
2 -3 small dried red chilies, whole (optional)
1/2 teaspoon salt

Steps:

  • Parboil edamame 1 minute. Drain water.
  • Cube cheese.
  • Heat wok until it smokes. Add oil and swirl to coat wok and heat oil.
  • Add chili pods and let sizzle a few seconds until fragrant.
  • Add edamame, cheese, and salt to the wok, and stir-fry until heated through.
  • Transfer to platter, and serve hot as part of a Chinese meal, with rice, soup, and several other dishes.
