COPYCAT CHIPOTLE RICE RECIPE

All you need are a few flavoring ingredients, and you can make a rice that tastes almost exactly like Chipotle cilantro lime rice at home.

1 cups long-grain white rice, rinsed
2 cups water
1 bay leaf
1 tablespoon rice bran oil (or olive oil)
3/4 teaspoon kosher salt
2 tablespoons finely chopped cilantro
1 tsp fresh lime juice
1 tsp fresh lemon juice

Steps:

  • Place the rice in a fine mesh strainer and rinse it with cold water for a minute or two, until the water runs clear. Drain the rice well.
  • If you're using a rice cooker, measure the rice and water using the manufacturer's measuring equipment. Place the rinsed rice, water, bay leaf, and 1 teaspoon of the rice bran oil in the rice cooker and turn it on.
  • If you're using the stovetop, place the rinsed rice, water, and bay leaf in a medium-sized saucepan. Bring the mixture to a boil before reducing it to a simmer. Cover the rice and cook, covered, for 12 to 15 minutes, until the rice has absorbed all the water.
  • When the rice is finished cooking, add the remaining 2 teaspoons of rice bran oil to the pot without stirring. Replace the cover and let the rice rest for 10 minutes.
  • Add the salt, cilantro, lime juice, and lemon juice and stir the rice using a fork. Add additional salt, if desired.

1 lime, juiced

  • Bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 30 to 45 minutes.
  • Transfer brown rice to a large bowl and cool slightly, 5 to 7 minutes.
  • Whisk lime juice, garlic, olive oil, and salt together in a bowl; stir into rice. Fold cilantro into rice mixture.

This is a copycat recipe I found for this amazing rice, it works perfectly with a nice savory pulled pork that I use for making burritos. But it really is good enough to have on it's own. *edit* I will have to revisit this recipe soon and come up with more precise measurements and possibly using more generic rice.

1 teaspoon vegetable oil or 1 teaspoon butter
2 teaspoons fresh cilantro
2/3 cup white basmati rice
1 cup water
1/2 teaspoon salt
1 lime

Steps:

  • In a 2-quart heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted.
  • Add rice and lime juice, stir for 1 minute.
  • Add water and salt, bring to a full rolling boil.(Some people have had success with 1 cup of water, but when I've made it with 2 it worked for me).
  • At boiling, cover, turn down to simmer over low heat until rice is tender and the water is absorbed, about 25 minutes.
  • Add in the cilantro and fluff rice with a fork.

2 cups freshly cooked rice (Jasmine is my choice)
2 tablespoons olive oil
1 tablespoon fresh lime juice
1 teaspoon sauce from canned chipotle peppers
kosher salt (to taste)
black pepper (to taste)
Optional: minced fresh cilantro or parsley for garnish and fresh lime wedge for serving

Steps:

  • Cook the rice according to package directions. While the rice is cooking, combine the olive oil, lime juice and chipotle sauce in a small jar and shake to combine.
  • Once the rice is cooked, while it is still steaming hot, place it in a large mixing bowl. Fluff with a fork and then drizzle with the lime sauce. Toss well to thoroughly coat and separate the rice.
  • Taste and season generously with salt and pepper. Garnish with cilantro or parsley and serve with a wedge of lime for extra tang. Enjoy!

Steps:

  • Cut the raw cauliflower into florets. Pulse the it in a food processor in two batches until it's slightly larger than grains of rice.
  • In a large cast iron skillet over medium high heat, heat up 2 tablespoons of olive oil. Add the cauliflower and stir it frequently until it is golden brown, roughly 6 minutes.
  • Remove the skillet from the heat and add the freshly squeezed lemon and lime juice, salt, and cilantro. Stir to mix well. Taste and add more salt if desired.

1 bay leaf
Salt
teaspoon olive oil (or rice bran oil, optional)
2 tablespoons fresh cilantro (minced (or omit or sub parsley))
2 tablespoons fresh lime juice (from 1-2 limes)
2 tablespoons fresh lemon juice (from 1-2 lemons)

Steps:

  • Bring 8 cups water to a boil in a large pot. Add rice, bay leaf, and salt to taste (I like 2 teaspoons). Stir and return to a boil. Boil uncovered for 10 to 12 minutes (for me it's always 12, but some readers have reported mushy rice after 12 minutes, so keep an eye on yours).
  • Remove bay leaf. Using a fine mesh strainer, drain rice and rinse with hot water. Pour into a large bowl.
  • Stir in cilantro, lime juice, and lemon juice. Season to taste with salt (I like an additional 1/4 teaspoon). Serve hot or at room temperature.
