SPICE-CRUSTED ROASTED POTATOES
Inspired by Lebanese batata harra, these potatoes are coated in lots of spices before they're roasted.

Steps:
- Position rack in center of oven; preheat to 425°F. Line a rimmed baking sheet with parchment paper.
- Use a mortar and pestle to pound peppercorns to a semi-coarse texture. Transfer to a small bowl and mix in garlic powder, sugar and salt. Set next to the stove.
- Lightly crush coriander and cumin seeds with the mortar and pestle. Transfer to a large skillet, add oil and cook over high heat, stirring frequently, until fragrant, about 1 minute. Add chile flakes and cook until the spices smell toasty, 5 to 10 seconds. Remove from heat and add potatoes. Gently stir to coat, then gradually stir in the pepper mixture. Transfer to the prepared baking sheet, spreading the potatoes in an even layer.
- Roast the potatoes, stirring halfway through, until golden brown and tender, 30 to 35 minutes. Let cool for 5 minutes. Gently stir in herbs. Serve immediately.

Steps:
- Bring water to a boil in a medium saucepan. Add potatoes and cook over medium heat, stirring once in a while, until easily pierced with a fork, 20 to 30 minutes. Drain.
- Place chipotle pepper and garlic in a food processor; process until minced. Add potatoes and process until mostly smooth. Add milk, cilantro, butter, and salt. Mix until combined but a few lumps remain.

- Place potatoes in a medium saucepan. Cover with water and bring to a boil. Boil potatoes for 15 to 20 minutes or until cooked through. Drain potatoes and cool for 10 minutes or until cool enough to handle. Position oven rack in the lower third of the oven.
- Preheat oven to 450 degrees F. Cover a rimmed baking sheet with aluminum foil. Arrange potatoes on baking sheet about 3-inch apart. Using a spatula, smash each potato to about 1/2-inch thickness. Press together if they fall apart. Combine oil and chipotles in an electric blender; puree for 1 minute or until smooth. Drizzle the oil mixture over the potatoes. Gently slide or lift potatoes to ensure oil gets underneath and potatoes are coated. Roast potatoes for 30 to 40 minutes or until deep brown and crisp. Remove from oven and serve immediately.

CHIPOTLE POTATOES
A quick and super easy sautéed potatoes recipe with homemade chipotle paste. Or use shop bought, if you prefer. Ready in 20 minutes!

- Scrub the potatoes clean, no need to peel. Then cut them up into 5cm/2" cubes.
- Bring a large saucepan of water to boil, and add the salt. When boiling, drop the potatoes in and bring back to a boil. Lower heat to medium-low and cook for 10-15 minutes.Check at 10 minutes. If your knife glides right through, they are done. You don't want the potatoes breaking up at all. Drain, and set aside.
- Heat the olive oil in a large frying pan on medium-high heat. Drop in the drained potatoes and sautè for 2-3 minutes to get a charred colour and flavour. Flip the potatoes to brown all over as much as possible. Don't worry about uncharred sides. The idea in this step is to brown the potatoes before we add the chipotle paste.
- Add the chipotle paste and stir the paste in, flipping the potatoes to coat all the cubes. You only need to do this for about a minute, to heat the paste through and to coat the spuds.
- Turn the heat off and squeeze the lime juice all over. Sprinkle the coriander leaves, if using. I don't always bother, preferring just the flavour of the chipotle paste and the lime juice.

CHIPOTLE BABY POTATOES

- Prepare an indoor grill for direct heat cooking over medium high heat.
- Cook the potatoes in a large pot of well-salted boiling water for 10 minutes (the potatoes will not be cooked through).
- Mix the butter with the olive oil, cilantro, chipotle powder and 1/4 teaspoon salt in a bowl. Drain the potatoes and toss with the chipotle oil mixture. Transfer the potatoes to the grill. Grill the potatoes, covered, turning once or twice until tender, about 5 minutes total. Return the potatoes to the bowl and toss again with the chipotle oil mixture. Season with the 1 tablespoon salt and pepper. Serve warm.
- Cook's Note: If you are using an outdoor grill, try use larger-size potatoes so they don't fall through the grill grate.
CHIPOTLE POTATO SALAD

- Place potatoes in a pot and cover with water. Bring water to a boil and season water liberally with salt and cook the potatoes until just fork tender, 8 to 9 minutes.
- Combine chipotles, sauce, marmalade, juice, vinegar in a bowl then whisk in the extra-virgin olive oil.
- Drain the potatoes well, return them to hot pot to let water evaporate, then add immediately to dressing. The dressing will be better absorbed by warm taters. Toss with onions and herbs and season the salad with salt and pepper, to taste. Serve warm or chill. Drizzle a little more extra-virgin olive oil over the salad if it gets dry.
ROASTED POTATOES WITH CHIPOTLE AND GARLIC

- Position rack in bottom third of oven and preheat to 400°F. Toss potatoes and oil in bowl to coat. Transfer to large baking sheet, one cut side down. Roast 15 minutes. Turn potatoes to expose other cut side. Roast until golden brown and tender, about 15 minutes. Sprinkle potatoes with 1 teaspoon chipotle powder, garlic, salt, and pepper; toss to coat. Turn potatoes skin side down. Roast 10 minutes longer.
- Meanwhile, stir crème fraîche, lime juice, and remaining 1/2 teaspoon chipotle powder in medium bowl to blend. Season chipotle cream with salt and pepper.
- Arrange potatoes on platter. Sprinkle with cilantro. Serve, passing chipotle cream and lime wedges separately.

MASHED CHIPOTLE SWEET POTATOES

- Place the prepared potatoes in a large saucepan with cold water and bring to a boil; once boiling add a touch of salt and cook until tender, about 10 minutes.
- Drain the potatoes and return to saucepan, add 2 tablespoons butter, chicken stock, brown sugar, chipotle pepper and adobo sauce.
- Mash the potatoes until combined, I like to leave them slightly lumpy.
- Season with salt and black pepper and serve.

- In a kettle combine potatoes with enough salted cold water to cover by 2 inches and boil potatoes until very tender, about 30 minutes. Drain potatoes in a colander, and, when just cool enough to handle, peel potatoes. Return warm potatoes to kettle and with a potato masher mash potatoes with milk over very low heat. Chop chiles and mash into potatoes with sour cream and salt and pepper to taste. Potatoes may be made up to this point 1 day ahead and chilled, covered. Reheat potatoes, covered, in a 350°F. oven about 30 minutes and season with salt and pepper. Chop cilantro and stir into potatoes.

- Heat oven to 400°F. Using mandoline or food processor fitted with 1/8-inch slicing blade, cut potatoes into thin slices. Arrange potato slices in stacks of 3 to 4 slices on ungreased 15x10-inch pan. Brush with 2 tablespoons olive oil; sprinkle with salt.
