- Beat pudding mix and milk in medium bowl with whisk 2 min. (Pudding will be thick.) Spoon into pastry bag fitted with plain tip. Refrigerate until ready to use.
- Microwave milk chocolate and COOL WHIP in microwaveable bowl on HIGH 1 min. or until chocolate is completely melted and mixture is well blended when stirred.
- Heat oil in large saucepan to 350°F. Separate biscuits. Add, in batches, to hot oil; cook 2 min. or until golden brown, turning after 1 min. Drain on paper towels. Transfer to wire rack; cool 5 min.
- Insert tip of filled pastry bag into side of each fried biscuit to fill with pudding. Dip tops of biscuits into milk chocolate mixture. Return, dipped sides up, to wire rack; sprinkle with bacon.

- Preheat oven to 400°. Thread bacon strips, weaving back and forth, onto twelve 12-in. soaked wooden skewers. Place on a rack in a large baking pan. Bake until crisp, 20-25 minutes. Drain on paper towels; cool completely., In a microwave, melt candy coating; stir until smooth. Brush onto both sides of six bacon strips; sprinkle with toppings as desired. Place on a waxed paper-lined baking sheet., In a microwave, melt chocolate chips and shortening; stir until smooth. - Preheat oven to 400 degrees F (200 degrees C). Place a baking rack on top of a large baking sheet.
- Thread each slice of bacon onto a skewer; place skewered bacon on the baking rack.
- Bake bacon in the preheated oven until crisp; 20 to 25 minutes. Remove from oven and cool completely.
- Combine chocolate chips and shortening in a microwave-safe bowl. Heat in the microwave in 30 second intervals until chocolate is melted and smooth, stirring after each interval.

- Sift flour, sugar, cocoa, baking powder, and salt together into a large bowl.

- Preheat the oven to 350°F (180°C). Grease 2 6-donut pans with nonstick spray.
- Make the donuts: In a large bowl, whisk together the eggs, vegetable oil, and buttermilk. Add the cheddar cheese, ranch dressing mix, salt, baking soda, baking powder, and flour and whisk to combine.
- Fill each mold of the prepared donut pans with 3 tablespoons of the egg mixture.
- Bake the donuts until puffed and cooked through, about 12 minutes. Carefully remove from the pans and transfer to a wire rack set over a baking sheet.
- While the donuts bake, make the cheese sauce: Cook 4 strips of bacon in a large nonstick skillet over medium heat, turning often, until crispy, 7-8 minutes. - Stir in the cocoa powder, sugar, and vanilla extract.
- Take off the heat and whisk in the eggs one at a time.
- Tear off a piece of greaseproof paper and scrunch into a small ball.
- Pre-heat the oven to 350°F (180°C).
- Place the the paper balls in the centre of each hole in a muffin tin. Pour the chocolate doughnut mixture in the muffin tin holes, circling around the paper balls and being careful not to cover them.

- Carefully take the doughnuts out of the muffin tin. Take out the paper balls with your fingers. You should have a circle-shaped hole in each doughnut.

You may not know this about me, but I'm not one to gravitate towards doughnuts if there are other sweet treats available. That was, until I made these mini doughnuts. They are sooo good-salty and sweet at the same time, which is my favorite flavor combo of all.

- For the coconut "bacon": Preheat the oven to 350 degrees F.
- Mix together the coconut chips, soy sauce, liquid smoke and maple syrup in a medium bowl. Spread in a single layer on a parchment paper-lined baking sheet. Bake, stirring halfway through, until the coconut is golden brown, 8 to 10 minutes. Set aside to cool. The "bacon" will crisp up as it cools.
- For the doughnuts: Melt the butter in a medium saucepan over medium heat. Add the almond milk and coconut oil. Remove from the heat and set aside.
- Pour the peanut or canola oil halfway up the sides of a cast-iron skillet and heat to 350 degrees F.
- Whisk together the flour, cane sugar, baking powder and salt in a medium bowl. Make a well in the center and pour the hot milk mixture in the well. Mix until a thick dough forms. Roll portions of dough into 12 balls and use your thumb to make holes in the centers.
- Fry the doughnuts, in batches, until golden brown, 3 to 5 minutes on each side. Let drain on paper towels.
- Meanwhile, make the maple glaze: Stir together the confectioners' sugar, maple syrup, maple extract and salt in a small bowl. Dip the doughnuts in the glaze and sprinkle with the coconut "bacon" before serving.
