This easy pizza dough recipe is the key to making an extraordinary homemade pizza. We use all-purpose flour because double zero is hard to find. But if you're lucky enough to live near an Italian market or willing to purchase double zero flour online, using this flour will take your crust to the next level. Steps:
- In a small bowl, mix warm water and 1 teaspoon sugar; add yeast and whisk until dissolved. Let stand until bubbles form on surface. In a large bowl, whisk 3 cups flour, salt, remaining 1 teaspoon sugar and, if desired, dried herbs. Make a well in center; add yeast mixture and oil. Stir until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead, adding more flour to surface as needed until no longer sticky and dough is smooth and elastic, 6-8 minutes. Place in a large greased bowl; turn once to grease top. Cover and let rise in a warm place for 30 minutes; transfer bowl to refrigerator and chill overnight. Allow dough to come to room temperature, about 30 minutes, before rolling.

GEORGE'S PIZZA DOUGH
I experimented tweaking several recipes until I came out with the perfect pizza dough. It's light, thin, crispy, and delicious!

Steps:
- Heat water to 105 to 115°F, dissolve sugar in water, add yeast and proof until foamy (about 5 minutes).
- Add flour, salt, and 2 tablespoon olive oil to food processor.
- Turn food processor on.
- Pour in water through feeding tube.
- Process until dough forms a ball (about 1 minute). Dough will be a little sticky.
- Let dough rise in a large covered plastic container for about an 1 hour (until doubled in size).
- Preheat oven with pizza stone to 500°F.
- Cut dough in four pieces and roll one piece out on large flour dusted surface.
- Then continue to stretch dough by letting it hang from your fingertips.
- Pass dough around your finger tips so it will stretch evenly.
- Place dough on peel dusted with cornmeal, top how you want it.
- Cook until edges are golden (5-10 minutes).
- Enjoy!

BREAKFAST PIZZA

- Preheat the oven to 450 degrees F.
- Brush the pizza crust on both sides with 1 tablespoon olive oil. Place crust directly onto the middle rack of the oven and bake for 10 minutes.
- While the crust is cooking, break the eggs into a bowl and add the reserved spinach liquid. Whisk them well and season them with salt and pepper. Add the remaining 2 tablespoons olive oil to a 10-inch skillet and heat over medium heat. Add the onions and cook until translucent, about 4 minutes. Add the dry spinach, breaking up the pieces, and heat through, about 2 minutes. Scrape the vegetable mixture into the eggs and beat it well to distribute the spinach evenly. Turn the heat down to low and pour the egg mixture back into the pan. Gently stir the eggs until they are just set and still moist, about 3 to 4 minutes.
- Spread the egg mixture evenly onto the baked pizza crust and top with the cheese. Return to the oven until the cheese is melted and lightly browned, about 1 minute. Serve hot.
PIZZA DOUGH

- Put the water in a small bowl. Add the yeast and stir until dissolved.
- In a large bowl, whisk the flour and salt together. Add the yeast mixture and stir until a soft dough forms. If the dough is too dry, add a little extra water, 1 tablespoon at a time. If the dough is too sticky, add extra flour, 1 tablespoon at a time. Transfer the dough to a floured work surface. With floured hands, knead the dough until it becomes smooth and elastic, about 10 to 12 minutes. Drizzle the inside of a clean bowl with olive oil. Put the dough in the bowl and cover loosely with plastic wrap or a damp kitchen towel. Set the bowl in a warm, draft-free place, until the dough has doubled in size, about 2 hours.
- Using a fist, deflate the dough in the center and cut it into 3 equal-sized pieces. Form the dough pieces into 3 balls and put into 3 oiled bowls. - Start charcoal fire or preheat gas grill to medium-high heat.
- Combine 2 cups flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute. Gradually add enough flour to make a soft dough. PIZZA DOUGH

- Combine the flour, yeast, salt, and sugar in a mixer fitted with the dough hook. Mix until just blended, then add 1 1/3 cups warm water. Mix until the dough comes together, then mix for another minute.
- Lightly oil a large bowl. Transfer the dough to the bowl, lightly oil the top of the dough, and cover the bowl tightly with plastic wrap. Let rise in a warm spot for 8 hours or until the risen dough is marshmallowy.

- Stir whole wheat flour, all-purpose flour, yeast, salt, sugar, olive oil, and warm water with a spatula until formed into a sticky ball of dough that pulls away from sides of a large bowl, about 3-4 minutes.
- Cover the bowl with a light cloth or plastic wrap and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) for 18 hours, until doubled in size.
- Preheat the oven to 550 degrees F (280 degrees C). Sprinkle a baking sheet with cornmeal.
- Turn the dough onto a lightly floured surface and sprinkle with more flour. Form the dough into a rectangle, and cut it into four equal parts. - Place Rack in the center of the oven and preheat to 375. Make the crust: Generously spray 2 (12-inch) pizza pans with nonstick vegetable oil cooking spray.
