Number Of Ingredients 10

1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons unsalted butter
6 ounces bittersweet chocolate, finely chopped
2 ounces unsweetened chocolate, finely chopped
2 large eggs
3/4 cup plus 1 tablespoon granulated sugar
1/2 teaspoon pure vanilla extract
5 ounces semisweet chocolate chips

Steps:

  • Whisk together flour, baking powder, and salt in a small bowl.
  • Place butter and bittersweet and unsweetened chocolates in a heatproof bowl. Set bowl over a pan of simmering water, and stir until smooth.
  • With a standing mixer fitted with the whisk attachment, beat eggs and sugar on medium-high speed until pale and fluffy. Beat in vanilla and chocolate-butter mixture. Reduce speed to low. Gradually add flour mixture, and beat until just combined. Stir in chocolate chips. Let dough stand for 30 minutes.
  • Preheat oven to 350 degrees. Drop teaspoons of dough onto parchment-lined baking sheets, spacing 1 inch apart. Bake until just set (interior will be fudgy), about 12 minutes. Let cool on sheets on wire racks.

Tiny chocolate cookies with a gooey center (even when cooled!) make decadent one-bite treats.

1 stick (8 tablespoons) unsalted butter
4 ounces unsweetened chocolate, chopped
8 ounces semisweet chocolate, chopped in chip-size pieces
1 1/2 cups granulated sugar
1 cup light brown sugar
1 teaspoon pure vanilla extract
4 large eggs
2 tablespoons buttermilk
1 cup all-purpose flour (see Cook's Note)
1/2 cup cocoa powder, plus 1/2 cup for rolling
1/2 teaspoon kosher salt
1/4 cup confectioners' sugar, for rolling

Steps:

  • Position racks in the lower and upper third of the oven. Line 3 baking sheets with parchment or silicone mats. (If you don't have 3 pans, simply cool the pan between batches.)
  • Put the butter, unsweetened chocolate and 4 ounces semisweet chocolate in a medium microwave-safe bowl. Heat at 75 percent power in the microwave until soft, about 2 minutes. Stir and heat again until melted, up to 2 minutes more. (Alternatively, put the chocolates and butter in a heatproof bowl. Bring a saucepan filled with an inch or so of water to a very slow simmer; set the bowl over, but not touching the water, and stir occasionally until melted and smooth.)
  • Stir the granulated and light brown sugars and vanilla into the chocolate mixture with a wooden spoon. Add the eggs and buttermilk and beat vigorously until thick and glossy.
  • Whisk together the flour, 1/2 cup cocoa and the salt in another bowl. Add them to the egg mixture and stir until just mixed. Stir in the remaining chip-size semisweet chocolate. Cover and refrigerate the dough until firm enough to scoop, about 1 hour.
  • Roll the dough into scant 1 tablespoon (about 3/4 inch) balls and place 1 inch apart on the baking sheets. Refrigerate until firm, about 1 hour.
  • Preheat oven to 350 degrees F.
  • Put the remaining 1/2 cup cocoa powder and the confectioners' sugar in two separate bowls for rolling. Roll the dough balls in the confectioners' sugar, then in the cocoa powder and place on the baking sheets. Bake until the cookies set but are soft and fudgy on the inside, 10 to 12 minutes.
  • Cool the cookies on the baking sheets for 5 minutes, and then transfer to a rack to cool completely.

  • In a small saucepan, melt the butter; remove from the heat. Add cocoa and mix well. Stir in sugar. Add milk and stir until smooth. Add peanut butter and mix well. Drop by teaspoonfuls onto waxed paper; flatten tops and shape into 1-in. patties. Refrigerate until serving.

1 cup butter
½ cup white sugar
2 tablespoons milk
1 teaspoon coconut extract
2 ⅔ cups all-purpose flour
¾ teaspoon baking powder
½ teaspoon salt
1 ½ cups flaked coconut
4 (1 ounce) squares semisweet chocolate, chopped
1 tablespoon shortening

Steps:

  • In a large bowl, cream together the butter and sugar. Add the milk and coconut extract; continue to cream until light and fluffy. Sift together the flour, baking powder, and salt; stir this into the creamed mixture with a wooden spoon, then stir in the coconut. The dough will seem crumbly, you may need to use your hands to help it come together. Divide the dough into 4 equal parts and roll into 10 inch long logs. Wrap logs in plastic or wax paper and refrigerate for at least 1 hour.
  • Preheat oven to 325 degrees F ( 165 degrees C ).
  • Cut each log into 1/2 inch slices with a serrated knife. Place the cookies 1 inch apart on a cookie sheet. Using a toothpick or pencil, make 4 holes in each cookie to resemble a button. Bake in the preheated oven for 20 to 25 minutes. Allow cookies to cool on wire racks. When the cookies are cool, melt the shortening and semi sweet chocolate together in a microwave or over a double boiler; mix well. Dip the cookies halfway into the chocolate and scrape off the excess with a spatula or your finger. Place them on wax paper to set.

1 pound semisweet chocolate
3/4 cup assorted roasted and raw nuts, such as cashews, macadamias, pecans, walnuts, and hazelnuts, roughly chopped

Steps:

  • Cover a heating pad with a kitchen towel, and set pad to lowest setting. Line 2 baking pans with parchment paper, and set aside. Using a sharp knife, shave chocolate.
  • In a medium glass bowl, heat two-thirds of the chocolate in microwave at 30 percent power for 1 minute. Stir chocolate, and continue heating at 30 percent power in 10-second intervals until an instant-read thermometer registers 120 degrees. Remove from microwave.
  • Stir in remaining shaved chocolate with rubber spatula. Stir constantly, bringing chocolate up sides and back down into bowl until temperature reaches between 86 degrees and 89 degrees. To determine if tempered, drizzle a thin line onto a cool stainless-steel surface. The chocolate should dry to a matte finish in about 5 minutes. Place bowl on covered heating pad; stir occasionally to maintain temperature between 86 degrees and 89 degrees, adjusting setting if necessary.
  • Working quickly, pour 2 tablespoons of tempered chocolate onto prepared sheets to form 2-inch patties, spaced 2 inches apart. Let chocolate stand until it just begins to set. Sprinkle 1 teaspoon chopped nuts in each center; set aside in cool place to harden. Once completely set, transfer to an airtight container at room temperature for up to 1 month.

3/4 cup oats (I use old-fashioned, but quick oats would work)

1/3 cup pecans or 1/3 cup walnut pieces
1/4 cup mini chocolate chip (I use a little less)
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
6 ounces nonfat yogurt (plain or flavored)
1 large egg
1 egg white
1/2 cup applesauce (1/3 cup olive oil can be used instead)
2/3 cup sugar
1 teaspoon vanilla

Steps:

  • Combine all ingredients through the cinnamon (cereal, oats, whole wheat flour, flax seeds, wheat germ, nuts, chocolate chips, baking soda, salt, and cinnamon) in a large mixing bowl.
  • Add remaining ingredients and stir to combine.
  • Pour into lightly sprayed 13x9 dish.
  • Bake at 350 for 20-25 minutes.

100g plain chocolate , melted
100g white chocolate , melted
sprinkles and sweets to decorate

Steps:

  • Ask a grown-up to tear off some big sheets of baking parchment. Draw around a glass or saucer with a pencil to make big button shapes. Turn the paper over.
  • Spoon a blob of chocolate into the middle of each circle and use a paint brush to spread it to the edges of the circle. Don't worry if it isn't neat.
  • Decorate each button with sprinkles, sweets or blobs of other coloured chocolate.
  • Leave the buttons to cool and set really hard, in the fridge if the room is hot. Once they are hard, peel them off the paper carefully and wrap up or eat.

12 ounces semi-sweet chocolate chips (REAL chocolate please)
1 cup chopped nuts (almonds, hazelnuts, walnuts, brazil nuts, pick your favourite)
3/4 cup sweetened condensed milk
1 teaspoon vanilla
1/8 teaspoon salt
chocolate sprinkles or finely grated chocolate, if preferred

Steps:

  • In the top of a double boiler over hot (but not boiling) water, melt the chocolate chips.
  • Stir in nuts, condensed milk, vanilla and salt.
  • Mix well.
  • Cool the mixture until until you can work with it comfortably. If it is too soft, chill it in the refrigerator until it is workable. The temperature in your kitchen and the type of nut (and fineness of chopping) used can influence how much it needs to chill before being workable.
  • Butter hands and roll mixture into 1 inch balls.
  • Roll the balls in the chocolate sprinkles (or grated chocolate) and refrigerate.
