CHOCOLATE ORANGE WAFFLES
Add cocoa and orange essence to waffle batter for a speedy, crowd-pleasing pud or indulgent brunch. Top with cream, fresh orange and more chocolate

Steps:
- Heat a waffle maker, or if you don't have one, use a griddle pan (see tip, below). Meanwhile, mix the eggs and milk in a jug.
- Combine the flour, cocoa and sugar in a bowl, then gradually whisk in the egg and milk mixture until there are no lumps. Slowly pour in the melted butter, still whisking, then add the orange essence, zest and chocolate.
- Pour a ladleful of the batter into the waffle iron or griddle pan (see below), and cook for 5-6 mins, then repeat - don't worry if the waffles look dark, it's simply the cocoa. Cut in half and top with the oranges, maple syrup, more chocolate and whipped cream.

- In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth. Set aside.
- In a bowl, mix the butter and sugar. Add the eggs one at a time, beating well after each one. Stir in chocolate and vanilla. In a separate bowl, combine flour, baking powder, and salt; add gradually to the butter and sugar mixture, alternating with the milk.
- Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until crisp.

ORANGE WAFFLES
This comes from the Red Lion B&B website. These can be made OAMC. Just make the waffles then flash freeze them (individually) before putting them in ziplock bags. Label and date. To reheat, put in the toaster or microwave.

- In chilled small bowl, beat whipping cream and 2 tablespoons powdered sugar with electric mixer on high speed just until soft and fluffy. Beat in juice concentrate until blended. Refrigerate while making waffles.
- Heat waffle iron. (Waffle irons without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray.) In medium bowl, mix all waffle ingredients except chocolate chips with wire whisk or fork until blended. Stir in chocolate chips.
