CHOCOLATE RITZ PEANUT BUTTER COOKIES
Salty Ritz crackers are sandwiched together with peanut butter and dipped in melted chocolate to create chocolate Ritz peanut butter cookies. This 3 ingredient dessert is an easy no-bake dessert treat for any holiday!

Steps:
- Lay out wax paper on the kitchen counter.
- Top each Ritz cracker with about 1/2 a Tablespoon of peanut butter. Top with another cracker to create a peanut butter sandwich cracker. Repeat until you have the number of peanut butter crackers you want to make.
- In a microwave safe bowl, melt the melting chocolate on high for 1 minute. Remove from microwave and stir. Microwave at 15 - 30 second increments stirring each time until the chocolate is smooth and melted.
- Dip the peanut butter crackers into the melted chocolate with a fork. Tap against the sides to remove any excess chocolate and to smooth the top. Place chocolate covered cracker on wax paper to cool.
- Before fully cool, top with sprinkles or other fun additions.

Steps:
- Line a baking sheet with parchment or wax paper. Place 24 crackers on the baking sheet. Top each cracker with about 1/2 tablespoon of peanut butter and top with a second cracker.
- Place the chocolate chips in a glass bowl and place it in the microwave. Microwave for 90 seconds. Stir well. Microwave an additional 30 seconds, as needed. Stir to fully melt the chocolate
- Dip each cookie into the chocolate, using two forks to drain the excess chocolate off the cookies. Place the coated cookies back onto the lined baking sheet.
- Place the chocolate coated cookies in the refrigerator until firm. Transfer the chilled cookies to an airtight container and store in the refrigerator. Enjoy!

- Preheat oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the butter, peanut butter, brown sugar, and white sugar until smooth. Beat in the eggs one at a time, then stir in the corn syrup, water, and vanilla. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chunks. Drop by 1/4 cupfuls 3 inches apart onto ungreased baking sheets.
- Bake for 12 to 14 minutes in the preheated oven, or until edges are golden. Allow cookies to cool for 1 minute on the cookie sheet before removing to wire racks to cool completely.

Not real sure what title should be on this recipe ! I just call them chocolate peanut butter cookies, afraid that might be confusing to some tho. Girlfriend brought these in at work around Christmas time. I couldn't wait to make them at home. Warning : can be addictive !!

- Dip peanut butter crackers in melted chocolate, coating evenly. Place on wax paper to dry. Store in air tight container once they dry.
