I've made this delicious bread in small loaf pans to give as gifts and received rave reviews. The recipe is from the cookbook "The Family Baker".

1/4 cup unsweetened cocoa
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup dark brown sugar, packed
1 large egg
1 cup milk
1/3 cup canola oil
1 teaspoon vanilla
1 cup walnuts, chopped
3/4 cup semi-sweet chocolate chips
1/2 cup chopped pitted dates or 1/2 cup dried apricot (optional)
2 tablespoons chopped walnuts
2 tablespoons semi-sweet chocolate chips

Steps:

  • Preheat oven to 350º.
  • Lightly grease and cocoa pans; tap out excess cocoa.
  • In a medium mixing bowl, whisk together cocoa, flour, baking powder, baking soda, and salt.
  • In a large bowl, using a whisk or an electric mixer, blend together sugar, egg, milk, oil and vanilla.
  • Slowly add in the dry ingredients, beating just until combined.
  • Stir in walnuts, chocolate chips, and dates.
  • Turn batter into the baking pans, sprinkle with nuts and chocolate chips.
  • Bake 55 to 60 minutes for a large loaf, about 25 minutes for mini loaves or until tester inserted in bread comes out clean.
  • Cool in pan on wire rack 10 minutes, take out of pan and cool completely on the rack.

3/4 cup granulated sugar (150 grams)
1 tablespoon molasses (20 grams)
1/2 cup canola oil (125 milliliters)
2 large eggs
3 mashed ripe bananas (about 1 1/2 cups)
1 teaspoon vanilla extract
1/4 cup whole milk (60 milliliters)
1 teaspoon white vinegar
2 cups (270 g) all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/4 teaspoon cinnamon
1/2 cup chopped walnuts, toasted (55 grams)
3/4 cup chopped dark chocolate (75 grams)
2 tablespoons turbinado sugar

Steps:

  • Preheat your oven to 350 degrees F (175 degrees C) and grease a 9-by-5-inch loaf pan with nonstick cooking spray.
  • In a large bowl, whisk together the granulated sugar, molasses, oil, eggs, bananas and vanilla until well combined. Set aside.
  • In a small glass measuring cup, stir together the milk and vinegar and set aside.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt and cinnamon. Stir in the walnuts and chocolate.
  • Add about a third of the dry ingredients into the banana mixture and stir gently until almost combined. Add half the milk mixture and stir just to combine. Stir in another third of the dry ingredients followed by the remaining milk mixture and finally the remaining dry ingredients.
  • Transfer into the prepared pan and sprinkle with the turbinado sugar.
  • Bake for 55 minutes to 1 hour, or until deeply golden brown and a cake tester or skewer inserted into the center of the loaf comes out clean. Cool for 20 minutes before turning it out of the pan onto a wire rack to cool to room temperature.

1 pound bitter chocolate
Sweet butter, to coat the bread

Steps:

  • Slice the walnut bread thin into 8 slices. Heat a large nonstick skillet or a griddle over moderate heat. Butter 1 side of each bread slice, then put 4 slices, buttered side down, on a work surface. Cut chocolate into chunks, thin enough to fit in a sandwich. Place on the bread, cover with another slice of walnut bread and butter the side facing up. Grill on both sides, about 3 to 5 minutes each. Serve warm.

1 cup butter, softened
2 cups sugar
5 eggs
2 ounces unsweetened chocolate, melted
1 teaspoon vanilla extract
2-1/2 cups cake flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 cup chopped walnuts, optional

Steps:

  • In a bowl, cream butter and sugar. Add eggs, chocolate and vanilla; mix well. Combine the flour, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Stir in nuts if desired. , Pour into four greased 5x3x2-in. loaf pans. 1/4 cup cornstarch
9 tablespoons butter, at room temp

1/4 cup finely chopped walnuts
1/2 grated lemon, rind of
1/4 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350*.
  • Combine flour, baking powder and cornstarch in a small bowl and set aside.
  • Line bottom and long sides of an 8.
  • 5 x 4inch loaf pan with waxed paper and grease.
  • Sprinkle 1 1/2 tbl of the sugar into the pan and tilt pan to distribute evenly on bottom and sides; tip out any excess.
  • In a medium bowl, cream the butter until soft and add the remaining sugar.
  • Beat until light and fluffy and then add eggs, one at a time, beating well after each addition.
  • Gently fold in the dry ingredients, in 3 batches; do not overmix!
  • Fold in the vanilla, raisins, nuts, lemon rind and chocolate chips until just blended.
  • Pour batter into prepared pan and bake for 45-50 minutes or until tester comes out clean.
  • Let cool for 5 minutes in pan and then cool completely on a wire rack.

  • Attach the dough hook and turn speed to medium. Knead the dough until it is smooth and gathering in the center. This should take somewhere between 6-10 minutes. To test, take a small amount of dough and stretch it with your fingers. The dough should be able to stretch thinly forming a translucent film as you pull, and then breaks out into circular holes.
  • Gather the dough into a ball, sprinkle a little bit of flour into a bowl and place the ball of dough inside it. Cover the bowl with kitchen towel and set it on a warm place for one hour to one hour and a half, until size of the dough is doubled. Meanwhile,line a large baking sheet with parchment paper.
  • Divide the dough into 12 equal portions. Dust your work area with flour and roll each portion into a small rectangle that is slightly thicker than 1/4 inch. Spread softened butter on top, then sprinkle with the walnut-cocoa mixture leaving about half an inch border on sides. Roll the log tightly and pinch the seams and the ends to seal.
