DIY CHOCOLATE-INFUSED WHISKEY



DIY chocolate-infused whiskey image

Dress up your favorite whiskey with dark chocolate notes in this effortless DIY chocolate-infused whiskey. Easy to make in just 3 days with minimal prep and a short strain, it's a great infusion for Old Fashioneds, Manhattans, Mint Juleps, Whiskey Sours and all your whiskey favorites.

Number Of Ingredients 3

12 oz bourbon 90-95 proof
¼ cup cacao nibs
Optional: add 1 oz simple syrup

Steps:

  • Add the whiskey and cacao nibs to a mason jar and seal.
  • Let the nibs infuse in a cool, dark place for at least 48 hours and up to 1 week. Each day, agitate the infusion and start checking flavor after 48 hours.
  • Once you love the flavor, strain through a metal sieve and store it in a clean glass jar. If you prefer a sweeter chocolate-infused whiskey, add 1 oz of simple syrup to the jar and store it in the fridge.

I often make my special recipe Bailey's for Christmas gift giving, but this sounds even better. It's from Christopher Elbow Artisanal Chocolates in Kansas City. He mixed it for an employee Christmas party and reports it's creamy, boozy and delicious, straight up, over ice or over ice cream. Yum!

1/2 cup light corn syrup
1/4 cup water
1 vanilla bean, split, seeds scraped
4 ounces bittersweet chocolate
1 (14 ounce) can sweetened condensed milk
1 cup half-and-half
1/2 cup heavy cream
1 cup Irish whiskey (or 1 cup vodka for a more neutral flavor)

Steps:

  • In a saucepan, combine the corn syrup, water and vanilla seeds and bring to a boil.
  • Add the chocolate and whisk over moderate heat until melted.
  • Transfer to a blender and let cool for 5 minutes. Add the condensed milk, the half & half, the heavy cream and blend.
  • Pour the mixture into a bowl and stir in the whiskey or vodka.
  • Blend the mixture again in batches for 30 seconds.
  • Refrigerate overnight before serving.
  • For gift giving, pour the liqueur into simple long-necked glass bottles with a cork or plug.
  • It will keep refrigerated for up to 2 weeks.

Erin's Irish Creme Liqueur image

This is so easy, and since it's creamier than the store-bought versions of Irish creme liqueur, we prefer it. Drink a pinch as liqueur or use to make Irish coffees. One may add more Irish whisky for stronger flavor. Store in refrigerator for up to three weeks.

¼ cup milk chocolate chips
2 teaspoons butter
3 ½ fluid ounces Irish whiskey, or more to taste
¼ teaspoon instant coffee granules
1 teaspoon hot water
1 (14 ounce) can sweetened condensed milk
1 ½ cups heavy whipping cream

Steps:

  • Put chocolate chips and butter in a glass bowl; heat in microwave on high until chips are softened, about 30 seconds. Stir chocolate mixture until smooth, cooking in microwave another 15 seconds to assure chocolate is soft enough, if needed. Add Irish whiskey and stir until smooth.
  • Dissolve coffee granules in hot water in a small pitcher. Pour the chocolate mixture, sweetened condensed milk, and cream into the pitcher and stir until smooth.
  • Refrigerate mixture until completely chilled, at least 20 minutes.
