Great golden brown soft cookies with chocolate and peanut butter chips. If you like, you can use white chocolate chips, too!

1 ½ cups butter, softened
1 ¼ cups packed brown sugar
1 ¼ cups white sugar
1 egg
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 cup semisweet chocolate chips
1 cup peanut butter chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Beat in the egg, then stir in the vanilla. Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, stir in the chocolate and peanut butter chips. Drop by rounded spoonfuls onto the unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

MY GRANDMOTHER first made this cake, and my mother made it often when I was a little girl. Today, at age 82, I'm still baking it. What better testimony to a delicious recipe! 1/2 cup butter, cubed
2 ounces unsweetened chocolate
1 cup sugar
1/2 cup raisins
1-1/2 cup water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Pinch salt
1-1/2 teaspoons vanilla extract
1-3/4 cups all-purpose flour
1 teaspoon baking soda
ICING:
1/2 cup confectioners' sugar
1/4 teaspoon vanilla extract
1 to 2 teaspoons milk

Steps:

  • In a large saucepan over low heat, melt butter and chocolate, stirring constantly. Add the sugar, raisins, water, cinnamon and cloves; bring to a boil. Boil for 5 minutes, stirring occasionally. , Remove from the heat; pour into a large bowl and cool for 15 minutes. Beat in salt and vanilla. Combine flour and baking soda; add to chocolate mixture until well blended. , Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 45 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes before removing to a wire rack to cool completely. , In a small bowl, combine icing ingredients; drizzle over cooled cake.

I'm surprised and delighted by the number of sweets and desserts that I have been able to come up with sans flour and dairy. With this one I had help. Our good friend Dr. Nersessian-a very good cook-came up with the first version of this to give me a dessert without the bad things. I have fiddled with it a bit. It has been a great success with all who have tasted it. A chocolate version follows.

1/2 teaspoon safflower oil
1 cup whole roasted unsalted almonds
1 cup whole walnuts
1/3 cup sugar
2 egg whites

Steps:

  • Preheat the oven to 300°F. Grease a 7- or 8-inch square baking pan with the oil. Set aside. Place the nuts in a food processor and chop until the mixture resembles coarse sand. Put the contents into a small mixing bowl. Stir in the sugar and egg whites. With a spatula, scrape the contents of the bowl into the oiled pan and press into an even layer. Bake for 1 hour for soft cookies or 1 1/2 hours for crisp cookies. Remove from the oven. Allow to cool. Cut into 1 3/4- or 2-inch squares.
  • Variation:
  • Chocolate Yum Yums: Even though these are simply a chocolate version of the Yum Yums, everyone seems to think that they are brownies. Yum. Melt 2 1/2 ounces of 70% dark-not milk-chocolate in a double boiler. Add to the mixing bowl after the sugar and egg whites. Proceed as directed.

Pecan shortbread
3 ounces pecans, toasted
3 tablespoons granulated sugar
1/2 cup (1 stick) butter
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
Chocolate pudding
1 cup heavy cream
1/4 cup granulated sugar
3 egg yolks
3 1/2 ounces dark chocolate, coarsely chopped
1 ounce milk chocolate, coarsely chopped
1 tablespoon butter
1/4 teaspoon vanilla extract
Pinch of salt
1 pound cream cheese
1/2 cup plus 2 tablespoons confectioners' sugar
2 cups heavy cream
Chocolate shavings, for garnish

Steps:

  • Place the pecans and sugar in a food processor and pulse together for 30 seconds.
  • In the bowl of an electric mixer, cream together the butter, vanilla, and the pecan-sugar mixture, then stir in the flour and salt until just mixed. Chill the dough for 30 minutes.
  • Preheat the oven to 325°F.
  • Use your fingers to press the chilled dough into a 9-inch square baking dish. Prick the dough with a fork and bake 10 to 15 minutes, until lightly golden. Cool the cooked dough while preparing the remaining layers.
  • Heat the cream for the pudding in a heavy-bottomed saucepan over medium heat. Stir together the sugar and egg yolks in a mixing bowl. When the cream is hot (but not boiling), temper the cream into the yolks by slowly adding half the cream while stirring vigorously, then stir the egg mixture back into the cream in the saucepan. Cook over medium-low heat for 5 to 7 minutes, until it is thick enough to coat the back of a spoon.
  • Place the dark and milk chocolate in a mixing bowl with the butter, vanilla, and salt. Pour the hot cream mixture over the chocolate and stir until the chocolate and butter are melted. Spread the pudding in a shallow dish to cool and cover it with a piece of plastic wrap placed directly on the surface so a skin does not form.
  • In a small mixing bowl or the bowl of an electric mixer, beat the cream cheese and 1/2 cup confectioners' sugar together until smooth.
  • In the bowl of an electric mixer, or by hand, whip the cream to soft peaks, then add the remaining 2 tablespoons sugar and whip a few minutes more, until stiff peaks form.
  • Spread the cream cheese over the cooled shortbread crust, top with the pudding, and then add the whipped cream. Refrigerate for at least 1 hour, or overnight. Garnish with additional chocolate shavings, if desired.

1 (18 1/4 ounce) box chocolate cake mix
1 1/4 cups water (for cake)
1/3 cup water (for cake)
3 eggs (for cake)
2 (5 2/3 ounce) boxes chocolate instant pudding
2 (8 ounce) containers Cool Whip
2 cups mini chocolate chips

Steps:

  • Make and bake cake as directed.
  • Set aside to cool.
  • Make pudding (make as directed for pies -less milk) and chill for an hour in fridge.
  • After cake has cooled, crumble half of it in bite sized pieces in the bottom of a large, clear serving bowl.
  • Layer 1/2 half of pudding on top of cake.
  • Layer 1 tub of cool whip on top of pudding.
  • Repeat this layering process with the rest of the cake crumbled up, the rest of the pudding, and the other tub of cool whip.
  • Sprinkle with mini chocolate chips.
  • Sit back and enjoy this yummy-to-your-tummy dessert!

6 ounces chocolate chips
1 cup sweet butter
1 cup chopped pecans
1 3/4 cups sugar
4 eggs
1 cup flour
2 teaspoons vanilla extract
powdered sugar, for dusting

Steps:

  • Melt chocolate chips and butter in double boiler.
  • Add nuts and remove from heat.
  • Add sugar, flour, and 1 egg at a time.
  • Stir in vanilla extract.
  • Fill mini-muffin tins about 2/3 full.
  • Bake@ 350 degrees Farenheit for 20-25 minutes.
  • Tops will be crackly.
  • Cool on wire racks.
  • Dust with powdered sugar.

7 Crackers Keebler® Grahams Original
2 1/2 cups miniature marshmallows
1 package (12 oz., 2 cups) semi-sweet chocolate morsels
2/3 cup light corn syrup
3 tablespoons butter or margarine
1/2 cup crunchy peanut butter
3 cups RICE KRISPIES® cereal

Steps:

  • Coat 13 x 9 x 2-inch microwave-safe dish with cooking spray. Arrange Keebler® Grahams Original crackers in single layer in dish, breaking crackers as needed to fit. Sprinkle marshmallows evenly over crackers.
  • Microwave on HIGH 1 minute or until marshmallows are puffy. Remove from microwave. Cool completely.
  • In 2-quart microwave-safe mixing bowl combine chocolate morsels, corn syrup and butter. Microwave on HIGH about 1 1/2 minutes or until chocolate is melted, stirring every 30 seconds. Stir in peanut butter. Add KELLOGG'S® RICE KRISPIES® cereal, mixing until combined.
  • Spread evenly over marshmallows. Cover and refrigerate about 1 hour or until firm. Cut and store in airtight container in refrigerator.
  • CONVENTIONAL DIRECTIONS:
  • Follow step 1 above using 13 x 9 x 2-inch baking dish coated with cooking spray. Bake at 375 degrees F about 7 minutes or until marshmallows are puffy. Cool completely. In medium saucepan combine chocolate morsels, corn syrup and butter. Cook stirring constantly, over medium-low heat until melted. Remove from heat. Stir in peanut butter. Add KELLOGG'S® RICE KRISPIES® cereal, mixing until combined. Complete as in step 4 above.
