MEXICAN BROWN SUGAR CANDY

1 cup buttermilk
2 cups sugar
1 cup brown sugar, packed
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup light corn syrup
2 teaspoons vanilla extract
2 tablespoons melted butter
1 1/2 cup pecans
1 teaspoon hot water

Steps:

  • In a 4-quart saucepan, cook the buttermilk, sugar, brown sugar, baking soda, salt and corn syrup over medium-low heat, stirring occasionally, to 230 degrees F or the soft ball stage. Remove from heat. Mix in vanilla and butter. Blend until thick. Add pecans and beat until creamy and thick. Stir in hot water and drop by tablespoons onto waxed paper. Cool for 2 hours before wrapping individually in clear plastic wrap.

1 pound brown sugar
¾ cup evaporated milk
2 tablespoons butter
1 teaspoon vanilla extract
½ cup chopped walnuts

Steps:

  • Butter a 8 or 9 inch square baking dish.
  • In a large heavy saucepan, stir together the brown sugar and evaporated milk. Bring to a boil over medium-high heat. Cook until the temperature reaches between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Remove from the heat and stir in the butter, vanilla and walnuts. Continue to beat with a sturdy spoon until the mixture looses its gloss. Pour into the prepared pan. Score into squares with a knife then set aside until firm, about 5 minutes. Cut into squares and serve or store in an airtight container in the refrigerator.

Dulces De Calabasas (Mexican Pumpkin Candy) image

This is the stuff you get by the cash register at Mexican restaurants or in little Mexican grocery stores. It's been one of my favorites since I was, oh, 6 or 7 and got some at Olviera Street. I add the cinnamon and cloves because I like it spicy, but traditionally it's just pumpkin and sugar. Really labor-intensive, but so worth it! Do not use carving pumpkins, use sugar-pie or other cooking pumpkins (which the computer does not recognize.) Cook time is for unattended resting time.

2 lbs whole pumpkin (1-2 small, 1 qt. when chopped)
water
1 cup brown sugar, packed
1/2 teaspoon ground cloves (optional)
1/2 teaspoon ground cinnamon (optional)
granulated sugar

Steps:

  • Cut pumpkin in half, remove seeds and as much of the "stringy stuff" as you can, and chop into pieces approximately 1-1.5 inches by 1.5-2.5 inches.
  • Slice off skin, taking off as little flesh as you can.
  • Measure to make sure you have approximately one quart of pumpkin pieces (either pack well into a measuring cup or fill a calibrated 1/2 gallon or 1 gallon measure to the quart line and drop in pieces until water hits the 1/2 gallon line, then drain water.).
  • Put in a fairly heavy saucepan and cover with water.
  • Cover, bring to a boil, and boil for 15-20 minutes.
  • Drain, but save water, and place pumpkin back in pan.
  • Measure water to make sure you have about 1 1/2 cups.
  • Stir in packed brown sugar until smooth. Add cloves and/or cinnamon at this point, if desired.
  • Pour the sugar/water syrup over the pumpkin, cover, return to a boil, and boil another 15 minutes.
  • Turn off heat and let sit overnight (at least 8 hours.) This is how the pumpkin soaks up the syrup and "candies".
  • In the morning (or after the 8-10 hours), return to a boil, and boil an additional 5 minutes.
  • Remove from syrup with a slotted spoon and place on a tray or cookie sheet lined with waxed paper.
  • Allow to dry at least 10-12 hours in a place where it will not be disturbed (if you're not going to be using the oven and haven't had it on recently, the cold oven is a great place to keep it safe.).
  • Roll in granulated sugar and enjoy! Place in air-tight container to store up to two weeks.

Steps:

  • Combine milk, brown sugar, butter, and salt in a 3-quart heavy saucepan and bring just to a boil over moderate heat, stirring until sugar is dissolved. Reduce heat to low and simmer, stirring frequently, until mixture registers 238°F on thermometer and a teaspoon of mixture dropped into a small bowl of cold water holds a soft ball when pressed between your fingers (this will take about 30 minutes).
  • Transfer to a heatproof bowl. Beat in vanilla with an electric mixer at medium speed, then add confectioners' sugar a little at a time, beating until fudge is thick and smooth, about 5 minutes.
  • Spread evenly in an ungreased 8-inch square baking pan. Refrigerate, uncovered, until firm enough to cut, about 30 minutes.
  • Cut fudge into 64 squares with a sharp paring knife.

3/4 cup water
4 (1-inch-wide) strips orange zest
1/4 teaspoon cinnamon
1/4 teaspoon ground allspice
2 1/2 pound medium apples
3 tablespoons all-purpose flour
Pastry dough (for a double-crust pie)
1 tablespoon milk
1 teaspoon sugar
Accompaniment: rum ice cream

Steps:

  • Put a large heavy baking sheet in middle of oven and preheat oven to 425°F.
  • Bring piloncillo, water, zest, spices, and 1/8 teaspoon salt to a boil in a small heavy saucepan, covered, stirring occasionally until piloncillo has dissolved. Remove lid and boil over medium-low heat until syrup is thickened and reduced to about 3/4 cup, 6 to 10 minutes. Discard zest and cool syrup slightly.
  • Meanwhile, peel and core apples, then cut into 1/2-inch-wide wedges.
  • Toss apples with flour, then with syrup.
  • Roll out 1 piece of dough (keeping remaining piece chilled) on a lightly floured surface with a lightly floured rolling pin into a 13-inch round, then fit into a 9-inch pie plate.

  • Roll out remaining piece of dough on a lightly floured surface with a lightly floured rolling pin into a 16-by 11-inch rectangle. Cut dough crosswise into 11 (1 1/4-inch-wide) strips.
  • Stir apple mixture, then spoon evenly into pie shell. Weave a tight lattice pattern over pie with pastry strips.
  • Trim all strips flush with edge of pie plate. Fold bottom crust up over edge of lattice and crimp. Brush lattice (but not edge) with milk and sprinkle with sugar.
  • Bake pie on hot baking sheet 20 minutes.
