MOM'S AMERICAN CHOP SUEY (1950'S BASIC)

A school lunchtime classic. Quick and easy to make. Very bland but has remarkable taste. My sister has tried it and say it's just as she remembers Mom's. All you need to finish this recipe is some Kraft shaker cheese to complete the memory. Mom probably got the recipe from a 1950 vintage Betty Crocker cookbook. Quantities are approximate. Mom seldom measured anything. We usually make a double batch. Enjoy. If you add a bit of garlic powder, chili powder and a can of kidney beans you would create Mom's Chili Mac Recipe.

Number Of Ingredients 11

2 tablespoons oil (I use olive, mom did'nt)
1 -1 1/2 lb ground beef
1 small yellow onion
1/2 cup green bell pepper
1/2 cup celery
2 (8 ounce) cans tomato sauce (mom used Hunts)
1 (8 ounce) can water
1 -1 1/2 tablespoon Worcestershire sauce (mom probably used A1)
1 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
8 ounces elbow macaroni

Steps:

  • Clean and dice or chop the veggies as you like.
  • Brown ground beef and onion in oil, drain and return to pan.
  • Add remaining ingredients except pasta and mix. Simmer and stir.
  • Prepare pasta per package, drain.
  • Add to ground beef and mix well.
  • Simmer 10 - 15 minutes. Add water if needed.
  • Tastes even better the next day.

1 lb ground beef
2 cups celery, cut fine
2 medium onions, chopped
1/2 cup rice
4 tablespoons soy sauce
1 (10 3/4 ounce) can cream of celery soup or 1 (10 3/4 ounce) can cream of mushroom soup
3 cups water

Steps:

  • Brown burger.
  • Put in baking dish, burger, celery, onion, soy sauce and rice.
  • Cover and bake 2 hours at 375, uncovering the last 1/2 hour.

3 lbs chop suey meat, pork and veal or taco meat
1 stalk celery chopped
5 Big onions chopped
2 Cans Bean Sprouts
1 pkg mushrooms cut or 1-2 cans of mushrooms or pieces (save water from can)
Green Pepper, chopped
1-2 T bead molasses
3-4 T Soy sauce1
1 tsp sugar
salt and little pepper
1 can water chestnuts

Steps:

  • Cook meat and then drain Add onions to browned meat then add bead molasses I prefer a little less than 1 T Add celery, mushrooms and green pepper Add soy sauce, as much as you want Add sugar to taste Cover and cook for 2 hours. Approx. 1/2 hour before done, rinse and drain sprouts and add to mixture along with water chestnuts

Posting this for safekeeping. It's DH's grammas recipe, made for the first time last night. It's VERY americanized, and no way shape or form authentic chinese, but reminds DH of his childhood and his gramma, so I want to make it from time to time. Just wanted to keep safe for future use.

1 lb pork
1 teaspoon garlic
1/4 teaspoon ginger
3 tablespoons soy sauce
1/4 teaspoon pepper
1 teaspoon sesame oil
1 onion, sliced
3 stalks celery, sliced thin
1 (14 ounce) can Chinese vegetables
1/4 cup soy sauce
1/4 cup molasses
1/4 cup water
3 tablespoons cornstarch

Steps:

  • You can use any pork or beef, or mixture of both. I like to use boneless pork chops. Slice the pork or beef, marinate in the garlic, ginger, soy, pepper and oil for at least 2 hours or longer.
  • Saute in a pan with some oil until browned. Cover and simmer for 20 minutes. Add the celery and onion with 1 cup water, and simmer for 15 minutes more. Mix the soy sauce, molasses, water and cornstarch until smooth. Add to the meat mixture and stir until thickened. Add the chinese vegetables and mix well.
  • Serve over hot steamed rice with crunchy chow mein noodles.
