1 container (15 oz.) POLLY-O Original Ricotta Cheese
1/2 lb. Mexican chorizo, cooked, drained
1/2 cup KRAFT Grated Parmesan Cheese
1 pkg. (8 oz.) KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA, divided
12 lasagna noodles, cooked
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
1 tsp. crushed red pepper

Steps:

  • Heat oven to 375ºF.
  • Combine first 5 ingredients; stir in 1 cup mozzarella. Spread onto noodles, adding about 1/3 cup to each; roll up.
  • Mix sauce and crushed pepper; spread 1/2 cup onto bottom of 13x9-inch baking dish. Add lasagna rolls, seam sides down; cover with remaining sauce and mozzarella.
  • Bake 25 min. or until heated through.

This dish makes everyone happy. Who wouldn't love noodles, chorizo and sauce? Ummm. No one.

10 Lasagna Noodles - cooked per package directions to al dente (make sure to salt the water)
1 tbs butter
1 medium onion - chopped
3 cloves garlic - minced
1-2 9 oz package of Mexican Chorizo Sausage (the kind that is raw sausage)
1 14.5 oz can diced tomatoes
1 24 oz Jar Ragu Chunky Sauteed Onion and Garlic flavor Pasta Sauce
8 oz Ricotta Cheese (about 1/2 standard 15 oz package)
1 package Serrano Jamon (Ham)
2 Cups Shredded Mozzarella
Cilantro and Mexican crumbling cheese for garnish

Steps:

  • Preheat oven to 350. In a large stock pot - prepare 10 Lasagna noodles per package instructions (make sure to salt the water). When done, leave noodles in the water and remove the stock pot from the heat.
  • While the noodles are cooking, in a stainless steel skillet, melt the butter and then add the chopped onion. Allow to cook over medium heat for 3-4 minutes. Add the minced garlic cloves and the Mexican Chorizo. Cook over medium heat until the Chorizo is cooked through.
  • Add the can of diced tomatoes and the jar of Ragu Chunky Sauteed Onion and Garlic Flavor Pasta Sauce.
  • Remove the lasagna noodles from the water using tongs and lay out flat. Spread 1 heaping tsp of Ricotta cheese on each noodle. On top of the Ricotta spread some of the Serrano Ham. Roll up the lasagna noodles and place in an oven proof baking dish.
  • Top the rolled noodles with the sauce. Gently lift up each noodle roll and allow some of the sauce to run beneath. Sprinkle the shredded Mozzarella over the top and place the baking dish on top of a baking sheet (in case any bubbles over, it wont mess up your oven). Bake for 45 minutes until the sauce is bubbly and the cheese is browned slightly. Just before removing from the oven, set the broiler to finish the cheese if necessary. Garnish with cilantro and Mexican crumbling cheese if desired.

1 (26 ounce) jar chunky tomato sauce (such as Ragu®)

18 lasagna noodles
1 (15 ounce) container ricotta cheese
1 egg, beaten
2 tablespoons chopped fresh parsley
¾ cup grated Parmesan cheese
1 (12 ounce) package shredded mozzarella cheese, or as needed
¼ cup grated Parmesan cheese

Steps:

  • Cook and stir ground beef, onion, garlic powder, and oregano in a large skillet over medium heat until onion is tender and beef is browned, about 10 minutes. Add tomato sauce and sugar; simmer until sauce is heated through, about 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch casserole dish.
  • Mix ricotta cheese, egg, parsley, and 3/4 cup Parmesan cheese together in a bowl.
  • Place a lasagna noodle on a work surface. Spoon one layer of ricotta cheese mixture, one layer meat sauce, and one layer mozzarella cheese atop the lasagna noodle; top with another lasagna noodle. Roll up the stuffed lasagna noodles in the jelly-roll style; place in the prepared casserole dish. Repeat with remaining lasagna noodles, ricotta cheese mixture, meat sauce, and mozzarella cheese. 2 tablespoons chopped onion
1 garlic clove, minced
1 can (15 ounces) crushed tomatoes

1/4 cup grated Parmesan cheese
1 large egg, lightly beaten

6 lasagna noodles, cooked and drained
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • In a skillet, cook beef, onion and garlic until meat is no longer pink; drain. Add tomatoes, salt, oregano and cayenne; simmer for 10 minutes. , Spoon half of the meat sauce into a greased 9-in. square baking dish. 20 lasagna noodles
Kosher salt
2 tablespoons olive oil
1 medium onion, diced
1 cup finely chopped mushrooms (about 3 ounces)
1 green bell pepper, diced (about 1 cup)
3 cloves garlic, minced (about 1 1/2 tablespoons)
2 pounds ground beef
Freshly ground pepper
1 28-ounce can diced tomatoes
1 6-ounce can tomato paste
4 tablespoons minced fresh parsley
4 tablespoons minced fresh basil
1 30-ounce container whole-milk ricotta cheese (about 3 1/3 cups)
1 pound mozzarella, grated (about 3 1/2 cups)
1 cup grated parmesan cheese
2 large eggs

Steps:

  • Cook the lasagna noodles in a large pot of salted boiling water until al dente. Drain, rinse with cold water to cool and lay flat on a sheet of foil. Set aside.
  • Make the sauce: In a large pot, heat the olive oil over medium-high heat. Add the onion, mushrooms, green pepper and garlic and saute 4 to 5 minutes, until the vegetables are starting to soften. Remove the veggie mixture from the pan, then add the ground beef to the pan and cook, stirring occasionally, until it's totally browned. Drain the excess fat, then add 1/2 teaspoon each salt and pepper, the diced tomatoes, tomato paste, the veggie mixture and 1 tablespoon each parsley and basil and stir to combine. Let the mixture simmer over low heat, 30 minutes.
  • Make the filling: Combine the ricotta, 1/2 cup mozzarella, 3/4 cup parmesan, the eggs, 1/2 teaspoon each salt and pepper and the remaining 3 tablespoons each parsley and basil. Stir to combine.
  • Assemble the lasagna: Spoon a thin layer of sauce onto the bottom of a 9-by-13-inch pan or five 6-inch disposable foil loaf pans. Spread 2 to 3 tablespoons ricotta filling on each lasagna noodle, then roll them up so that the cheese is on the inside of the roll. Lay them sideways in the pan(s). (Four roll-ups will fit in each loaf pan, or you can fill a 9-by-13-inch pan.) Top with the remaining sauce and plenty of grated mozzarella and parmesan.
  • If you're making the roll-ups right away, place the pan(s) on a baking sheet and bake at 375 degrees F for 20 minutes, until hot and bubbly.

4 teaspoons all-purpose flour
1 1/4 cups whole milk
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Pinch ground nutmeg
1 (15-ounce) container whole milk ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
1 cup plus 2 tablespoons grated Parmesan
3 ounces thinly sliced prosciutto, chopped
1 large egg, beaten to blend
3/4 teaspoon salt, plus more for salting water
1/2 teaspoon freshly ground black pepper
1 to 2 tablespoons olive oil
12 uncooked lasagna noodles
2 cups marinara sauce
1 cup shredded mozzarella (about 4 ounces)

Steps:

  • To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat. Add the flour and whisk for 3 minutes. Whisk in the milk. Increase the heat to medium-high. Whisk the sauce until it comes to a simmer and is thick and smooth, about 3 minutes. Whisk the salt, pepper, and nutmeg into the bechamel sauce.
  • Preheat the oven to 450 degrees F.
  • Whisk the ricotta, spinach, 1 cup Parmesan, prosciutto, egg, salt, and pepper in a medium bowl to blend.
  • Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking.
  • Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread a large spoonful (about 3 tablespoons worth) of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil. Bake until heated through and the sauce bubbles, about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile, heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.

1 package (15 ounces) chorizo
1/4 cup chopped seeded jalapeno peppers
1 rotisserie chicken
2 large eggs, lightly beaten
1 carton (15 ounces) ricotta cheese
4 cans (10 ounces each) enchilada sauce
12 no-cook lasagna noodles
4 cups shredded Monterey Jack cheese
1/2 cup minced fresh cilantro
AVOCADO CREAM SAUCE:
2 medium ripe avocados, peeled, pitted and halved
1/4 cup sour cream
2 tablespoons lime juice
1/4 teaspoon salt

Steps:

  • Crumble chorizo into a large skillet; add jalapenos. Cook over medium heat for 6-8 minutes or until meat is fully cooked; drain. Shred chicken; add to skillet.
