1/2 red pepper, cut into thin strips
1/2 onion, thinly sliced
1-1/2 cups sliced fresh mushrooms
1 fresh jalapeño pepper, seeded, sliced
1 ready-to-use baked pizza crust (12 inch)
1/2 tsp. olive oil
1 cup CLASSICO Traditional Pizza Sauce
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese
1 plum tomato, thinly sliced
1 Tbsp. chopped cilantro

Steps:

  • Heat oven to 425ºF.
  • Cook chorizo in large skillet on medium heat 5 to 7 min. or until done, stirring occasionally; drain. Add red peppers and onions; cook 3 min., stirring occasionally. Stir in mushrooms and jalapeño peppers; cook 4 to 5 min. or until mushrooms are tender.
  • Place pizza crust on baking sheet; brush edge with oil. Spread crust with sauce; top with 3/4 cup cheese, chorizo mixture, tomatoes and remaining cheese.
  • Bake 12 to 14 min. or until crust is golden brown and cheese is melted. Sprinkle with cilantro.

1/2 cup black beans with cumin and chili spices (from 15-oz can)
1/2 cup chopped tomatoes
1/2 cup frozen whole kernel corn, thawed
1/4 cup reduced-fat shredded Cheddar cheese (1 oz)
1 tablespoon chopped fresh cilantro
2 teaspoons crumbed cotija (white Mexican) cheese

Steps:

  • Heat oven to 425°F. In 8-inch skillet, cook sausage over medium heat 4 to 5 minutes or until brown; drain.
  • On 1 large or 2 small cookie sheets, place flatbreads. Spread each with 2 tablespoons salsa. Top each with half the chorizo, beans, tomatoes, corn and Cheddar cheese.
  • Bake about 8 minutes or until cheese is melted. Sprinkle each with half the cilantro and cotija cheese; cut into wedges. Serve immediately.

1 ½ cups mozzarella cheese, shredded
2 tablespoons cream cheese, softened
¾ cup almond flour
½ teaspoon salt
½ teaspoon oregano
½ teaspoon garlic powder
¼ teaspoon freshly ground black pepper, or to taste
1 egg, beaten, at room temperature
cooking spray
2 ounces Mexican chorizo, crumbled
½ cup mozzarella cheese, shredded
¼ cup salsa
1 tablespoon diced onion
2 tablespoons cilantro leaves for garnish

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place 1 1/2 cups mozzarella cheese and cream cheese in a microwave-safe bowl and heat until melted, about 1 1/2 minutes. Stir well. Add almond flour, salt, oregano, garlic powder, and black pepper. Use your hands to combine dough. Once combined, add beaten egg and stir until well incorporated.
  • Spray 2 large pieces of parchment paper with non-stick spray. Place dough on one piece of parchment paper and cover with the second piece. Using your hands or a rolling pin, flatten pizza dough to a 10-inch round. Remove top parchment paper and place bottom piece of parchment paper with flattened pizza dough onto a baking sheet. Pierce all of the pizza dough with a fork to prevent the dough from rising.
  • Bake in the preheated oven until bottom starts to brown, 12 to 17 minutes.
  • Meanwhile place chorizo in a microwave-safe bowl and cover with a paper towel. Microwave in three 1-minute increments, uncovering and stirring meat well after each.
  • Remove pizza crust from oven and top with 1/2 cup mozzarella cheese, chorizo, salsa, and onion. Bake until cheese is melted, 4 to 6 minutes more. Garnish with cilantro leaves.

Steps:

  • In a large bowl, combine the salsa ingredients; set aside. , Divide dough into fourths. On a lightly floured surface, roll each portion into an 8-in. circle. Lightly brush both sides of dough with oil; place on grill. Cover and grill over medium heat for 1-2 minutes or until the bottom is lightly browned. , Remove from the grill. 2 teaspoons olive oil
2 cups monterey jack cheese, grated
8 red potatoes, small, cooked, diced
1 cup chorizo sausage, cooked, diced 1/4 inch (may substitute Italian)
1 tomatoes, diced 1/4 inch
2 ounces green chilies, canned and chopped
1/2 teaspoon salt (or to taste)

Steps:

  • Lay a tortilla down on an oiled baking sheet.
  • Evenly sprinkle 1/4 cup of the cheese over the tortilla.
  • Top with another tortilla and evenly sprinkle 1/4 cup of the cheese over this tortilla.
  • Next, arrange chiles, sausage, potatoes and tomatoes on top of the tortilla.
  • Drizzle with a little olive oil and season lightly with salt.
  • Repeat this process with the remaining ingredients.

3 shallots, halved, cut lengthwise into thin strips
1/8 teaspoon crushed red pepper flakes
4 naan flat bread (from a 12-oz. package)
1/3 cup prepared pesto sauce
1 1/2 cups mixed cherry tomatoes, halved
1/2 lb brie cheese (rind removed, sliced) or 1/2 lb camembert cheese (rind removed, sliced)
1/4 cup grated parmesan cheese

Steps:

  • Heat oven to 450 degrees. Cut off thick stems from broccoli rabe, leaving only the florets with 2 inches of tender stems and any leaves attached. Heat oil in a large nonstick skillet over medium heat; add broccoli rabe, chorizo, shallots, and red pepper flakes. Saute 5 minutes or until broccoli rabe is crisp-tender. Remove from heat and let cool slightly.
  • Place flatbreads on a large baking sheet. Spread with pesto to within 1 inches of edges.
