1 cup milk or water
1 stick (8 tablespoons) unsalted butter
Pinch salt
Pinch sugar
1 cup all-purpose flour
1 cup (4 large) whole eggs
Warm Chocolate Ganache, recipe follows, for dipping, optional
1/2 cup toasted sliced almonds, for garnish, optional
1 cup chocolate chips
1/2 cup heavy cream

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium saucepan, combine the milk and butter, and bring to a boil over medium heat. Add the salt, sugar and flour, and stir vigorously with a heatproof spatula. Cook, stirring constantly, until a dense dough forms that pulls away from the side of the pan, about 3 minutes.
  • Add the dough to a stand mixer fitted with the paddle attachment. On low speed, beat in the eggs one at a time, scraping down the sides of the bowl between additions to make sure everything is evenly mixed.
  • Line a cookie sheet with parchment paper. Using a 1-ounce scoop, drop the dough, 1 inch apart, onto the prepared cookie sheet. Bake until puffed and golden, 35 to 40 minutes. (The puffs should feel light when you pick them up.) Make sure to keep the oven shut until at least the halfway point -- if you open the oven before 20 minutes have elapsed, the puffs will deflate and you won't be able to get the texture back. Remove the puffs from the oven and prick each one on the side to allow the steam to escape. Let cool completely.
  • To dip in chocolate: If desired, dip the tops of the puffs in Warm Chocolate Ganache, shaking off the excess. Place on a platter and sprinkle with sliced almonds. Let stand for about 30 minutes, to set the glaze, before eating.
  • Heat 1 inch or so of water in a medium saucepan over low heat. Put the chocolate chips and cream in a heatproof bowl that fits snugly into the saucepan without touching the water. Heat, stirring, until the chocolate melts and the mixture is smooth, about 5 minutes.

Steps:

  • Bring water to a boil with butter and salt in a 2-quart heavy saucepan over high heat, then reduce heat to moderate. Add flour all at once and cook, stirring vigorously with a wooden spoon, until mixture pulls away from side of pan, about 2 minutes.
  • Remove pan from heat and add eggs 1 at a time, stirring vigorously after each addition until mixture is smooth.
  • Preheat oven to 425°F.
  • Transfer dough to pastry bag and pipe mounds, 1/3 inch in diameter, about 1/2 inch apart on 2 greased large baking sheets. Gently flatten tips of mounds with a fingertip dipped in water. Bake, 1 sheet at a time, in middle of oven until golden brown and cooked through, 12 to 15 minutes.

Making pâte à choux is not difficult at all. It is simply a matter of bringing water and butter to a boil, then dumping in flour and stirring it until a mass forms, which takes only a minute or two. You let the steaming dough cool for a moment, then beat in a few eggs, one at a time. That's it.

1 stick unsalted butter (8 tablespoons, or 1/4 pound), in 1-inch chunks
1/2 teaspoon salt
1 cup all-purpose flour (135 grams)
4 whole eggs, and 1 egg lightly beaten for glaze
Pinch cayenne
Pinch freshly grated nutmeg
Black pepper, to taste
4 ounces grated cheese, like Comté or Gruyère

Steps:

  • Put butter and salt in medium saucepan with 1 cup water, and bring to a boil. Add flour, and stir with wooden spoon or sturdy whisk until mixture comes together, about 1 minute. Lower heat and cook for 1 minute more.
  • Transfer dough to bowl of stand mixer fitted with paddle attachment. Mix at medium speed to cool mixture slightly. Increase speed and begin to add eggs, one at a time. Make sure each egg is fully incorporated before adding the next. After fourth egg has been added, beat for a minute more, until dough is smooth and glossy. Stop machine, add cayenne, nutmeg, pepper and grated cheese, then mix briefly to combine. (If you don't have a mixer, you can also beat the dough vigorously by hand.) Scrape down sides of bowl and remix, then put mixture in pastry bag.
  • Heat oven to 425 degrees. Line two 12-by-18-inch baking sheets with parchment. On each sheet, pipe six rows of 1 1/2-inch-round mounds of dough, five to a row, with at least 1 inch of space between them. (If you prefer, use two soup spoons to put the dough on the sheet.) Brush each mound with beaten egg, smoothing the tops with a finger if not quite round.
  • Bake for 10 minutes, then reduce heat to 375 degrees. Continue baking for about 25 minutes, turning baking sheets as necessary, until mounds are puffed, golden and crisp. Serve immediately or cool on a rack and reheat later.

My mom made this dish once the entire time I was growing up and I remember the texture, the taste of the eggs (in a good way) and the perfect balance of textures and sweetness. I think I have been chasing that very cream puff ever since. I had some great ones in Paris but none quite like Mom's... Cream puffs are made from classic choux pastry, which is also used to make sweet éclairs and savory, cheesy gougères. The choux pastry gets its name from chou, meaning cabbage, and it refers to the round shape of this cream-filled pastry. Note about substitutions: If you don't have vanilla paste, simply sub 3 teaspoons vanilla extract.

3 tablespoons cornstarch

2 cups whole milk

  • Start the cream puff dough: In a medium saucepan, bring the milk, butter and salt to a simmer over medium heat. Add the flour and cook, stirring constantly with a wooden spoon, until the mixture comes together. Cook until the mixture starts to pull away from the sides of the pan into a ball and looks dry, 3 to 5 minutes more.
  • Finish the cream puff dough: Using a wooden spoon, beat in the eggs, one at a time, waiting until they are fully incorporated before adding the next. Mix until the batter is shiny and stiff. Alternatively, you can use a stand mixer fitted with a paddle attachment on medium-low speed to incorporate the eggs. Transfer the batter to a pastry bag fitted with a 1/2-inch round pastry tip.
  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Form and bake: On the prepared baking sheet, pipe rounds of dough that are 1 1/2 to 2 inches wide and about 1 inch high, allowing 1 inch between each. Alternatively, measure out a scant 1/4-cup dough for each puff. Wet your finger and press down any pointed tops on the cream puffs. Bake for 15 minutes. Lower the oven to 350 degrees F and bake until firm to the touch, another 15 to 20 minutes.
  • Finish baking: Shut the oven off. Let the puffs dry inside the oven for 10 minutes. Remove and let cool.
  • Assemble: Using a paring knife, hollow out a hole in the bottom of each of the puffs. Pipe the pastry cream into the hole. Alternatively, you can cut the top off each puff and remove any undercooked dough in the center, then fill with the pastry cream and top with the top again. Hold in the refrigerator until ready to garnish and serve.
  • Make the chocolate sauce: In a small pot, heat the cream. In a small bowl that fits over the pot of cream (without the bottom of the bowl touching the cream), combine the chocolate with the cinnamon. Use the pot of cream as the bottom of the double boiler and melt the chocolate over the cream. When the chocolate is melted, add the heated cream to the bowl with the chocolate and whisk to combine. Keep warm.
  • Top the cream puffs with a sprinkle of confectioners' sugar and some of the chocolate sauce.

Choux Pastry Cases (as used for Cream Puffs) filled with a coffee liqueur cream and topped with toffee and almonds. This is enough filling for 6 large or 12 small Choux Puffs. Use home made or store bought.

1/3 cup sugar
1 tablespoon flour
1 tablespoon cornflour
3/4 cup milk (divided)
1 tablespoon instant coffee powder

1/4 cup heavy cream

1 tablespoon toasted flaked almonds, for decoration

Steps:

  • Combine egg yolks, sugar, flour, cornflour and 1/4 cup of the milk in small bowl of electric mixer.
  • Beat until combined.
  • Combine remaining 1/2 cup of milk and coffee powder in saucepan and bring to the boil.
  • Gradually add this to egg mixture while continuing to beat on medium speed.
  • Once all is added and mixed in, pour mixture back into saucepan and stir constantly over heat until it boils and thickens.
  • Transfer to a bowl, cover and cool to room temperature.
  • Beat cream until soft peaks form, then lightly fold into the cold mixture.
  • Toffee:.
  • Combine sugar and water in a small saucepan and stir over heat without boiling until sugar is dissolved.
  • Bring to boiling point and boil rapidly, uncovered, without stirring for 5 minutes or until golden.
  • Remove from heat and use to top puffs.
  • PUFFS:.
  • Cut puffs in half and fill with the coffee cream.
  • Top with the toffee and place on the almonds.

Ok, this dessert is to die for, no kidding. Moist and sweet, full of sticky dates and lots of caramel flavour. The toffee sauce is it's crowning glory. DO please make it, but if you want you can just serve it warm with some cold vanilla ice cream melting over the top. (Make the sauce though....you won't be sorry you did!)

180 g dried dates, pitted, chopped
1 teaspoon baking soda
50 g unsalted butter
150 g brown sugar
2 eggs
180 g self raising flour, sifted
150 g brown sugar
250 ml cream (you can use the same amount of carnation light evaporated milk, undiluted, makes it a lot lower in f)
1/2 teaspoon vanilla essence
20 g unsalted butter

Steps:

  • Preheat oven to 180*C/375*F.
  • Combine dates and baking soda in a heatproof bowl.
  • Pour over 250ml of boiling water.
  • Set dates aside till room temperature.
  • Cream together butter and sugar in a large bowl till pale.
  • Add eggs one at a time, beating until smooth.
  • Fold in flour then stir in date mixture, including the water.
  • Pour mixture into greased and floured 8 inch deep cake pan and bake for 30-45 minutes until cooked through; set aside for a couple of minutes before turning out.
  • To make sauce, combine all ingredients over low heat, stirring until butter has melted.
  • Simmer for 5 minutes.
  • Serve hot!

Use an old-fashioned ketchup/mustard bottle to fill cooled puffs with whatever filling you choose (cool whip, pudding, creme anglaise, etc...) I used Dancer's No-Fat Chocolate sauce to drizzle on top. They're like mini-eclairs.

So I came up with a recipe that I could serve as a dessert. On the plate with its mysterious dark softness and rolled scoop of vanilla icecream and accent of finely chopped lime zest It looks as though it comes straight out of Marie Claire!

2 cups sugar
2 cups all-purpose flour
1/4 cup cocoa
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
2 large eggs
1 cup milk
1 teaspoon cider vinegar
1 cup black coffee
1/2 cup canola oil
1 teaspoon vanilla extract
3 bananas (the closer to being rotten the better)
50 g dark chocolate (Lindt 70% Dark is best)
50 g dark chocolate (Lindt chilli chocolate)
1 lime (juiced)
1 teaspoon lime (zest of)
1/4 cup sugar (extra)
2 tablespoons water
ice cream (for serving)

Steps:

  • Preheat oven to 180 degrees Celcius.
  • Grease and place grease-proof paper in one 13 x 9 inch baking pan.
  • Melt the chocolate in a double boiler or use a small dish standing in a saucepan of boiling water that comes half way up the sides on low heat.
  • Mash the bananas on a plate.
  • In a large bowl mix together flour, sugar, cocoa, baking soda, salt and baking powder.
  • In a separate bowl mix together milk, eggs, coffee (2 tsps to one measuring cup of boiling water, don't use your favourite coffee cup !), oil, vanilla and cider vinegar.
  • Add the milk mixture, the mashed banana and the melted chocolate to the flour mixuture stirring thouroughly with a wooden spoon until combined. The batter will be thin.
  • Pour into prepared pan.
  • Bake until top of cake springs back when pressed and cake tester inserted comes out clean. (About 35 - 40 minutes.).
  • Let cool then turn out onto wire rack.
  • Delicate Lime Toffee Sauce.
  • Put water and extra sugar in saucepan and melt on a low heat.
  • Turn heat up to medium and cook until sugar reaches soft crack stage. (drip a little of syrup into cold water, if it sets firmly but doesn't quite break with a snap its ready) (About 5 - 6 minutes).
  • Stir in the lime juice and cook for 30 seconds to 1 minute then remove from heat.
  • To serve cut cake into 4 inch squares, one per person. Place on dessert plate with one rolled scoop of vanilla icecream. Pour a little lime sauce over icecream and half of the slice of cake. Decorate with lime zest to garnish.

1/2 cup (1 stick) unsalted butter
1 teaspoon sugar
1/2 teaspoon salt
1 cup all-purpose flour
5 large eggs, plus 1 more, lightly beaten, if needed for dough

Steps:

  • Preheat oven to 400 degrees. Heat 1 cup water, the butter, sugar, and salt in a medium saucepan over medium-high heat, stirring occasionally, until butter has melted and mixture is boiling. Remove from heat. Using a wooden spoon, stir in flour. Return to medium heat; cook, stirring constantly, until mixture pulls away from sides and a film forms on bottom of pan, about 4 1/2 minutes.
  • Transfer mixture to the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until slightly cooled, about 2 minutes. Raise speed to medium. Add 4 eggs, 1 at a time, mixing until incorporated after each addition. Batter should be shiny. Test batter by touching it with your finger and lifting to form a string. If a string does not form, mix in another egg a little at a time. If a string still doesn't form, add water 1 teaspoon at a time until it does.
  • Transfer to a pastry bag fitted with a 1/2-inch plain round tip (such as Ateco #806). Pipe 1-inch rounds onto baking sheets lined with parchment paper, spacing 1 inch apart. Whisk remaining egg and 1 teaspoon water in a small bowl; brush over tops of rounds
  • Bake until rounds are puffed and pale golden, about 10 minutes. Reduce oven temperature to 350 degrees. bake until golden, 20 to 25 minutes more. Turn off oven, and prop open oven door with a wooden spoon to release steam; let puffs dry 15 minutes. Using a spatula, transfer to a wire rack; let cool completely. Puffs can be refrigerated in an airtight container up to 1 day or frozen up to 1 month.

The batter for these French puffs is made on the stovetop, then shaped and baked until the eggy mounds balloon into airy, hollow spheres. The puffs take to all sorts of fillings, from simple whipped cream (page 239) to scoops of ice cream, as for Anise-Orange Ice Cream Profiteroles with Chocolate Sauce (page 172). No special equipment is required to make them, and they come together with ingredients you probably already have on hand. A few things to keep in mind: Measure the ingredients carefully-too much liquid results in flat puffs. Dump in the flour just when the butter is melted; if you wait too long, too much of the water will cook off. The finished batter should be thick and shiny and should stick to the spatula when you lift it. Finally, be sure to bake the puffs until they're deep golden brown all the way around. If they're underbaked, they may collapse cooling; the darker color means the puffs will stay crisper, too.

Yield makes 25 to 30 pastries

1 cup (140 g) all-purpose flour

1 large egg yolk
1 teaspoon whole milk

Steps:

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a medium saucepan, bring the water, butter, sugar, and salt to a boil over medium-high heat, stirring gently to encourage the butter to melt. As soon as the mixture begins to boil, add the flour all at once and stir rapidly with a spatula until the mixture forms a thick paste and pulls away from the sides of the pan.
  • Remove from the heat. Wait for 2 minutes, stirring the paste a couple of times to cool it slightly, then vigorously beat in the eggs one at a time, making sure each one is completely incorporated before adding the next. (I do this by hand, but some folks prefer to use a stand mixer fitted with the paddle attachment.)
  • Using a pastry bag fitted with a plain 1/2-inch (1-cm) tip, pipe the choux paste into mounds 1 1/2 inches (4 cm) high on the prepared baking sheet, spacing them 3 inches (8 cm) apart. Or, use 2 teaspoons to drop the paste into mounds.
  • If you want puffs with a shiny glaze, in a small bowl, whisk together the egg yolk and milk and brush the tops of the puffs without letting the glaze drip down the sides, which will inhibit rising.
  • Bake until the puffs are golden brown on the tops and sides, 25 to 30 minutes. Turn off the oven and let them rest in the oven for 5 minutes. Remove from the oven and poke each puff in the side with a paring knife so that it releases its steam. Let cool completely.
  • Pâte à choux puffs can be stored at room temperature for several hours. I prefer not to freeze them because there is a noticeable difference in quality between fresh and frozen puffs, but if you have leftovers, you can freeze them for up to 1 month and recrisp them in a low oven before serving.
