My grandmother got this recipe from a friend over 30 years ago, and I have made additions to it. It's delicious! Serve over cooked white rice or crisp noodles.

¼ cup butter
½ cup chopped mushrooms
2 cups chopped celery
2 onions, chopped
¼ teaspoon garlic powder
2 ½ cups chicken broth
1 (15 ounce) can baby corn
½ cup green beans
2 teaspoons soy sauce
2 tablespoons cornstarch
⅓ cup cold water
3 cups cooked, cubed chicken meat

Steps:

  • In a wok or skillet, melt butter or margarine over medium heat. Add mushrooms, celery, onions and garlic powder; cook until the onions have wilted. Add chicken broth and baby corn. Continue cooking until celery is cooked but still crisp. Stir in the green beans or bean sprouts and soy sauce.
  • Mix cornstarch and water together in a small bowl. Slowly stir into vegetables. Sauce should start to thicken a little. Mix in chicken, and heat through.

1 tablespoon peanut oil
1 carrot, julienned
1/2 head napa cabbage, sliced thin
1/2 onion, sliced
1/4 cup chicken broth
1/4 cup low-sodium soy sauce
1 teaspoon sesame oil
Sliced green onions, for topping

Steps:

  • Bring a pot of water to a boil and cook the noodles according to the package directions. Drain and set aside.
  • Heat a skillet over medium-high heat and add the peanut oil. Add the carrots, cabbage and onions and cook for 1 minute. Add the chicken broth, soy sauce and sesame oil, then toss in the noodles. Top with sliced green onions.

1 medium onion, chopped
1 bunch celery, sliced
2 cans (14 ounces each) Chinese vegetables, drained
2 envelopes brown gravy mix
2 tablespoons soy sauce
Hot cooked egg noodles or rice

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 3-qt. slow cooker. Stir in the celery, Chinese vegetables, gravy mixes and soy sauce. Cover and cook on low until celery is tender, 4-6 hours, stirring occasionally. Serve with noodles.

225g dried or fresh egg noodles
1 tbsp sesame oil, plus 1 tsp
100g boneless, skinless chicken breasts, cut into fine shreds
2½ tbsp groundnut oil
2 garlic cloves, finely chopped
50g mangetout, finely shredded
50g prosciutto or cooked ham, finely shredded
2 tsp light soy sauce
2 tsp dark soy sauce
1 tbsp Shaohsing rice wine or dry sherry
½ tsp freshly ground white pepper
½ tsp golden caster sugar
2 spring onions, finely chopped
2 tsp light soy sauce
2 tsp Shaoxing rice wine or dry Sherry
1 tsp sesame oil
½ tsp freshly ground white pepper

Steps:

  • Cook 225g egg noodles in a large pan of boiling water for 3-5 mins, then drain and put them in cold water. Drain thoroughly, toss them with 1 tbsp sesame oil and set aside.
  • Combine 100g chicken breasts, cut into fine shreds, with 2 tsp light soy sauce, 2 tsp Shaohsing rice wine or dry sherry, 1 tsp sesame oil, ½ tsp white pepper and ½ tsp salt for the marinade, mix well and then leave to marinate for about 10 mins.
  • Heat a wok over a high heat. Add 1 tbsp groundnut oil and, when it is very hot and slightly smoking, add the chicken shreds.
  • Stir-fry for about 2 mins and then transfer to a plate.
  • Wipe the wok clean, reheat until it is very hot then add 1½ tbsp groundnut oil.
  • When the oil is slightly smoking, add the 2 finely chopped garlic cloves and stir-fry for 10 seconds.
  • Add 50g finely shredded mangetout and 50g finely shredded prosciutto, and stir-fry for about 1 min.
  • Add the noodles, 2 tsp light soy sauce, 2 tsp dark soy sauce,1 tbsp Shaohsing rice wine or dry sherry, ½ tsp white pepper, ½ tsp golden caster sugar, 2 finely chopped spring onions and 1 tsp salt.
  • Stir-fry for 2 mins. Return the chicken and any juices to the noodle mixture. Stir-fry for about 3-4 mins or until the chicken is cooked.
  • Add 1 tsp sesame oil and give the mixture a few final stirs. Put on a warm platter and serve immediately.

3 tablespoons plus 2 teaspoons soy sauce
5 teaspoons cornstarch
3 tablespoons Shaoxing rice wine
1 tablespoon sugar
1 cup low-sodium chicken broth
8 ounces boneless skinless chicken thighs, cut into 1/2-inch pieces
Kosher salt
1/2 cup vegetable oil
6 ounces Hong Kong chow mein noodles
6 fresh shiitake mushrooms, stemmed and caps cut into 1/4-inch strips (or dried shiitake mushrooms, soaked and cut into 1/4-inch strips)
3/4 cup julienned carrot
1 cup chopped Chinese broccoli
3 tablespoons julienned peeled ginger (from a 3-inch piece)
2 large cloves garlic, minced (4 teaspoons)
1 cup mung bean sprouts
1 teaspoon toasted sesame oil

Steps:

  • Whisk 3 tablespoons soy sauce into cornstarch in a small bowl. Whisk in 2 tablespoons wine, sugar, and broth. Season chicken with salt and remaining 2 teaspoons soy sauce and 1 tablespoon wine.
  • Heat a 10-inch cast-iron skillet over medium-high and add 1/4 cup oil; heat until shimmering. Add noodles and flatten to an even layer. Reduce heat to medium and cook 1 minute. Add 1/3 cup water and cook, pushing edges in with a spatula to shape into a more compact disc, until golden brown and the entire thing holds together like a mat, 4 to 5 minutes more. Carefully slide a spatula underneath and flip over. Drizzle 2 tablespoons oil around edges of pan. Cook until crisp on the second side, 2 to 4 minutes. Transfer to serving plate.
  • Return pan to medium high-heat, add chicken, and cook until golden brown on one side, 1 to 2 minutes. Toss and cook until almost cooked through, about 1 minute more. Remove from pan. To the pan, add 2 tablespoons oil and mushrooms and cook until tender, about 2 minutes. Add carrots and Chinese broccoli. Toss 1 minute. Add ginger and garlic and cook until fragrant, about 1 minute. Stir sauce to recombine, then add to pan and bring to a boil. Add chicken and toss to combine. Stir in sprouts and sesame oil. Serve over crispy noodles.

2 tablespoons oil
1 medium onion, diced
500 g lean ground beef
1/2 large cabbage, finely sliced
3 celery ribs, finely sliced
2 medium carrots, cut into matchstick sized pieces
250 g frozen green beans
2 (40 g) packets chicken noodle soup
2 1/2 cups water
2 teaspoons curry powder
2 tablespoons tomato sauce (ketchup)
2 tablespoons soy sauce

Steps:

  • Heat the oil in a large wok or saucepan over medium heat.
  • Add the onion and cook until softened.
  • Add the meat, and cook until the meat changes colour.
  • Now add the remaining ingredients, and stir well.
  • Bring to the boil, then simmer for about 30 minutes or until the vegetables are well cooked, stirring occasionally.
  • Serve in deep bowls over steamed rice.
  • *This is a really old fashioned dish, and I like it well cooked, not crispy like modern Chinese food.
  • It's even better reheated the following day.

3 ounces thin egg noodles (1-2 packages regardless of oz, steamed)
3/4 cup corn oil or 3/4 cup vegetable oil
1 cup marinated beef (or pork, chicken, shrimp, etc)
1 sliced round onion
1 minced garlic clove
4 celery ribs (diced)
bean sprouts
1 (16 ounce) can chicken stock
8 3/4 ounces sliced button mushrooms (small can)
8 3/4 ounces sliced bamboo shoots (small can)
8 3/4 ounces sliced water chestnuts (small can)
2 tablespoons cornstarch
1 pinch baking soda
1/2 teaspoon sherry wine
2 tablespoons oyster sauce
2 tablespoons soy sauce
1 teaspoon sugar
1 teaspoon dark sesame oil

Steps:

  • Marinate selected meat(s) with 1 tsp of corn starch, ½ tsp of sherry, ½ tsp of soy sauce, garlic, and a pinch of baking soda.
  • Set aside for 15 minutes or longer.
  • Heat wok or large pot with ¾ - 1 cup corn or vegetable oil until smoking.
  • Pan fry fresh noodles until crispy golden brown and set aside in a serving container or platter.
  • Sear meat(s) and set aside with noodles for later.
  • Add a little oil to the wok (approx. 2 tablespoons) and stir fry veggies except for the bean sprouts.
  • Mix chicken stock with corn starch to thicken sauce and add rest of the ingredients.
  • Either mix noodles with the thickened sauce or serve over the fried noodles (Hong Kong Style).
  • Flavor with sesame oil and garnish with cilantro for presentation.
  • Noodles are available as packaged fresh thin "steamed" egg noodles in Asian markets not to be confused with the thin "egg noodle balls" for won ton soups.
  • The latter tends to get gooey and starchy when using "lower heat temperatured" home stoves.
