CHRISTINA'S FRESH GUACAMOLE

Christina's Fresh Guacamole image

Spicy and cooling...nothing beats the fresh taste of homemade guacamole....One of the favorites at our house!!

Provided by Christinas Kitchen

Categories     Low Protein

Time 5m

Yield 4-6 serving(s)

Number Of Ingredients 8

5 -6 ripe avocados
1 small red onion
2 limes, freshly squeezed
1 -2 jalapeno
1 cup chopped cilantro
salt
fresh ground pepper
hot sauce

Steps:

  • Mash up avacados in a bowl, make them as smooth or as chunky as you like. (We like it fairly chunky).
  • Peel and dice red onion.
  • Chop up fresh Cilantro, stems and all.
  • Dice jalepeno(s), de-seed if desired *Remember that the seeds give more heat* I leave them in because we love our mexican food spicy!
  • Add everything into a large bowl and stir, add in salt and freshly ground black pepper to tase, add the juice of the two limes.
  • Stir to combine, taste to see if it is hot, salty or sour enough, adjust to your taste, if you want more heat add the hot sauce -- once it is to your liking cover with plastic wrap and put in the fridge untill you are ready to serve.
  • This goes well with my salsa recipe, and tastes great with tacos, burrito's, nachos, tortilla chips or even carrot and celery sticks.

CALIENTE CHRISTMAS SALSA

Caliente Christmas Salsa image

This is a salsa with vibrant colors and even more vibrant flavors! It utilizes authentic ingredients that are all adjustable to suit individual tastes! If fresh cactus is not available, canned cactus may be substituted. The final mixture will be a variegated red and green and will be quite wet. This is a delicious and spicy salsa that, when bottled, makes a nice gift!

YUMMY FRESH SALSA

Yummy Fresh Salsa image

In my household we are huge salsa fans! We eat it on just about everything! We love the salsa they serve in the Mexican restaurants. We set out to make up our own recipe. It is not exactly like the restaurants. It is better smooth and chunky together. My husband and I enjoy making this salsa together. It is an awesome fresh...

Time 1h

Number Of Ingredients 6

8 tomatoes, fresh roma
1 onion, large
2 jalapenos, fresh
1 bunch cilantro, fresh
pinch salt, to taste
3 clove garlic

Steps:

  • 1. In a medium size pot boil jalapenos(break off stem) until light in color add half of the tomatoes and boil until tomatoes appears soft.
  • 2. In a blender add 1/4 bunch of cilantro(stems trimmed), half a sliced onion, garlic and the cooked tomatoes and jalapenos. Blend until smooth.
  • 3. Chop 1/2 of remaining cilantro finely. Chop remaining tomatoes, and other half of onion.
  • 4. Place chopped vegetables in large bowl and add blended vegetables. Salt to taste. Refrigerate until cool and ready to use.
  • 5. TIPS ~ If salsa is to spicy boil another tomato and blend and chop another tomato and add to the bowl. You could also just add some tomato sauce. Not spicy enough either boil another Jalapeno and blend or chop up a jalapeno and add it fresh. Too soupy add more chopped vegetables.
  • 6. The best thing about this salsa is you can adjust the ingredients to how you like. For an extra treat add some diced avocados. Serve with tortilla chips and enjoy!
