EASY SLOW COOKER HAM



Easy Slow Cooker Ham image

This recipe has become, hands-down, my favorite ham! This has replaced our Christmas Ham and makes the entire house smell amazing! There is nothing like coming home with this ham cooking! Experiment with the amounts of seasonings to your liking. I prefer more nutmeg but some prefer less nutmeg and more maple syrup!

1 (6 pound) bone-in country ham
30 whole cloves
3 cups apple cider, or as needed
1 cup brown sugar
1 cup maple syrup
2 tablespoons ground cinnamon
1 tablespoon ground nutmeg
2 teaspoons ground ginger
2 tablespoons ground cloves
1 tablespoon vanilla extract
1 orange's peel

Steps:

  • Press whole cloves into the ham so they are evenly distributed. You may score the ham for easier insertion if you wish. Place the ham in a slow cooker. Pour in apple cider until only about 2 inches of ham is above the surface. Pack the brown sugar on top of the ham, pressing into the cloves. This will get washed away in the next step but any that stays on is a bonus.
  • Pour the maple syrup over the ham. Season the apple cider with cinnamon, nutmeg, ginger, ground cloves and vanilla. Add the orange peel to the pot. Fill the slow cooker as full as you can with apple cider without going over the fill line. Cover and set to Low. Cook for 8 to 10 hours.

6 -7 lbs smoked pork shoulder or 6 -7 lbs picnic ham
1/4 cup honey
1/4 cup spicy brown mustard
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 orange, juice of
1 lemon, juice of
1 lime, juice of
1 cup ginger ale

Steps:

  • Use a 6-quart slow cooker. Unwrap the ham, and discard the flavor packet. Place the ham into your insert (flat side down).
  • In a small mixing bowl, combine the honey, mustard, ginger, cloves, and cinnamon. Smear this paste evenly all over the ham. You can even do this the day before, if you'd like, to let the flavors meld, although it isn't necessary.
  • Pour the juice and add the last little bit with the pulp into the sauce bowl and swirl it around to get all of the "good stuff" out of the bowl. Pour ginger ale evenly over the top. Cover, and cook on low for 6-8 hours, or on high for about 3 hours. (If using using spiral cut ham without the bone, it's better to cook it no more than 6 hours).
  • Your ham can sit in the slow cooker for quite a while on the warm setting before carving, or you can take it out, carve it into pieces, then return it to the pot to stay warm in the yummy sauce until you and your guests are ready to eat.

  • Cut the onion in half and place both pieces on the bottom of the slow cooker. Sit the gammon on top of the onions, fat side up. This will prevent it sticking as it cooks. Pour in the apple juice and add the peppercorns, cloves, star anise and bay leaves. Cook on low for 6-8 hours, depending on how crumbly you want your ham to be.
  • Prepare the salad by chopping the red cabbage, apples and spring onions into small pieces. Add the grated carrot and pomegranate seeds and mix well. Make the dressing by mixing the cider vinegar, olive oil, lemon juice and salt and pepper together in a lidded jar or bottle and shake well. Add the dressing to the salad just before serving.
  • When the ham has cooked remove it from the slow cooker and rest it on a plate for a few minutes to allow the liquid to drain away. Preheat the oven to 220c and double line a baking tin with foil (don't skip this as the honey glaze will burn into your baking tray and it's a nightmare to get off!)
  • Transfer the ham to the lined tray. Remove the skin with a sharp knife leaving a layer of fat on top. Score the fat and stud it with whole cloves.
