- Preheat oven to 375 degrees. Melt butter in a large skillet over medium-high. Add leeks, carrots, thyme, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Cook, stirring occasionally, until vegetables have softened, about 5 minutes. Sprinkle with flour; cook, stirring, 1 minute. Whisk in broth and add potato. Bring to a boil, then reduce heat and simmer, partially covered and stirring occasionally, until potato is tender and mixture has thickened, 6 to 7 minutes. Add turkey. Let cool about 30 minutes.
- On a lightly floured surface, roll dough into a 15-inch round; fit into a deep-dish pie dish. Add stuffing and dollop with half of cranberry sauce, then add turkey mixture. Fold dough over, leaving center exposed. Brush dough with egg; bake 40 minutes. Dollop top with remaining cranberry sauce; bake until bubbling in center and bottom of crust is golden, 30 to 40 minutes more. (If browning too quickly, tent with foil.) Let cool at least 30 minutes before serving.

Steps:
- Preheat the oven to 400°F
- Heat the oil and butter in a large saucepan and fry the onions for 8-10 minutes until golden and softened.
- Stir in the cooked turkey, thyme, Cranberry Sauce, crème fraiche, Dijon mustard and cornstarch mixture and simmer for 5 minutes until thickened. Season to taste.
- Unroll the pastry on a lightly floured surface and turn a 60oz oval pie dish over onto the pastry. Cut around the rim and then cut another oval about 1in all the way around away from the rim.
- Turn the pie dish over and wet the rim of the dish. Lift the 1in thick oval strip and arrange over the rim of the dish (cutting to fit if necessary). Brush the strip with beaten egg. Spoon the pie filling into the dish alternatively with the stuffing balls and vegetables.
- Lift the oval of puff pastry over the pie dish and press the edges together to seal. Brush with beaten egg.
- Cut and twist any leftover pastry if liked into strips and arrange over the top of the pie in a lattice pattern. Brush with beaten egg, scatter with Parmesan, salt and thyme leaves. Bake for 35-40 minutes until crisp and golden brown.

Steps:
- Preheat oven to 350 degrees. In a 9- to 10-inch pie plate, mound stuffing on bottom; layer with cranberry sauce, turkey, and carrots. Drizzle with gravy; spread potatoes over surface to sides of dish. Top with more cranberry sauce, if desired.
- Place pie on a baking sheet, and bake until heated through and potatoes are golden, 35 to 40 minutes. Let cool slightly.
HOLIDAY LEFTOVERS POT PIE
I made this yummy potpie recipe this year after Christmas to use up leftover veggies and turkey. We devoured this so fast and it was very easy. I used prepared pie pastry from the store...knowing that I would not want to fuss with a homemade pastry right after the holidays. Next time, I might plan ahead and make an extra pastry when making holiday pies, wrap it and store for making this recipe. PLEASE NOTE: The cook time is accurate, having made this several times now. Baking time may vary slightly depending upon the type of pie pastry you have used.

- Line a deep dish pie plate (10") with pie pastry and set aside.
- Preheat oven to 425°F Have ready a cookie sheet lined with foil (you will set this on the rack below your pot pie to catch any drips).
- In a medium saucepan, melt the butter over medium heat; Whisk in the flour (it will look dry) until combined.
- Slowly add some of the chicken stock, whisking to blend well, then adding a bit more, repeating until all is added.
- Next whisk in the milk, also whisking in and blending well slowly.
- Cook, whisking occasionally until somewhat thickened,raising heat slightly if needed, approximately 10-15 minutes.
- Add the cooked meat, vegetables,salt, peppers, cooking about 3 minutes until heated through, stirring, test for seasonings, adding more salt or pepper if needed.
- Pour into the pie pastry lined pan.
- Now you have a choice on how to top this:.
- Choice #1: Roll out the second piece of pie pastry and top the pie, sealing edges, and use a knife to cut out a hole the size of a small coin in the center of the pastry, as well as five vent slits around the pastry.
- Choice #2: The original recipe suggested using a cookie cutter to cut out 12 leaf shapes out of the top crust and then placing the leaf shapes on top of the pie (instead of having a full top crust) -- up to you if you wish to make it look "fancy" or not.
- Bake uncovered for 12-15 minutes or until crust is golden and the filling has begun to bubble (if the crust is done, its finished).
- Let cool a bit before serving.
- This will be served scooped out with a spoon; don't expect to be able to cut this into neat, firm pieces; the filling is very saucy.

- In a skillet, saute carrots, onion, celery, thyme and pepper in butter until vegetables are crisp-tender. In a large resealable plastic bag, combine turkey and flour; shake to coat. Add turkey, soup and green beans to the vegetable mixture; mix well. Line a 9-in. pie plate with bottom crust. Add turkey mixture. Roll out remaining pastry to fit top of pie; seal and flute edges. Cut slits in pastry. Brush with milk. Cover edges loosely with foil. Bake at 350° for 55-65 minutes or until golden brown. Serve warm.
