ROASTED PEPPER AND EGGPLANT MARINARA

2 large red bell peppers
1 large Fresno chile pepper or Holland chile pepper
1 large head garlic
Sprig fresh rosemary, leaves picked and finely chopped
1 medium-large firm eggplant
Extra-virgin olive oil, for brushing eggplant
Salt and freshly ground black pepper
2 cups chicken stock
1 (28-ounce) can Italian tomatoes
2 fresh basil leaves, torn
Sprig fresh oregano, leaves picked and finely chopped
1 pound long fusilli pasta
Grated Pecorino cheese
Fresh flat-leaf parsley, leaves picked and chopped

Steps:

  • Char the skins of sweet and hot peppers to black under a broiler with oven door slightly ajar, to prevent steam build up or place directly over stovetop flame. Cover the charred peppers and cool, peel, and seed. Reserve.
  • Preheat the oven to 425 degrees F.
  • Cut head garlic to expose the cloves, dress in extra-virgin olive oil and season with salt and pepper. Press the garlic into the chopped rosemary and coat the cut cloves. Wrap the garlic up in foil and roast 40 to 45 minutes, until soft but still moist.
  • Halve the eggplant lengthwise and brush with extra-virgin olive oil. Season the eggplant with salt and pepper and place cut-side down on baking sheet and roast to very tender, 30 to 40 minutes. Cool the eggplant until easy to handle, then scoop the flesh away from skins and add to a food processor with roasted garlic and roasted sweet and hot peppers, then puree.
  • In saucepan, heat the stock and tomatoes. If the tomatoes are whole, break them up. Stir in the eggplant-pepper mixture and add basil and oregano, salt, and pepper, to taste.
  • Simmer sauce to combine flavors then cool and store for make-ahead meal.
  • Reheat over medium heat.
  • Boil long, curly pasta in salted water to al dente, toss the pasta with sauce and serve with cheese and a sprinkle fresh parsley.

This sauce is perfect over seafood, grilled or roasted chicken and turkey, broiled flank steak, and roasted vegetables; it's also amazing with pasta. Try substituting an equal amount of oil-packed sun-dried tomatoes for the roasted red peppers.

1 cup roasted red peppers (from water-packed jar)
1 cup reduced-sodium vegetable or chicken broth
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1/4 cup fresh basil leaves
Salt and freshly ground black pepper

Steps:

  • In a blender, combine the red peppers, broth, vinegar, and oil and process until smooth. Transfer mixture to a small saucepan and set over medium heat. Bring to a simmer, partially cover, and simmer for 10 minutes. Remove from the heat and stir in the basil. Season, to taste, with salt and pepper. Let come to room temperature and store in a plastic container in the refrigerator for up to 1 week or in the freezer up to 3 months.

This is a nice recipe for when you are in the mood for marinara, yet want something a little different. This does make a lot of sauce - we like that, but if you don't you might want to add more pasta. When I made this I used whole wheat rontini instead of penne, and I increased the red pepper flakes. 1 1/2 cups onions, finely chopped
4 garlic cloves, minced
2 cups roasted red peppers, coarsely chopped
1 tablespoon dried basil
3/4 teaspoon sugar
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
2 (14 1/2 ounce) cans diced tomatoes, undrained
2 tablespoons olive oil
3 cups uncooked penne (cooked according to package to make about 6 cups)

Steps:

  • Place a large nonstick skillet coated with cooking spray over medium-high heat.
  • Add onion and garlic; sauté for 6 minutes or until tender.
  • Add bell peppers and the next 5 ingredients (bell peppers through tomatoes); bring to a boil.
  • Reduce heat, and simmer for 20 minutes, stirring occasionally.
  • Remove from heat; stir in oil.
  • Serve over pasta.

8 tablespoons olive oil, plus more for baking sheet
8 ounces plum tomatoes, quartered lengthwise
1 red bell pepper (12 ounces), quartered lengthwise and seeded
4 medium cloves garlic
Sea Salt and freshly ground pepper
1 tablespoon finely chopped fresh thyme leaves
1 tablespoon red wine vinegar

Steps:

  • Preheat oven to 425 degrees. Lightly oil a baking sheet. Combine the tomatoes, red pepper, and garlic on prepared baking sheet. Drizzle with 6 tablespoons oil. Sprinkle with salt and pepper; toss to combine. Roast until vegetables are soft, and brown around the edges, 45 to 50 minutes. Squeeze garlic pulp from skins; discard skins.
  • Transfer vegetables to the bowl of a food processor. Process until smooth.
  • Heat remaining 2 tablespoons oil in a medium saucepan over low heat. Add vegetable mixture, thyme, and vinegar and cook until heated through. Taste and adjust for seasoning.

2 white onions, diced
8 cloves garlic, minced

1 cup dry white wine

½ teaspoon salt
½ teaspoon white sugar

3 bay leaves
1 cup freshly grated Pecorino-Romano cheese, divided
¾ cup chopped fresh basil

Steps:

  • Heat olive oil in a large Dutch oven or heavy pot over medium heat; cook and stir onions for 5 minutes. Add garlic and cook, stirring occasionally, until onions are translucent, about 5 minutes more.
  • Mix petite diced tomatoes, diced tomatoes, white wine, tomato paste, oregano, salt, sugar, black pepper, red pepper flakes, and bay leaves into onion mixture; reduce heat to low, cover Dutch oven, and simmer, stirring occasionally, until flavors blend, about 1 hour.
  • Remove Dutch oven from heat. Add 1/2 cup Pecorino-Romano cheese, basil, and parsley into into sauce; stir until cheese melts, about 5 minutes. Discard bay leaves. Sprinkle remaining cheese over sauce when serving.
