CHUCK'S MOLASSES FRENCH TOAST
The molasses in the batter gives this version of the classic breakfast food a caramel coating that is quite delicious. This one also proves to be a great way to use up the left over Challah from Shabbat on a Saturday morning.

Steps:
- Beat together the eggs, molasses, cream, vanilla, ginger, and cinnamon in a bowl until smooth. Dip the challah slices in the batter until coated on all sides.
- Melt half of the butter in a large skillet over medium heat. Place half of the challah slices into the pan, and cook until golden brown on each side, about 3 minutes per side. Repeat with remaining butter and challah slices.

RUSTIC BREAD
This simple yet delicious loaf from baker Adam Leonti of Brooklyn Bread Lab relies on an overnight rest and fresh cake yeast to develop some of the sour, tangy flavor and chewy texture of sourdough bread with a much more streamlined process.

- Using your hands, mix bread flour, salt, yeast, and 2 cups (450 grams) room-temperature water in a medium bowl. Lightly knead, grabbing corners of dough, gently pulling upward, and pushing toward the center, until dough comes together. Dust another bowl with all-purpose flour and transfer dough to bowl. Cover with plastic wrap and chill 12-18 hours.
- Turn out dough onto a lightly floured work surface, dust with flour, and press into a 8x5" rectangle. Fold rectangle in half lengthwise, then roll up tightly at narrow end (like a burrito). Place both hands on top of dough; working against friction of work surface, pull gently down toward yourself to create a rounded boule shape.
- Transfer dough to a lightly floured parchment-lined rimmed baking sheet and cover loosely with a clean flour-dusted towel. Let rise at room temperature 4 hours, or chill 6-12 hours.
- One hour before baking, arrange rack in middle of oven; preheat to 500°F. After dough has risen, slash dough with a razor blade or very sharp knife in 3 parallel slits at least 1/4" deep. Transfer baking sheet to oven, reduce oven temperature to 450°F, and bake bread until crust is very brown and an instant-read thermometer registers 190-200°F, 30-40 minutes. Let cool before slicing, about 2 hours.
CHUCK'S CRAB CAKES
You're sure to impress with Chuck Hughes' easy crab cakes served with a side of spicy mayo.

- Preheat the oven to 350 degrees F.
- For the crab cakes: In a large bowl, combine the crab, crackers, mayonnaise, chives, mustard, lemon zest and egg. Mix together well. Form palm-sized cakes and place them on a baking tray covered with parchment paper. In a pan, heat the olive oil over medium-high heat and cook the crab cakes in batches, about 2 minutes on each side. Put them back on the baking tray and in the oven for 10 minutes.
- For the spicy mayo: Using a blender or food processor, beat the egg with the Dijon mustard and red wine vinegar. Slowly add the canola oil until the mixture starts to emulsify and becomes very creamy in texture. Add water if necessary to make a thinner texture. Add the sriracha sauce. Continue to process for 1 minute. Season with salt and pepper.
- When ready to serve, garnish the crab cakes with a dollop of spicy mayo.

CHUCK HUGHES' NO KNEAD BREAD
From the TV series "Chuck's Day Off", this bread is easy to prepare and the end product is delicious. I made both loaves sprinkled with Montreal steak spice before baking but you can make a sweet version by sprinkling with raw sugar or do one of each.

Steps:
- Mix together in a large bread-making bowl the water, yeast and sugar.
- Allow this mixture to bubble and foam, then add the oil and vinegar.
- Add the bread flour cup by cup, stirring well after each addition.
- Then add the salt and the whole wheat flour, cup by cup, stirring well after each addition. The dough will be a bit wet and spongy.
- Cover with a damp tea towel and let rise in a warm place for 30 to 40 minutes or until the dough has doubled in size.
- Using a big spoon, spoon the dough into 2 well-greased loaf pans. If necessary, press the sides down, helping to create the perfect loaf shape.
- With a knife, make 2 or 3 diagonal shallow incisions in the loaves.
- Sprinkle with either the steak spice or raw sugar, depending upon whether you want sweet or savoury.
- Bake the loaves about 50 minutes at 375 degrees F or until they are golden brown and crusty on top and sound hollow when tapped on the underside.
- Let cool at least 5 to 10 minutes before slicing.

- 1. Place olive oil in large pot, heat on stove until very hot 2. Drop the smashed garlic cloves into the hot oil Note: Cook the cloves of garlic until golden in color. Important that you do not burn the garlic as this will ruin the taste. Remove the cloves from the oil 3. While the oil is hot, add the onions and cook for a minute or two 4. Add the basil, oregano and thyme and cook for another minute 5. Add the celery and cook until translucent in color 6. Add the finely chopped tomatoes and cook for about 45 minutes or until oil appears above tomatoes 7. Add water, fish, clam base and cook for 1/2 hour uncovered at full heat. (Reason for this to remove moisture and concentrated fish bacteria and to extract oils for flavoring the chowder) 8. Add salt; cover the pot and keep cooking for another 45 minutes to 1 hour at low heat. 9. Stir often to break up fish and blend flavor 10. When serving add the chopped parsley. When chowder is finished remove any excess oils that may come to the surface
CHUCK MUER'S HOUSE BREAD

- Directions: 1. In a bowl, sprinkle yeast on top of warm water (110 degrees). When yeast has dissolved and starts to form bubbles, add sugar, salt and oil. Mix well. 2. Using an electric mixer or food processor on low speed, mix in the 4 cups of bread flour. As the ingredients combine, the dough should become soft. If it is sticky, add a little more flour. 3. Knead dough at medium speed for 5 minutes. The dough should be smooth and elastic. 4. Remove dough from machine and knead by hand for 2 to 3 minutes. 5. Place dough in a lightly oiled bowl and cover with clear plastic wrap or clean towel. Set bowl in a warm place and allow dough to rise until doubled in size, about 25 to 35 minutes. 6. Mix kosher salt and poppy seeds. Set aside. 7. When the dough has risen, separate into 4 equal pieces. 8. Sprinkle your work surface with the salt-seed mixture. 9. Form each dough piece into a long loaf and roll through the salt-seed mixture to lightly coat each piece. 10. Place loaves on a baking sheet lined with parchment paper. With kitchen scissors, cut loaves into 5 sections, leaving the sections still attached. 11. Brush loaves completely with Chef Larry's Blessing. 12. Let the loaves rise for 30 minutes before baking. (At this point, they may be refrigerated for up to 8 hours before baking.) 13. Bake at 450 degrees for 10 minutes. Then lower oven temperature to 400 degrees and continue baking another 10 minutes or until golden brown. Serve immediately. Chef Larry's Blessing: (Can cut the recipe by ¼) In a blender, emulsify 1 large clove of garlic and 1 cup of olive oil. Add 2 tablespoons of dried basil, 2 tablespoons of dried oregano and 1/8 teaspoon of salt, then turn blender on and off intermittently to mix thoroughly. Store covered at room temperature until ready to use. The marinade will keep for about 1 week.
