4 (4-oz.) boneless, skinless chicken breasts
1/3 cup extra virgin olive oil
1/4 cup balsamic vinegar
4 garlic cloves, minced
1 tablespoon Italian seasoning*
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Whisk together the olive oil, balsamic vinegar, garlic, Italian seasoning, salt and pepper.
  • Tenderize the chicken breasts using a meat tenderizer. Then place them in a Ziploc marinade bag, and pour the marinade mixture over top. Close the bag tightly and squish it around to coat the chicken. Place the bag on a plate and put it in the refrigerator to marinate for at least 10 minutes or up to 3 hours.
  • Grill over medium-high heat for 8-10 minutes per side, until no longer pink inside or until the internal temperature reads 160 degrees. This simple digital meat thermometer will change your grilling game forever!
  • Remove the chicken breasts to a platter to rest and cover with a tent of aluminum foil for 10 minutes.

This easy balsamic marinade makes for some deliciously moist and tender grilled chicken. The marinade has a mild flavor and doesn't overpower the chicken. It's a slight tang. This can easily be doubled or tripled. A yummy way to jazz up grilled chicken.

Steps:

  • Whisk together olive oil, balsamic vinegar, Italian seasoning, and Dijon mustard.
  • Pour marinade over chicken in a zip top bag. Refrigerate for 4-24 hours.
  • Grill over direct heat for about 7 minutes per side.

1 cup balsamic vinegar
½ cup olive oil
½ cup honey
2 tablespoons Dijon mustard
4 cloves garlic, minced
2 teaspoons dried basil
2 teaspoons salt
2 teaspoons ground black pepper
4 boneless, skinless chicken breasts

Steps:

  • Whisk together balsamic vinegar, olive oil, honey, Dijon mustard, garlic, basil, salt, and pepper in a small bowl.
  • Combine chicken and 1/2 of the marinade in a resealable plastic bag. Marinate chicken for 1 hour to overnight. Reserve the other 1/2 of the marinade until grilling.
  • Preheat an outdoor grill for medium-high heat, to approximately 400 degrees F (200 degrees C). Lightly oil the grate.
  • Remove chicken from marinade and discard used marinade.
  • Place chicken on the hot grill and baste with reserved marinade. Lower grill to medium and cook until chicken is no longer pink in the center and the juices run clear, 6 to 8 minutes per side. Baste with marinade on each side when flipping chicken. Chicken should reach an internal temperature of 165 degrees F (74 degrees C). Remove chicken from grill, cover, and let rest for 5 to 10 minutes before serving.

I love the unique flavor of Balsamic Vinegar. This is one of my favorite ways to grill chicken. I would suggest doubling the marinade if you want more to use as a dipping sauce. This marinade is also excellant on Pork Chops! NOTE: Plan Ahead! Marinate 4-6 hours or overnight. Not included in cook time.

8 boneless skinless chicken breast halves
1/2 cup chicken broth
1 cup balsamic vinegar
1 1/2 tablespoons Worcestershire sauce
2/3 cup chopped scallion
2 tablespoons minced garlic
2 teaspoons dry mustard
1 teaspoon fresh ground pepper
2 tablespoons sugar
1/4 cup Dijon mustard

Steps:

  • Rinse chicken, and pat dry. Place in a gallon-size zip-top plastic bag. Combine chicken broth and next 8 ingredients in a mixing bowl.
  • Reserve 1/2 cup marinade; pour remaining marinade over chicken. Seal bag, and refrigerate up to 24 hours, turning occasionally.
  • Grill chicken, uncovered, at medium-high for 6 minutes on each side or until cooked through, basting with reserved 1/2 cup marinade every few minutes. Done when juices run clear.

½ teaspoon dried tarragon

  • Whisk vinegar, olive oil, garlic, tarragon, and thyme together in a small bowl. Place chicken thighs in a gallon-sized resealable plastic bag and pour vinegar mixture over the chicken; turn to coat. Seal bag and let marinate at room temperature for 1 hour.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove chicken from marinade and discard marinade.

For Chicken:
4 boneless skinless chicken breasts
Fresh sage leaves
4 slices Pecorino Romano Cheese
4 ounces sun dried tomatoes, julienned
8 slices prosciutto
Salt and pepper to taste
2 Tbsp vegetable oil
For Pasta and Cream Sauce:
1 lb fettuccine noodles
1 Tbsp unsalted butter
1/2 white onion, chopped
1 clove garlic, chopped
1 bay leaf
1/4 cup white wine
1 cup heavy whipping cream
1/4 cup shredded parmesan cheese
1/8 cup chicken broth (low sodium)
Salt and pepper to taste
For Garnish:
Basil pesto
Shredded parmesan cheese

Steps:

  • Butterfly each chicken breast. Season inside with salt and pepper. Layer the slice prosciutto to cover the inside, followed by cheese slice, sun dried tomato and 2 sage leaves for each breast. Roll each breast tightly closed. Sear the chicken with oil on all sides, and place on a sheet pan. Bake the chicken in the oven at 475 until the center of each piece registers 165 degrees. Cook the fettuccine in salted boiling water according to package directions. For cream sauce, heat butter. Cook onion and garlic in butter until softened. Add the bay leaf and deglaze with white wine. Reduce by half. Add the rest of the cream sauce ingredients, and simer until semi-thick. Adjust seasoning with salt and pepper to taste. Remove bay leaf, and add pasta to pan with sauce, tossing to coat. Place fettuccine and sauce on plate. Slice each breast into 4-5 pieces and fan out on top. Garnish with basil pesto and additional parmesan to taste.

This recipe is one that I learned from a friend of mine. I think it's a tasty way to do chicken on the BBQ Grill. (Time to make does not include marinating time of 2-4 hours.)

6 boneless chicken breasts
3 sprigs fresh thyme
3 sprigs fresh rosemary
3 tablespoons olive oil
1/3 cup balsamic vinegar
1 teaspoon brown sugar
3 garlic cloves (smashed)
1 small onion (sliced thickly)

Steps:

  • Pierce the chicken breasts all over with a fork.
  • Pour the oil and vinegar into a large plastic zip-top bag.
  • Add in the brown sugar, the black pepper, the smashed garlic, the onion slices, and the sprigs of rosemary and thyme.
  • Seal bag, and "knead around" to mix well.
  • Put the chicken breasts into the bag with the marinade; reseal bag and knead it around to coat all the surfaces of the chicken. Place the bag into the refrigerator for 2-4 hours. (Occasionally knead bag).
  • When you have your coals ready on your BBQ grill, take out the sprigs of rosemary, and thyme and lay them directly on the top of the coals. Place chicken on an oiled grill rack over the heat. Grill 5-8 minutes per side, or until chicken is done.
