SAUTEED OR GRILLED HAM STEAK WITH APPLES



Sauteed or Grilled Ham Steak with Apples image

Number Of Ingredients 7

1 pound, 1 inch thick ham steak
2 tablespoons butter
1 granny smith apple, peeled, cored, finely diced
1 teaspoon Dijon mustard
1/4 cup hard or apple cider
1/4 cup heavy cream, optional
Salt and freshly ground black pepper

Steps:

  • Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking. Lightly saute, ham on both sides in butter for 3 to 4 minutes a side. Remove ham steak to a plate.
  • Add apple and saute until somewhat soft. Stir in mustard and cider and reduce until the cider has almost entirely evaporated. Add the heavy cream and reduce until slightly thickened. Season to taste with salt and pepper and spoon sauce over steak.

1 fully cooked bone-in ham (6 to 7 pounds)
2 cups apple cider
1 cup honey
1/2 cup cider vinegar
1/4 cup Dijon mustard
1 tablespoon butter
2 teaspoons chili powder
1/2 teaspoon apple pie spice

Steps:

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Cover and bake at 325° for 2 hours., Meanwhile, in a large saucepan, combine the cider, honey, vinegar and mustard; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring frequently. Stir in the butter, chili powder and apple pie spice. Set aside 1 cup for serving. , Cook the remaining sauce until thickened; spoon over ham. Bake, uncovered, until a thermometer reads 140°, 30-35 minutes longer. Warm reserved sauce; serve with ham

1 cups apple cider
1 tablespoons dijon mustard
1 tablespoons ginger
0.5 teaspoons ground cloves
1 units yam
1 pounds ham steak
1 units apples
1 tablespoons cornstarch
0.5 cups green onions

Steps:

  • In a large skillet, stir together 1 cup cider, mustard, ginger and cloves. Bring to a simmer. Add yams. Cover and simmer until partially tender, 15 minutes. Add ham steak, covering with yams. Arrange apple wedges over top. Cover and simmer until apples and yams are tender and ham is heated though, 10 to 15 minutes.
  • Meanwhile in a small bowl, stir together cornstarch and 1 Tbsp. of cider until well mixed. With a slotted spoon, remove ham, yams and apples to a platter, cover with foil to keep warm.
  • Stir a little of the hot pan liquid into the cornstarch mix until smooth. Stir cornstarch mix into the skillet. Cook over medium heat ' stirring until slightly thickened, about 1 minute. Divide ham yams among 4 plates. Spoon skillet sauce over. Garish.
