This appetizer is a holiday favorite at my house. Meaty, cheesy, and delicious! Perfect way to get the kids involved. They can make the whole dish with little or no supervision.

1 (16 ounce) package bulk mild pork sausage
1 (16 ounce) package bulk hot pork sausage
1 (8 ounce) package shredded sharp Cheddar cheese
2 cups biscuit baking mix (such as Bisquick®)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Line a baking sheet with aluminum foil.
  • Mix mild sausage and hot sausage in a large bowl until evenly blended.
  • Stir Cheddar cheese into sausage mixture.
  • Mix biscuit baking mix into sausage mixture about 1/2 cup at a time until baking mix is moist.
  • Roll meat mixture into 1 1/4- to 1 1/2-inch balls.
  • Arrange meatballs on prepared baking sheet.
  • Bake in the preheated oven until meatballs are no longer pink in the center and cheese is browned, about 20 minutes.

The best breakfast casserole I've ever made. I combine a few different recipes and this is my picky hubby's most favorite!

cooking spray
1 (12 ounce) package bacon
1 teaspoon butter, or as desired
1 (20 ounce) package frozen cubed hash brown potatoes
salt and ground black pepper to taste
1 (12 ounce) package sliced fresh mushrooms
3 green onions, minced
2 cups shredded Cheddar cheese, divided
10 eggs
2 cups milk
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray. Arrange bacon slices in a single layer on a baking sheet.
  • Bake in the preheated oven until browned and crisp, 20 to 25 minutes. Drain bacon slices on paper towels and transfer 1 to 2 tablespoons bacon grease to a skillet, reserving the remaining bacon grease. Add butter to skillet.
  • Cook and stir potatoes in the hot bacon grease-butter until lightly browned, about 10 minutes; season with salt and black pepper. Transfer potatoes to the prepared baking dish.
  • Heat about 1 tablespoon reserved bacon grease in the skillet over medium heat; cook and stir mushrooms until softened, 5 to 10 minutes. Layer mushrooms over potatoes.
  • Place green onions in the same skillet and remove from heat. Allow green onions to soften from the residual heat in skillet; layer over mushrooms. Crumble bacon over green onion layer; top with 1 cup Cheddar cheese.
  • Blend eggs, milk, and 1 teaspoon salt in a blender until smooth; pour over Cheddar cheese layer. Top casserole with remaining 1 cup Cheddar cheese.
  • Bake in the preheated oven until casserole is set and a knife inserted in the middle comes out clean, 30 to 40 minutes.

This is an old recipe I made up years ago... I still make it about once a month...If you like a sweet savory pasta sauce, then you will like this one...I use Turkey Sweet Italian Sausage...

1 lb sweet Italian sausage
1 garlic clove, minced
2 (28 ounce) cans stewed tomatoes
2 (8 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
1 (28 ounce) can water
1 sweet onion, diced
1 green pepper, diced
1/2 lb of sliced fresh mushrooms
1/2 cup parsley
1 tablespoon sugar
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon Italian spices
2 cups mild cheddar cheese, grated

Steps:

  • Remove sausage from casings and fry up in a little olive oil.
  • crumble up and drain.
  • Add onions with a little more olive oil and cook until soft.
  • Add the rest of the ingredients except for the cheese.
  • Simmer for 1 1/2 hours.
  • Add grated cheese, stir in until melted.
  • Cover 1 hour over low heat and simmer. Serve over your favorite kind of pasta.

From Cook's Country. Doesn't use packaged baking mix like most. Don't overmix the dough or they will be tough.

1 1/2 cups all-purpose flour, 7 1/2 oz
1 teaspoon baking powder
1/4 teaspoon salt
1/4 pepper
1/8 teaspoon cayenne pepper
2 tablespoons unsalted butter, cut into 1/2 inch pieces
8 ounces breakfast sausage, bulk
4 ounces sharp cheddar cheese, 1 cup
3/4 cup buttermilk

Steps:

  • Adjust oven rack to middle position and heat oven to 400.
  • Line rimmed baking sheet with parchment paper. Pulse flour, baking powder, salt, pepper and cayenne in food processor til combined, about 3 pulses. Add butter and pulse utnil mixture resembles coarse meal, about 12 pulses. Add sausage and cheddar and pulse until combined, about 8 pulses. Transfer mixture to bowl and stir in buttermilk til combined.
  • Working with wet hands, roll 1 T dough at a time into 1 1/4" balls and place on baking sheet. Bake til golden brown, about 20-22 min, rotating baking sheet halfway through. Let cool 5 min before serving.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

I realize there are A LOT of sausage ball recipes on here, but this one has a combination of ingredients the others don't. These were great for Christmas party finger foods.

3 cups Bisquick baking mix
1 lb pork sausage
10 ounces cheddar cheese, grated
2 tablespoons dried parsley flakes
1 tablespoon Worcestershire sauce
1 teaspoon minced onion
1 teaspoon ground black pepper
1 teaspoon oregano
1 teaspoon garlic powder

Steps:

  • In a bowl, combine all ingredients and mix well.
  • Roll into small balls.
  • Place on ungreased baking sheet and bake in a 375F oven for 15 to 20 minutes or until brown.
  • Serve warm.

1 lb hot Jimmy Dean sausage
1 lb Jimmy Dean sausage
2 cups shredded cheddar cheese
1 3/4 cups Bisquick

Steps:

  • Preheat oven to 400.
  • Mix all ingredients together with your hands till well incorporated.
  • Roll into balls about the size of a walnut.
  • I place the balls on a broiler pan so the grease drips down away from the sausage.
  • Cook till golden brown approx 10-15 minutes.
  • The amounts will vary depending on size of balls you make, 30-40.
