Slices of sweet potato baked with cinnamon and brown sugar. The caramelized brown sugar make these potatoes taste like candy! I attended a catered dinner and the caterer served these with a beautiful turkey dinner. I begged for the recipe, been making it ever since.

BAKED SWEET POTATO FRIES RECIPE BY TASTY

Baked Sweet Potato Fries Recipe by Tasty image

Here's what you need: large sweet potatoes, water, corn starch, olive oil, pepper, paprika, garlic powder, brown sugar, salt, shredded parmesan cheese, fresh parsley

Provided by Tasty

Categories     Sides

Yield 4 servings

Number Of Ingredients 11

2 large sweet potatoes
water, for soaking
2 tablespoons corn starch
1 tablespoon olive oil, or vegetable oil
½ teaspoon pepper
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon brown sugar
salt, to taste
shredded parmesan cheese, optional
fresh parsley, optional, chopped

Steps:

  • Rinse and peel sweet potatoes.
  • To cut into fries, cut a small sliver off the edge of the potatoes lengthwise to create a flat side for them to rest on. Turn the potato over to lay on its flat side. Cut each slice lengthwise into three to four fries.
  • Place the fries in a bowl of water and soak for one hour. (This helps remove excess starch from the potatoes so your fries will be crispier.) Rinse and dry off.
  • In a large bowl or gallon bag, toss the fries with cornstarch until they're evenly coated. Then add the oil and toss to coat.
  • Add the pepper, paprika, garlic powder, and brown sugar and toss to evenly distribute your spices. (Hold off on adding the salt until after baking. This will help make sure the fries are crispy.)
  • Preheat the oven to 425°F (220°C).
  • Line a baking sheet with parchment paper or aluminum foil and spray with nonstick cooking spray. Lay out the french fries, being sure not to overcrowd the pan. (You may need two pans, depending on how large your pans are. Avoid overcrowding one pan or your fries may not crisp up.)
  • Bake for 15 minutes. Flip fries with tongs, then bake for an additional 10-15 minutes. Sprinkle on salt (to taste) and serve! Add shredded Parmesan and chopped parsley for an optional garnish.
  • Enjoy!

CINNAMON-SUGAR SWEET POTATO FRIES WITH BROWN BUTTER MARSHMALLOW GLAZE

Cinnamon-Sugar Sweet Potato Fries with Brown Butter Marshmallow Glaze image

Insanely delicious sweet potato fries flavored with cinnamon and served with an addicting brown butter marshmallow glaze. This is a dinnertime treat to love!

Provided by Monique of AmbitiousKitchen.com

Categories     Dinner     Side Dish

Time 25m

Number Of Ingredients 7

1 package Alexia Sweet Potato Fries (or your own sweet potato fries)
1 teaspoon cinnamon
1 tablespoon sugar
2/3 cup marshmallow creme
1/4 cup plain nonfat greek yogurt
4 tablespoons unsalted butter
1/4 teaspoon salt

Steps:

  • Thaw out sweet potato fries for 10 minutes and place into a large bowl. Add cinnamon and sugar to bowl and use your hand to toss sweet potato fries. Bake according to directions on the package.
  • While fries are baking, prepare the glaze: In a medium bowl whisk together marshmallow creme, greek yogurt, and salt together; set aside. Melt butter in a small saucepan over medium-high heat. The butter will begin to foam. Make sure you whisk consistently during this process. After a couple of minutes, the butter will begin to brown on the bottom of the saucepan; continue to whisk and remove from heat as soon as the butter begins to brown and give off a nutty aroma. Set aside to cool for a few minutes then whisk into the marshmallow creme until well combined.
  • Once the fries are done baking, drizzle the brown butter marshmallow glaze over the fries. Alternatively you can also use the glaze as a dip since there will be a significant amount of it.

  • Soak your spiralized sweet potatoes. DO NOT SKIP THIS STEP. Soak in cold water for at least 1 hour, although we usually go with the 12 hour overnight thing. It's fine if it's only one hour. The reason for this is that it draws the excess starch out of the sweet potatoes helping them to cook through better to be crispy on the outside but still tender on the inside without burning. Remove them and allow them to air dry for about 30 minutes.
  • When ready to bake them, in a large bowl, add all the spiralized sweet potatoes. Add the brown sugar, cinnamon and oil and toss to coat.

  • Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper or a silicone baking mat. 2 large sliced potatoes are usually too crowded on 1 sheet, but it depends on their size. You may need an additional sheet. Set aside.
  • Wash and peel the potatoes. Cut off the ends. With a very sharp knife, cut the potatoes into thin slices about 1/4 inch wide. Place in a large bowl or ziplock bag and toss with cornstarch. You want a nice thin coating. Pour the potatoes into a strainer to get rid of any extra cornstarch. Discard the extra cornstarch out of the mixing bowl too. Place potatoes back into the bowl and add the melted coconut oil. Toss to coat. Mix together 1/3 granulated sugar and 1/2 teaspoon cinnamon. Pour cinnamon sugar over sweet potatoes and toss to coat.
  • Line the coated sweet potatoes onto the baking sheet. Try not to crowd them or else they won’t bake, they’ll just steam. Bake for 15-18 minutes. Remove from the oven and flip. Place back into the oven for 10-15 more minutes. Make sure to rotate the pan to avoid uneven browning. Don’t fret if the edges are a little brown, they will taste more caramelized than burnt. **It’s expected for the oil and cinnamon/sugar to create a glaze on the baking sheet and on top of the fries.
  • Turn the oven off and keep the fries inside as the oven cools down for about 30 minutes. This step will help the fries get crispier. You may not have time to keep them in the oven for an additional 30 minutes as it cools, so it’s not mandatory. No matter what you do though, some fries will still be on the soft side. Sweet potatoes are packed with moisture.
