1 ½ tsp honey
½ tsp vanilla

Steps:

  • In a food processor, combine cashews, cinnamon, honey, vanilla and a pinch of salt. Process until smooth. (If mixture is dry, add 1 to 2 tbsp water and process again until smooth.)
  • Core and slice apples. Serve apple slices spread with cashew butter.

2 apples , sliced straight across into rounds
2 generous lemons wedges, for squeezing over

Steps:

  • Pour boiling water over the cashew nuts in a small bowl to cover, and leave for 2-3 mins so they soften a little. Drain, then return to the bowl. Add the coconut oil and cinnamon and blitz with a stick blender to chop the nuts into a rough paste. Serve with the apples slices and lemon wedges.
