This homemade cinnamon dolce syrup is rich and delicious. Use this to make a latte or add to apple juice or cider for the perfect fall drink!

Steps:
- Place a saucepan over medium-high heat; add water, brown sugar, and white sugar. Whisk until sugar dissolves, 3 to 5 minutes. Whisk cinnamon into sugar mixture until incorporated. Continue whisking mixture until just before boiling and syrup-consistency, 3 to 5 more minutes. Remove saucepan from heat and stir in vanilla extract.
- Cool syrup completely, at least 1 hour. Pour syrup into a glass container and seal; store in refrigerator for up to 10 days.

CINNAMON SYRUP
This is an adaptation of a friend's recipe. My kids go crazy over this syrup when we have pancakes or waffles. It's also good on apple slices or strawberries. The only problem is that my kids always forget their manners and lick the leftover syrup off their plates.

- Stir together the white sugar, brown sugar, flour, and cinnamon in a small saucepan. Stir in vanilla extract and water. Bring to a rolling boil, stirring often. Continue to boil and stir until mixture thickens to syrup consistency. Remove from heat; cool 10 minutes before serving.

Steps:
- Bring water and sugars to a boil in a saucepan over medium-high heat, stirring often.
- Reduce syrup to a simmer. Add vanilla and broken cinnamon sticks. Continue to stir (especially edges and bottom of pan) and simmer for 10 minutes. Syrup will begin to thicken.
- Carefully pour the syrup and cinnamon sticks into a heat-proof container (like a Pyrex measuring cup) and allow the syrup to cool and thicken for at least 30 minutes.
- Pour the syrup through a strainer to catch the cinnamon stick pieces into a bottle.
- Store cinnamon dolce syrup in the refrigerator.
- To use, stir 2 teaspoons (more or less) into a cup of coffee or tea.

- In a large mixing bowl, beat the sugars and eggs together until smooth.
- Add in the melted butter and whisk until smooth.
- Sift in the flour, soybean flour and baking powder and mix together.
- Rest the dough for 30 minutes.
- Roll the dough into ping pong sized balls using your hands.
- In a deep saucepan, heat the oil to 190°C (370°F).
- Using a slotted spoon, carefully fry the balls in small batches.
- Transfer the doughnuts to a paper towel-lined plate.
- Prepare the cinnamon sugar by mixing the sugar and ground cinnamon together.
- Roll the doughnuts in the cinnamon sugar.
- Drizzle some brown sugar syrup on top.
