SOUTHERN CINNAMON PEACH COBBLER

Steps:
- Preheat oven at 400 degree.
- Line a 9"x13" pan with foil and set aside.
- For filling: Place drained peaches in a medium sized pot, combine 1/2 cup sugar, 1/2 cup brown sugar, cinnamon and nutmeg and let simmer until sugars are dissolved. Remove from heat and let cool.
- Melt butter in baking pan and set aside.
- For batter: Mix flour, sugar, baking powder and salt, then stir in milk, egg and vanilla extract. Mix until well incorporated.
- Pour batter over melted butter. Do Not Stir.
- Spoon peaches and sauce over batter evenly. DO NOT STIR!
- Bake for 35-45 minutes, or until golden brown and slightly crispy.
- Serve warm with vanilla ice cream.

This is my Husbands Favorite Winter time sweet treat, when baking,it fills the house with warmth and gathers my kids in the kitchen. I love this Recipe because its so fast and easy to make,and great for any occasion!

- 1. In a large bowl, combine flour, sugar, salt and baking powder- cut in butter until cumbly, press into bottom and up the sides of a GREASED 9in pie pan or spring form pan. Place on a baking sheet. Arrange peaches in crust cut side up. combine dark brown sugar and cinnamon, sprinkle over peaches- Bake at 350 degrees for 20 min.
- 2. In a medium bowl beat egg yolks and cream together with a wire wisk- pour over peaches and bake for 25 to 30 min longer or until top is set, cool on wire rack lightly sprinkle with cinnamon....Refridgerate Leftovers
PEACH COBBLER
Steps:
- Preheat oven to 375 degrees F.
- Mix flour, baking powder, and salt in large mixing bowl. Cut in butter with pastry cutter or hands until it resembles coarse meal. Add 1/2 cup sugar and cream. Knead approximately 3 minutes and let rest.
- Toss fruit with cornstarch, 1/4 cup sugar, and spices. Place fruit mixture in a 9 by 13-inch glass or ceramic baking dish. Cover with gobs of the cobbler dough. Bake 35 minutes or until lightly browned.

- Preheat oven to 350 degrees. Spray a 9x13 casserole pan or 3 quart baking dish with cooking spray and set aside. Cut each cinnamon roll into bite size pieces. Each cinnamon roll was about 6 pieces. Set aside icing from cinnamon rolls to use later.
- In a microwave safe dish, soften cream cheese, next add powdered sugar and stir together until well combined. Add in cinnamon and vanilla and peaches and mix well. Mix the cinnamon rolls into cream cheese peach mixture. Fold in pecans and spoon mixture into casserole pan.
- Cook for 38-42 minutes or until cinnamon rolls are cooked through. Top with cinnamon roll icing and serve with ice cream.
PEACH COBBLER PIE - COMPLETELY DELICIOUS

- To make the pie crust, combine the flour and salt in a medium bowl. Add the cubed butter and use a pastry blender to cut the butter into the dry ingredients until the size of small peas. Add the water a tablespoon at a time until the dough starts to come together into a ball. Dump the dough out onto a clean surface and knead a few times to incorporate all of dry bits. Work quickly, do not over handle. Cover with plastic wrap and chill in the fridge for at least 2 hours.
- Preheat oven to 400° F. On a floured surface, roll the chilled dough out into a rough 12-inch circle. Transfer to a 9-inch pie dish and trim edges.
- To prepare the filling, toss together the sugar, flour, cinnamon, peaches and lemon juice in a large bowl. Dump into the prepared pie crust.
- To make the topping, combine the flour, sugar, baking powder, baking soda and salt in a large bowl. Add the cubed butter and use a pastry blender to cut the butter into the dry ingredients until the size of small peas. Add the buttermilk and mix just until dough comes together. Drop by the spoonful on top of the peach filling. Sprinkle with cinnamon sugar, if using.
