One of my mother's favorite recipes. Great with your morning coffee or a cold glass of milk.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Beat milk, shortening, egg, and vanilla extract together in a bowl until smooth. Stir 1 1/2 cups flour, 1/2 cup sugar, baking powder, and salt into milk mixture until dough comes together. Spread dough out into the bottom of a rimmed baking sheet.
- Spread apples over the dough on the baking sheet.
- Stir 1 cup sugar, melted butter, 1/4 cup flour, and cinnamon together in a bowl until topping is combined. Sprinkle topping over apples.
- Bake in the preheated oven until apples are tender and topping is golden, about 40 minutes.

CINNAMON RAISIN APPLE KUCHEN

Steps:
- Position rack in center of oven and preheat to 375.
- Butter a 9-inch tart pan with 1 1/2 inch high sides and removeable bottom. (I use a springform pan) Set aside.
- For crust:.
- Blend flour, butter, sour cream, 1 T sugar, hard-boiled egg yolk, cinnamon, nutmeg and salt, till mixture resembles coarse meal.
- Transfer all but 1/2 cup of mixture to prepared pan.
- Press mixture evenly into the bottom and up the sides of the pan.
- Bake 10 minutes. Brush with egg white.
- Continue baking till brown, about 15 minutes.
- Transfer to rack.
- Reduce oven temp to 350.
- Add remaining 2 T of sugar to reserved mixture in bowl and blend. Chill crumb mixture till ready to use.
- For Filling:.
- Thinly slice apples.
- Mix sugar, sour cream, egg yolks, flour, vanilla and cinnamon till smooth (referred to in later steps as "custard").
- Arrange half the apple slices, overlapping slightly, in concentric circles on prepared crust.
- Sprinkle half the raisins or currants over.
- Repeat procedure with remaining apple slices and raisins.
- Spoon custard mixture over apples, lifting apples slightly and smoothing custard between slices.
- Sprinkle reserved crumb mixture over top.
- Place pan on cookie sheet. Bake till custard is set, covering edges of crust with foil if browning too quickly, about 65 minutes.
- Let stand 10 minutes. Remove sides of pan. Serve warm or at room temperature with whipped cream or cream fraiche. Or just as is :).

APPLE-RAISIN CINNAMON BUN PIE
There's more than meets the eye in this tricky pie. At first glance, it looks like a pan full of cinnamon buns, but cut into it and there's apple pie filling underneath! Big and little kids can help with measuring ingredients and even rolling out the dough (though parents should be nearby in case they need help).

- Line a 9-inch pie plate with 1 piece of dough, and refrigerate until ready to assemble the pie.
- Make the cinnamon-roll crust: Lay the remaining piece of dough on a lightly floured surface, and spread 2 tablespoons of the butter evenly on top. Combine 1/4 cup of the granulated sugar and 1 teaspoon of the cinnamon in a small bowl, and sprinkle evenly over the butter; gently press with your fingers to help the mixture adhere. Roll the dough up into a tight log. Trim and discard about 1 1/2 inches from each end, and cut the remaining log crosswise into 1/2-inch-thick pieces. Arrange the pieces, cut-side down, in a snug circle on floured parchment paper. Lightly dust the pieces with flour, then gently roll out into a 10-inch round. Slide the parchment onto a baking sheet, and refrigerate until ready to assemble the pie.
- Put the dark and golden raisins in a medium bowl with hot water to cover. Let them soak until tender, about 5 minutes, then strain.
- Make the filling: Peel and core the apples, cut them into 1/2-inch-thick slices and toss with the remaining 1/2 cup sugar and the lemon juice in a large bowl. Melt the remaining 4 tablespoons butter in a large skillet over medium-high heat. Add the apples, and cook, stirring occasionally, until the firmer apples soften but hold their shape, 15 to 18 minutes. (The softer apples, like McIntosh, will get very soft and saucy.) Add the flour, the remaining 1/2 teaspoon cinnamon, and the nutmeg and salt, and stir until the juices thicken, about 2 minutes. Remove the skillet from the heat, stir in the raisins and let the filling cool completely. (The filling can be refrigerated, covered, for up to 2 days.)
- Fill the dough-lined pie plate with the filling in an even layer. Invert the cinnamon-roll crust on top, and peel off the parchment. (It's OK if the individual rounds separate a bit in the process.) Pinch the crusts together. Fold the overhanging dough under itself, and crimp as desired. Brush with the egg, and refrigerate for 30 minutes.
- Bake the pie: Place a baking sheet in the oven, and preheat to 400 degrees F. Set the pie on the hot baking sheet, and bake until the crust is golden brown and the filling is bubbling, about 50 minutes. (Tent loosely with foil if the top browns too quickly.) Transfer to a rack to cool slightly.
- If using a glaze, whisk together the confectioners' sugar and milk in a bowl until smooth. (Add more milk if the glaze is too thick.) Drizzle over the pie.
RAISIN APPLE MUFFINS

- Preheat oven to 350 degrees F, then grease & flour a 13"x9" baking dish.
- In a medium bowl, combine margarine, cake mix & coconut until crumbly.
- Cover the bottom of prepared baking dish with this mixture, spreading evenly & patting down, building up edges to form a crust.
- Place apple wedges on top, arranging them evenly.
- Combine cinnamon & sugar, & sprinkle this mixture over apples.
- In a small bowl, combine sour cream & egg, then drizzle this mixture on top of cinnamon/sugar mixture.
- Bake for 35 minutes or until apples are tender & edges are golden.
- Remove from oven, cool slightly & enjoy!.

- In a medium bowl, mix the apples and sugar. Let stand about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 10x15 inch baking pans.

- Preheat oven to 375.
- Lightly grease and flour a cake pan: 7"x11" (you can substitute an 8" or 9" square cake pan if needed).
- Pare and core the apples and slice them thinly (about 1/4" to 1/2" thick). Mix the cinnamon and sugar and set aside.
- For the cake batter:.
- Cream the 3/4 cup of sugar, the shortening, and egg together until fluffy. Gradually add the milk.

- Preheat oven to 350°F.
- Mix 1 1/4 cup flour, baking powder, 2 tsp sugar, and salt and sift once.
- Cut 1/2 cup butter into dry mix with a pastry blender to pea size.
- In a small bowl, beat egg with 2 T milk and add to dry mix.
- Mix thoroughly and pat dough into a greased or oiled 9x13-inch baking dish.
- Pare and core apples.
- Cut into thin wedge slices and place on dough in rows until covered. We would cover the thin end of one apple with the thick end of the other.
- Dot apples with 2 T butter and mix 3/4 cup sugar, 1 1/2 Tbs flour and cinnamon together.
- Spread dry topping over dotted apples, and bake in oven for 30-45 minutes, until golden brown.
