NUTTY CINNAMON RAISIN CREAM CHEESE SPREAD



Nutty Cinnamon Raisin Cream cheese Spread image

Cutting the calories and keeping a sweet nutty flavor to your breakfast that is low in fat. This is a spread I created. I spread it on an English muffin, bagels, or pita chips.

1 c reduced fat,or fat free cream cheese softened
1 tsp cinnamon
1/8 tsp nutmeg
2 - 3 tsp natural maple syrup
1/4 c raisins
1/4 c chopped almonds or walnuts .chopped finely.
1/2 tsp lemon zest

Steps:

  • 1. Mix in a bowl the Cream cheese,cinnamon,nutmeg,syrup,lemon zest together.
  • 2. Add the raisins and walnuts and combine. Spread on bread,English Muffins,Bagels,and Pita chips etc.
  • 3. Store covered in refrigerator

1 cup fat free cream cheese
1 cup cottage cheese
1 teaspoon ground cinnamon
2 teaspoons white sugar
½ cup raisins

Steps:

  • Place fat free cream cheese, cottage cheese, cinnamon and white sugar in a food processor. Blend until smooth. Transfer to a medium bowl. Stir in raisins. Cover and chill in the refrigerator until serving.

Number Of Ingredients 7

1 cup cream cheese, softened (or 1 cup tofu cream cheese)
1 teaspoon real maple syrup
1/2 teaspoon lemon zest, finely grated
1/4 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1/4 cup raisins (read *NOTE) or 1/4 cup currants (read *NOTE)
1/4 cup toasted almonds or 1/4 cup toasted hazelnuts, finely chopped

Steps:

  • *NOTE: If you wish, you can coarsely chop the raisins before adding to the other ingredients. I preferred the texture better when the raisins were chopped.
  • In a medium bowl, combine the cream cheese, maple syrup, lemon zest, cinnamon and nutmeg. Mix until creamy and smooth.
  • Stir in the raisins and nuts. Cover well and refrigerate until ready to serve.
  • Taste and adjust seasonings before serving.

Steps:

  • Put the cream cheese, cinnamon, sugar, and cottage cheese into a food processor. Process until smooth.
  • Move to a medium dish. Mix in the raisins. Cover and refrigerate before serving.

24 slices cinnamon raisin bread, crusts trimmed
6 eggs
4 cups half-and-half
1 cup sugar
2 teaspoons vanilla extract
1 dash nutmeg
16 ounces cream cheese
1 teaspoon vanilla
2 eggs
1/2 cup sugar
maple syrup

Steps:

  • Lightly butter a 3-quart baking pan. Cover the bottom of the pan with half the bread slices.
  • In a medium bowl combine 6 of the eggs with all the half and half, 1 cup of sugar and 2 teaspoons of vanilla. Pour half the egg mixture over the bread. In a separate bowl whisk the cream cheese, remaining 2 eggs, teaspoon of vanilla, and 1/2 cups of sugar until smooth and creamy.
  • Spread the cream cheese mixture over the bread layer. Arrange the rest of the bread over the filling and top with the remaining egg mixture. Sprinkle with nutmeg. Cover and refrigerate overnight.
  • Bake in preheated 350 degrees F oven for 60 minutes.
  • Let stand 10 minutes before cutting. Serve with warmed maple syrup if desired.
