Overnight Burnt-Butter Cinnamon Rolls image

This recipe is my great grandmother's recipe that I changed a little to be a less old-fashioned.

½ cup milk
1 (.25 ounce) package active dry yeast
½ cup butter, divided
1 cup mashed potatoes
⅔ cup white sugar
1 ½ teaspoons vanilla extract
2 eggs, room temperature
4 cups all-purpose flour, or more as needed
1 teaspoon canola oil, or as needed
¾ cup butter
½ cup light brown sugar
½ cup white sugar
1 tablespoon ground cinnamon
2 teaspoons vanilla extract
1 teaspoon light corn syrup
1 cup confectioners' sugar
3 tablespoons heavy whipping cream, or more to taste

Steps:

  • Stir milk in a heavy saucepan over medium-high heat until milk starts to show small bubbles, steams, and reaches 85 to 100 degrees F (30 to 38 degrees C). Cool. Stir yeast into cooled milk.
  • Melt 6 tablespoons butter in a saucepan over high heat; cook until butter is slightly browned, 2 to 3 minutes. Remove from heat and stir 2 tablespoons butter into melted butter. Stir mashed potatoes and 2/3 cup white sugar into butter until well combined.
  • Beat eggs in a small bowl; add to mashed potatoes mixture and stir well. Pour milk-yeast mixture into mashed potato mixture and stir with a wooden spoon.
  • Stir flour into potato mixture 1/2 cup at a time, stirring well with a wooden spoon after each addition, until a dough comes together. Turn dough out onto a floured work surface and knead until soft, 1 to 3 minutes. Lightly oil dough with canola oil, place dough in a bowl, cover the bowl with a clean, damp towel, and let rise in a warm place until doubled in size, at least 1 hour.
  • Melt 1/2 cup butter in a large saucepan over high heat; cook until browned, 2 to 3 minutes. Pour butter into a bowl. Add remaining butter, brown sugar, 1/2 cup white sugar, and cinnamon; mix until filling is well combined.
  • Roll 1/2 of the dough into a 1/4-inch thick rectangle. Spread 1/2 of the filling over dough rectangle. Cut dough width-wise into 12 equal strips. Roll up each strip and place in a greased 9x13-inch baking dish. Repeat with remaining dough and filling. Cover the baking dish with plastic wrap and refrigerate, 8 hours to overnight.
  • Preheat oven to 400 degrees F (200 degrees C). Line baking sheets with parchment paper.
  • Place rolls 4-inches apart on prepared baking sheets.
  • Bake in the preheated oven, rotating the baking sheets once, until golden and set, 11 to 13 minutes.
  • Whisk 2 teaspoons vanilla extract and corn syrup together in a bowl. Whisk confectioners' sugar and cream into corn syrup mixture until desired glaze consistency is reached. Drizzle glaze over cinnamon rolls.

1/2 cup Biscoff creamy cookie spread
3 tablespoons butter, softened
1/2 teaspoon vanilla extract
1/3 cup sugar
1 tablespoon ground cinnamon
1 loaf (1 pound) frozen bread dough, thawed
1-1/3 cups confectioners' sugar
1 to 2 tablespoons 2% milk
2 teaspoons light corn syrup
1 teaspoon vanilla extract

Steps:

  • In a small bowl, mix the first 5 ingredients. On a lightly floured surface, roll dough into a 12x7-in. rectangle. Spread butter mixture over dough to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices. Place in a greased 13x9-in. baking pan, cut side down. Cover and let rise in a warm place until doubled, about 45 minutes., Preheat oven to 350°. Bake until edges are lightly browned, 15-20 minutes. Place pan on a wire rack. Combine icing ingredients; drizzle over warm rolls. Let stand until set.

4 cups all-purpose flour
1 cup white sugar
1 cup brown sugar
1 teaspoon salt
1 teaspoon baking soda
1 cup unsalted butter, softened
3 large eggs
1 teaspoon vanilla extract
1 cup white sugar
1 cup brown sugar
1 cup finely chopped pecans
¾ cup unsalted butter
1 tablespoon ground cinnamon
½ teaspoon vanilla extract
¾ cup powdered sugar
1 tablespoon unsalted butter, melted
1 tablespoon milk, or more to taste
¼ teaspoon vanilla extract

Steps:

  • Prepare dough: Stir together flour, sugar, brown sugar, salt, and baking soda. Add butter, eggs, and vanilla; mix until a soft dough forms (do not overmix.) Refrigerate for 15 to 30 minutes to make it easier to roll out.
  • While the dough is chilling, prepare filling. Combine sugar, brown sugar, pecans, butter, cinnamon, and vanilla in a saucepan over low heat. Cook until melted, but don't let it caramelize. Remove from the heat.
  • Divide the cold dough into 2 equal sections. Roll each out on a lightly floured surface to a 9x13-inch rectangle.
  • Pour 1/2 of the filling mixture onto each rectangle and spread evenly. Staring with the longer side, roll each rectangle tightly to form a log. Wrap and refrigerate 8 hours to overnight.
  • Preheat the oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.
  • Remove dough logs from the refrigerator. Cut into 1/4 to 1/2 inch thick slices. Place on the prepared baking sheets about 2 inches apart.
  • Bake in the preheated oven in batches until light golden brown, 8 to 12 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool, 8 to 10 minutes more.
  • Combine powdered sugar, butter, 1 tablespoon milk, and vanilla for glaze. Mix until smooth, adding milk if necessary to preferred thickness. Drizzle over the cooled cookies.

1/3 cup reduced-fat plain yogurt
1/4 cup sugar
1/4 cup butter, melted
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
FILLING:
2 tablespoons butter, melted
1 cup chopped pecans
2/3 cup packed brown sugar
1-1/2 teaspoons ground cinnamon
MAPLE GLAZE:
2/3 cup confectioners' sugar
3 tablespoons maple syrup
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400°. In a food processor, combine the first 5 ingredients; cover and process until smooth. Add the flour, baking powder, baking soda and salt; cover and pulse until mixture forms a soft dough., Transfer to a lightly floured surface; knead 4-5 times. Roll into a 15x12-in. rectangle. Brush butter to within 1/2 in. of edges. Combine the pecans, brown sugar and cinnamon; sprinkle over dough. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices. Place cut side down in a greased 9-in. round baking pan., Bake until golden brown, 20-25 minutes. Cool for 5 minutes. Combine glaze ingredients; drizzle over rolls. Serve warm.
