CINNAMON BREAD STICKS

Cinnamon Bread Sticks image

These Cinnamon Bread sticks make a great afternoon snack or dessert to go along with Homemade Pizza.

Provided by Michelle

Categories     Side Dish     Snack

Time 45m

Number Of Ingredients 13

2 C Warm Water
Dough
** Makes 1 Large Pizza & Breadsticks
1 TBSP Yeast
1 TBSP Salt
5 C Flour
1-2 TBSP Olive Oil
4 TBSP Butter (Melted)
Cinnamon & Sugar Mixture
6 TBSP Ground Cinnamon
3 TBSP Sugar
1/2 cup Powdered Sugar
1-2 tbsp Milk ((can use Heavy Cream, Half and Half or water))

Steps:

  • Start by adding the warm water and yeast to your mixing bowl. Allow to sit for 5 minutes so that the yeast can proof.
  • While you are waiting for the yeast to do it's thing place flour and salt into a large bowl.
  • Once the yeast has proofed 2 ½ cups flour with proofed yeast and mix well in Kitchen Aid with a dough hook.
  • Add additional 2 ½ cups flour and knead until smooth.
  • Next place the bowl with plastic wrap. You will want to let the dough rest for 15 to 20 minutes.
  • Grab your baking sheet and coat it with olive oil. This is to ensure the dough won't stick to the pan.
  • Preheat your oven to 375 degrees.
  • Grab the dough from the bowl and add more flour as needed (a little at a time) to alleviate the stickiness of the dough if needed.
  • Split dough in half and roll each ball of dough onto a floured surface. Knead a few times to ensure the dough is a uniformed ball.
  • Now it's time to roll into a pizza and breadsticks!
  • With your pizza dough roll out into the shape of your pan & create your pizza.
  • For the Cinnamon Breadsticks roll the dough into a rectangle. Then using a pizza cutter cut the dough in half length wise and then vertically every 1" or so. This will be the size of your breadstick.
  • Next top each breadstick with a brush of melted butter topped with the cinnamon and sugar mixture. Bake Breadsticks for 15-22 minutes, until they have risen and baked through. They'll be a beautiful golden color.

OOEY-GOOEY CINNAMON BUNS

Ooey-Gooey Cinnamon Buns image

These buns are sooo good hot from the oven when they're gooey and warm.

Provided by dakota kelly

Categories     Bread     Yeast Bread Recipes

Time 3h

Yield 15

Number Of Ingredients 15

1 teaspoon white sugar
1 (.25 ounce) package active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
½ cup milk
¼ cup white sugar
¼ cup butter
1 teaspoon salt
2 eggs, beaten
4 cups all-purpose flour
¾ cup butter
¾ cup brown sugar
1 cup chopped pecans, divided
¾ cup brown sugar
1 tablespoon ground cinnamon
¼ cup melted butter

Steps:

  • In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
  • In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • While dough is rising, melt 3/4 cup butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 9x13 inch baking pan. Sprinkle bottom of pan with 1/2 cup pecans; set aside. Melt remaining butter; set aside. Combine remaining 3/4 cup brown sugar, 1/2 cup pecans, and cinnamon; set aside.
  • Turn dough out onto a lightly floured surface, roll into an 18x14 inch rectangle. Brush with 2 tablespoons melted butter, leaving 1/2 inch border uncovered; sprinkle with brown sugar cinnamon mixture. Starting at long side, tightly roll up, pinching seam to seal. Brush with remaining 2 tablespoons butter. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter. Scrape remaining filling from the pan onto the rolls.

  • In a large mixing bowl, add the water, yeast, sugar, salt, and olive oil. Allow mixture to stand for 5 minutes. Add one cup of flour, and mix to combine. Add another cup of flour, and mix to combine for 1 to 2 minutes. The dough should be the consistency of cake batter. Mixing a bunch at this stage helps the gluten to develop.
  • Add another cup of flour, and mix to combine. Add flour until you can’t mix it by hand very easily. Sprinkle some flour on your table, and turn the dough onto the table. Knead the dough by hand until it is smooth and elastic, adding flour as needed. This should take 6 to 10 minutes of kneading. Place the dough back in the bowl, cover it with a towel, and let it rise in a warm place for 15 to 60 minutes. (This time varies a lot for me. I just let it rise according to how long it is until dinner time).
  • Preheat the oven to 375 degrees F. Divide the dough in half. Use one half to make a pizza and use the other half for cinnamon sticks! Roll the cinnamon stick dough out on a piece of parchment paper until it is about a half-inch thick. Slide the dough and parchment on a rimmed baking sheet (don’t use a rimless because the sugar mixture may drip off and make your oven smoke). Use your fingers to make deep dimples all over the surface of the dough. Pour the melted butter over the dough. Sprinkle the sugar and then the cinnamon over the butter. Bake for 15 to 18 minutes, until the bottom is golden-brown. Remove from the oven, and let cool for 5 minutes. Use your pizza cutter, and slice the dough into 1 1/2-inch wide strips, and then cut them again down the middle (you’ll end up with sticks that are about 4 inches long and 1 1/2 inches wide). Serve with the dipping sauce.
  • Mix the butter for the dipping sauce with the powdered sugar and 1 tablespoon milk. Add milk until it is the desired consistency.
