These apple cinnamon roll muffins are soft, buttery, gooey 'cinnamon roll' tasting muffins that are delicious and super easy to make!

12 frozen dinner rolls (such as Rhodes®)
cooking spray
½ cup white sugar
½ cup brown sugar
3 tablespoons ground cinnamon
¼ cup butter, melted
2 apple - peeled, cored, and chopped
¼ cup golden raisins
½ cup cream cheese, at room temperature
½ cup confectioners' sugar
3 tablespoons heavy whipping cream, or more as needed
1 teaspoon vanilla extract

Steps:

  • Put frozen rolls on a baking sheet, spray a piece of plastic wrap with cooking spray and place over rolls. Let rise until doubled in size, about 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
  • Mix white sugar, brown sugar, and cinnamon together in a bowl. Place melted butter in a small bowl.
  • Grab approximately 1 tablespoon of thawed and risen dough and roll into a ball. Dip the ball in the melted butter and roll in the cinnamon-sugar mixture. Repeat to fill each muffin liner with 3 buttered and sugared dough balls.
  • Combine apples and raisins in a bowl. Sprinkle about 1 teaspoon apple-raisin mixture over each muffin.
  • Bake in the preheated oven until golden brown, about 25 minutes.
  • Beat cream cheese, confectioners' sugar, whipping cream, and vanilla extract together in a bowl until glaze is smooth, 3 to 5 minutes. Drizzle glaze over muffins.

Number Of Ingredients 17

1-1/2 cups all-purpose flour
1/2 cup sugar
1-3/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 egg
1/2 cup milk
3 tablespoons vegetable oil
3 tablespoons applesauce
1 medium tart apple, peeled and grated
TOPPING:
1/4 cup packed brown sugar
1 tablespoon all-purpose flour
2 tablespoons cold butter
1/2 cup old-fashioned oats
1/4 cup finely chopped nuts

Steps:

  • In a bowl, combine the first six ingredients. In another bowl, combine the egg, milk, oil and applesauce. Stir into dry ingredients just until moistened. Fold in apple. Fill greased or paper-lined muffin cups two-thirds full. For topping, combine brown sugar and flour. cut in butter until crumbly. Stir in oats and nuts. Sprinkle over muffins. Bake at 400° for 18-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

3/4 cup ground walnuts (OR almonds, OR hazelnuts)
1/4 cup brown sugar
1/4 cup heavy cream (OR half and half OR milk)
1 teaspoon cinnamon
2 cups flour
3/4 cups sugar
1/4 cup brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon salt
2/3 cups vegetable oil
4 large eggs
1 teaspoon vanilla extract
12 ounces finely grated apple (about 3-4 small-medium ones)

Steps:

  • Mix all ingredients in a small bowl and set aside.
  • Preheat the oven to 420°F. Line a 12 cup muffin pan (OR a 6 cup jumbo muffin pan).
  • In a large bowl mix dry ingredients well. In a separate bowl whisk together the oil, the eggs and the vanilla extract, then stir in the grated apple.
  • Add the wet ingredients to the dry ingredients and mix JUST until combined. Do not overmix!
  • Evenly distribute 3/4 of the batter between the muffin cups (I like using a cookie scoop for mess-free work). Roll the filling into balls and gently push one into the center of each muffin. Top with the remaining batter.
  • Reduce the oven temperature to 400°F. Bake the muffins for 10 minutes for regular muffins (or 15 for jumbo sized ones). Reduce the heat to 360°F and finish baking for 15 minutes for regular muffins (or 20 minutes for jumbo sized ones), or until a toothpick inserted comes out clean.
  • Cool the muffins in the pan for 10 minutes before removing them to a cooling rack to cool completely.

1 egg, lightly beaten
1/4 cup melted butter
1/2 cup buttermilk
2 Granny Smith apples, peeled and cored and cut into 1/4inch dice (about 1 1/2 cups)
4 ounces (1 cup) pecans, chopped
1 to 2 tablespoons regular sugar

Steps:

  • Preheat the oven to 400 degrees. Line 12 muffin tins (2 1/2 inch round) with paper liners. Sift sugar, baking powder, baking soda, salt and cinnamon together. Add flour and sift again. In a bowl combine egg, melted butter and buttermilk. Stir the wet ingredients into dry ones and mix just to combine don't overbeat. Add apples and pecans. Spoon batter into muffin tins to the top. Sprinkle with granulated sugar and bake 25 minutes. Transfer to a rack to cool.

1 egg

2 apples - peeled, cored and chopped

⅓ cup all-purpose flour
½ cup butter, cubed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  • Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  • In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.

1 cup grated apple
1 cup peeled, chopped apple
½ cup white sugar
½ cup brown sugar
1 ¾ cups all-purpose flour
¼ cup whole wheat flour
1 teaspoon ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 large eggs
¼ cup unsalted butter, melted
¼ cup olive oil
3 tablespoons applesauce
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 12-cup muffin tin with paper liners.
  • Combine grated and chopped apples with white and brown sugars in a small bowl; stir and set aside to sweat for 5 minutes.
  • Combine all-purpose and wheat flours, cinnamon, baking powder, baking soda, and salt in a second bowl.
