Steps:
- Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth. Add the sour cream, lemon juice, dill, horseradish, salt, and pepper, and mix. Add the smoked salmon and mix well. Chill and serve with crudites or crackers.
- If you can find it, I prefer Norwegian salmon; it's drier and less salty than other smoked salmon.

- Mix 8-ounce and 3-ounce packages cream cheese, the salmon, onions, lemon juice, mustard and horseradish. Cover and refrigerate at least 2 hours but no longer than 3 days.
- Shape two-thirds of the salmon mixture into a ball; place on serving plate. Shape remaining salmon mixture into a ball; place on top of larger ball. Cover loosely and refrigerate about 1 hour or until firm.

- In a large bowl, beat the first four ingredients until blended. Shape into three balls, one 3-1/2 in., one 3 in and one 2-1/2 in. - Place wine, shallots and 1 teaspoon of the salt in a large saucepan and bring to a boil. Add the fresh salmon and poach for 40 seconds. Drain in a sieve and run cold water over the fish just to stop the cooking. Drain well and refrigerate until cold, at least 1 1/2 hours. Discard the poaching liquid.
- Place smoked salmon in a large bowl and stir in the chives. Add the poached salmon and use the side of a wooden spoon to shred the salmon as you mix. Stir in the lemon juice, mayonnaise and pepper. Add sea salt to taste.
- Refrigerate up to 6 hours, then serve with toasted baguettes.
