Time 27m

Number Of Ingredients 7

2 cups all-purpose flour
1 tbsp baking powder
1/4 tsp kosher salt

3/4 c heavy cream
1 tsp vanilla extract
1/4 c honey

Steps:

  • Stir with a wooden spoon until the mixture starts to come together into a ball.
  • Transfer the shaggy mess and any unincorporated dry bits to a very lightly floured large cutting board or work surface. Knead briefly until it just comes together and shape into approximately an 8x8" square.

These delicious scones are buttery, rich and swirled with an amazing cinnamon filling.

Provided by Alicia Skousen

Categories     Bread     Breakfast

Time 35m

Number Of Ingredients 12

2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cup butter (cold)
1/2 cup half and half
1 egg
1 teaspoon vanilla
1/4 cup brown sugar
1 teaspoon cinnamon
1 cup powdered sugar
2 tablespoons milk

Steps:

  • Preheat the oven to 400. Line a baking sheet with parchment or silicone, then set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. Grate the cold butter into the flour mixture and toss to coat.
  • In a small bowl, whisk together the half and half, egg, and vanilla. Pour the wet ingredients into the dry ingredients, and mix until just combined, being careful not to overmix. The dough should be a little rough and shaggy, but should hold together.
  • Gently pat the dough out on a floured surface into a rectangle that is approximately 8 inches tall and 10 inches wide.
  • In a small bowl, mix together the brown sugar and cinnamon. Spread the brown sugar mixture evenly over the dough.
  • Gently roll the dough up, starting on the wider side, to form a long tube. Cut the dough into ten even-sized pieces, and place them on the prepared baking sheet. Bake 18-20 minutes, or until golden brown. Let cool.
  • In a small bowl, whisk together the powdered sugar and 1 tablespoon milk. Add additional milk, as needed, to make a smooth and somewhat runny glaze. Drizzle the glaze over the cooled scones and let set.

CINNAMON HONEY SCONES

Cinnamon Honey Scones image

Provided by Sara Jelinek

Number Of Ingredients 15

3 Tbsp (30g) all-purpose flour
2½ Tbsp (30g) granulated sugar
1½ tsp (4g) ground cinnamon
2 Tbsp (30g) cold, unsalted butter, cut into ¼-inch cubes
1 Tbsp (20g) honey
1¼ cup (152g) all-purpose flour
2½ cups (304g) cake flour
2½ tsp (12.5g) baking powder
½ tsp (2.5g) baking soda
½ cup (91g) granulated sugar
2 sticks (226g) cold, unsalted butter, cut into ¼-inch cubes
½ cup (135g) heavy cream
⅔ cup (135g) sour cream
3½ Tbsp (45g) melted unsalted butter
1 Tbsp (20g) honey

Steps:

  • Sift flour, sugar, and cinnamon into a medium bowl and whisk to combine. Put butter cubes into bowl and use your fingertips to break the butter up until there are no large pieces left. Using a spatula, mix in the honey to form a paste.
  • Put paste onto a piece of plastic wrap and press it into a 4-inch square. Wrap the square tightly with plastic wrap and put in the freezer until it freezes solid (approximately 2 hours). This can be done up to a week ahead of time and left in the freezer.
  • Sift all-purpose flour, cake flour, baking powder, baking soda, and granulated sugar into the bowl of a stand mixer (or use a large bowl if using a hand mixer). Mix with a paddle attachment on the lowest speed until combined.
  • Stop the mixer and add the butter. Begin to mix the butter into the flour on the lowest speed until it just begins to incorporate. Increase the speed to low and continue to mix for approximately 3 minutes (or until the butter is broken up and incorporated into the dry mixture). If there are any large butter pieces that haven't incorporated, stop the mixer and break them up with your fingertips.
  • Next, turn the mixer to slow and gradually pour in the cream. Add the sour cream and mix for 30 seconds until the dry ingredients are moistened and the dough begins to come together. Scrape the sides and bottom of the bowl as necessary.
  • Cut the frozen cinnamon butter paste into ¼-inch cubes and fold them into the mixed dough. Don't worry if they start to break up a little. That will be fine.
  • Mound the dough on a large sheet of plastic wrap and use your hands to press the dough into a 7½-by-10-inch block. Straighten the edges as best as you can. This method will make rectangular scones. If you want triangular scones, divide the dough in half and press each half into circles. Cover the shaped dough in plastic wrap and refrigerate for 2 hours, or until firm.
  • Once firm, remove from the fridge and cut into rectangles (there should be a total of 12 scones). Place the scones on a sheet pan with space between each of them. Cover the sheet pan with plastic wrap and freeze the dough until solid. If you are not going to bake all of the scones, remove the scones from the baking sheet as soon as they are frozen solid. Wrap them in plastic wrap and put them in a freezer safe container. The scones can remain in the freezer for up to 1 month.
  • When ready to bake the scones, preheat the oven to 350°F. Arrange the frozen scones on a sheet pan lined with parchment paper or a silpat with an inch between each scone. This will allow for the edges to get crispier. Bake for 28-30 minutes, or until golden brown.
  • While the scones are baking, make the glaze. Stir the butter and honey together in a small saucepan over medium-low heat until the butter and honey combine. Remove from the heat and set aside.
  • When the scones come out of the oven, brush the top of each scone with a liberal amount of glaze using a pastry brush. It will soak into the scones while they cool.

Scone dough:
2 C all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 C unsalted butter, cold
1 egg, separating the egg white and yolk
3 tbsp honey
1/2 C buttermilk
Topping:
2 tbsp granulated sugar
1/2 tsp ground cinnamon
Glaze (optional):

Steps:

  • 1. Preheat oven to 400 degrees. Line a large baking sheet with a Silpat. 2. In a large bowl, combine flour, baking powder, baking soda and salt. Cut in butter until mixture is crumbly. I use my hand for this, it's a lot easier! 3. In a separate bowl, mix egg yolk, honey and buttermilk. Add to the dry ingredients and stir until just combined. 4. Form dough into a ball on your Silpat lined baking sheet. Pat the ball out to half an inch in thickness and eight inches in diameter. Using a pizza cutter, cut into eight pieces. 5. Whisk the egg white until froth forms and brush over the tops of scones. Mix the sugar and cinnamon together and sprinkle on top. 6. Bake at 400 degrees for 10 to 12 minutes. 7. (Optional - Mix together powdered sugar, milk and vanilla until glaze forms. Drizzle over scones.)

CINNAMON SCONES

Cinnamon Scones image

Like many spiced scones, cinnamon scones are delicious with clotted cream and black tea or bold coffee. Use a popular cinnamon scone recipe to make yours.

Provided by Lindsey Goodwin

Categories     Breakfast     Brunch     Dessert     Snack     Appetizer     Bread

Time 25m

Yield 12 scones

Number Of Ingredients 9

2 cups all-purpose flour (for best results, sift or spoon the flour into the measuring cup)
1/3 cup sugar (white)
1 tablespoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon sea salt
4 ounces butter (cold)
1 large egg (whisked)
1 teaspoon vanilla extract
1/4 to 1/2 cup milk (or buttermilk or half-and-half)

Steps:

  • Heat the oven to 400 F.
  • In a large mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  • Use a pastry cutter to cut in the butter. The mixture is done when it resembles coarse cornmeal.
  • Add the whisked egg and vanilla extract. Do not stir yet.
  • With minimal stirring, mix in just enough milk, buttermilk or half-and-half to make the dough stick together. It will be crumbly and there should still be a little bit of dry flour left in the mixing bowl.
  • Turn the dough out onto a heavily floured cutting board.
  • Knead the dough slightly. When it is done, it should be easy to handle and smooth.
  • Gently pat the dough into two (1-inch thick) discs.
  • Cut each disc into 6 pieces.
  • Transfer the scones to a buttered or parchment-lined baking sheet and bake in the heated oven for 15 to 20 minutes or until lightly golden. Optional: Turn pan halfway through baking.
  • Cool on the baking sheet.
