Circle Around Sausage Minestrone Ragu Recipe

  1. olive oil
  2. italian sausages
  3. carrots
  4. celery ribs
  5. shallot
  6. white potatoes
  7. salt
  8. rag pasta sauce
  9. water
  10. garbanzo beans
  11. arugula leaf
  12. pine nuts
  13. garlic powder


  1. heat the 2 teaspoons of oil over medium heat in a large deep skillet
  2. add the sausages to the pan and cook , covered , for 10 minutes
  3. shake the pan occasionally to turn the sausages
  4. remove the sausages from the pan and carve into 1 / 4 inch thick rounds
  5. stir the carrots , celery , shallot and potatoes into the pan used to cook the sausage
  6. season lightly with the salt and cook , stirring occasionally , for 2 minutes
  7. return the sausage to the pan
  8. pour in the ragu sauce , then fill the jar with water and stir that into the pan
  9. bring to a boil , then reduce heat to medium low and simmer , covered , for 12-13 minutes or until potatoes are tender
  10. stir in the garbanzo beans and cook for an additional 5 minutes until heated through
  11. meanwhile , in the bowl of a small food processor , combine the arugula , pine nuts , salt and garlic powder
  12. pulse to combine well
  13. with the motor of the processor running , slowly add the olive oil until the mixture is combined
  14. to serve , spoon the soup into 4 serving bowls
  15. top each with a generous dollop of arugula pesto and serve immediately
